2 lbs. Chicken Breasts, cooked and shredded (about 3.5 - 4 cups)
1 Tablespoon Coconut Oil, optional
2 Bell peppers, eeded and sliced
1 Large or 2 Small Onion, sliced
1 (8 ounce) Package Cream Cheese, softened
1 Tablespoon Taco Seasoning
2 Cups Shredded Monterey Jack Cheese

Steps:

  • Preheat oven to 350 degrees.
  • Prepare a 9x13 casserole dish with coconut oil cooking spray.
  • In a large skillet over medium-high heat, add coconut oil and swirl to coat.
  • Add onions and peppers to skillet, cooking over medium-high heat and stirring occasionally until softened. Remove from heat.
  • To the skillet, add shredded chicken, cream cheese, taco seasoning, and 1 cup cheese. Stir to combine.
  • Transfer to casserole dish.
  • Top casserole with remaining cheese.
  • Bake for 25 to 30 minutes or until cheese is melted and bubbling.

2 teaspoons taco seasoning mix
salt, pepper, garlic powder
1/2 cup onions, thinly sliced
1 cup red & green pepper strips
1/2 cup salsa
8 ounces jack cheese, shredded

Steps:

  • Preheat broiler. Brown chicken in oil, and stir in seasonings. When chicken is done, remove from pan. Add onions and peppers and cook few minutes until crisp-tender. Put chicken into casserole dish. Top with onions and peppers. Spread salsa on top and sprinkle with cheese. Put under broiler for few minutes until cheese bubbly and melted.

3 tablespoons mayonnaise
1 1/2 cups shredded cheese (Mexican blend, Monterrey Jack, or cheddar)
3 bell peppers (red, green, yellow, thinly sliced)
1/2 onion (thinly sliced)

Steps:

  • Preheat oven to 375 F (190C). Lightly grease a 9×13 baking dish.
  • Combine the spices in a small bowl and mix well.
  • Spread the chicken strips in the bottom of the baking dish. Sprinkle on half the seasoning. Spread on the mayonnaise. Top with half of the shredded cheese.
  • Spread the peppers and onion evenly over the top. Sprinkle with remaining seasoning and cheese.
  • Cover with tin foil and bake for 20 minutes. Remove the tin foil and bake an additional 3-5 minutes, until the cheese is nice and bubbly.

2 (1 ounce) packages fajita seasoning mix
3 pounds skinless, boneless chicken breast halves

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.

2 bell peppers, with seeds remove and sliced into strips red and green
1 1/2 onions, sliced
1/4 cup diced tomatoes and green chili
2 tablespoons taco seasoning
1 cup shredded cheese cheddar cheese and monterey jack cheese
8 ounces cream cheese, softened
1/4 cup heavy cream (optional)

Steps:

  • First, preheat the oven to 350 degrees Fahrenheit.
