These low carb sugar-free Jello meringue cookies are fun treats with less than 1g net carbs per serving.

4 large egg whites, room temperature
1/4 cup Confectioner's Swerve or equivalent powdered sweetener
1 (.3 oz) small package Sugar Free Jello, any flavor
1/4 teaspoon cream of tartar
1/8 teaspoon salt
1 drop food coloring (optional)

Steps:

  • Preheat oven to 250 degrees F and line two baking sheets with parchment paper. Set your oven racks on second lowest and second highest positions.
  • Mix together Jello powder and sweetener.
  • Add cream of tartar and salt to the whites and beat with an electric mixer on medium-high speed until soft peaks form. Slowly add sweetener mixture, about 1 tablespoon at a time. Continue beating until the whites are stiff and glossy.
  • Add food coloring if desired.
  • Spoon or pipe mixture into about 18 small meringues.
  • Bake for 30 minutes at 250F. Turn off oven and let meringues sit inside for 2 hours longer.
  • Remove and carefully peel off parchment.

  • Start the mixer on a medium speed. Stop the mixer when the egg whites start to look frothy and add the almond extract, 3 tablespoons Swerve and salt.
  • Until the egg whites whip up to a medium consistency, mix on a high speed. add the remaining 3 tablespoons of Swerve after the mixer is stopped.
  • Until the meringue becomes very stiff, continue to whip on a high speed and it starts to pull away from the sides of the bowl. Scrape the meringue out of the whisk after the mixer is stopped and down the sides of the bowl, then to make sure that everything is mixed evenly mix it again.

  • Slowly add syrup or sweetener while continuing to beat mixture. Add food coloring and flavoring if using at this point. Beat until very stiff peaks form (around 3-5 minutes). Meringue needs to be so stiff that you can flip the bowl upside down without it falling out.
  • Add meringue mixture to a piping bag fitted with a large star tip or desired tip. Pipe little star shaped cookies out onto a parchment lined baking tray. Space about ½ inch apart.
