I love spaghetti but don't want to eat the pasta anymore so I brainstormed and realized that green beans might be a good substitute for pasta. I tried it out and it worked great. I now fix this at home and take it to parties, too. I've gotten many compliments on it. It was even included in a low carb recipe book a few years back...

- 1. This really is a one dish meal -- I adjust the amount of green beans and meat (increase or decrease) to fit the situation and the number of people I'm feeding.
- 2. I really do just dump the frozen green beans into the pan and cook until they are thawed, cover with sauce, and simmer til tender. Sometimes I add other frozen vegetables, too -- such as broccoli or okra
- 3. I also like to add some more garlic powder and Italian spices for the last 5 minutes of cooking time to freshen up the flavors. You can also add a little more salt and pepper if you like at that time. Just taste it and see.
LOW CARB GREEN BEAN LASAGNA CASSEROLE
Everyone loves this. . .even veggie haters. It is a good way to sneak in a veggie on the kids or veggie resistant hubby!

- 1. Preheat oven to 375
- 2. Place green beans into a colander, set aside to drain.
- 3. Spray skillet with non stick spray, saute chopped onion until translucent (about 5 minutes) And hamburger and cook until browned.
- 4. Stir in spaghetti sauce, simmer five minutes, uncovered.
- 5. While meat is simmering, take paper towels and press the excess water out of the green beans. Get the green beans as dry as possible. (Divide into 3 portions)
- 6. Spray an 11x13 baking dish with non stick spray.
- 7. Layer 1/3 of the green beans into the casserole dish. Layer 1/3 of the meat sauce. Layer 1/3 of the mozzarella cheese.
- 8. Repeat layers two more times, finishing off with the mozzarella cheese.
- 9. Top with a generous sprinkle of Parmesan cheese.
- 10. Bake 30 minutes until lightly brown and bubbly.
- 11. Remove from oven and let rest for five minutes before serving.
- 12. OPTIONS: You can use taco meat filling instead of spaghetti sauce mixture and cheddar instead of the mozzarella for an enchilada casserole. You can use diced or shredded chicken and Alfredo sauce instead of the spaghetti sauce. (using Alfredo sauce will usually lower the carbs considerably)

- Cook beans according to package directions; drain.
- Meanwhile, in a large pot, cook the ground beef with the onion, green pepper, mushrooms and garlic; drain fat.
- Season to taste with salt and pepper.
- Add the tomato sauce, Italian seasoning and garlic powder.
- Bring to boil then simmer about 5 minutes.
- Serve 1 cup meat sauce over about 1 cup green beans per serving.
- Top with each with 1 tablespoon Parmesan cheese.
