Keto Macaroni Salad image

The perfect side dish for burgers off the grill, pork steaks, or smoked ribs, Keto Macaroni Salad is made with red peppers, broccoli, avocado oil mayo, and low carb noodles. An indulgent side dish for summer!

2 cups Keto Macaroni Noodles, cooked
1 cup Broccoli Florets, cut into small pieces
1 Red Pepper, cut into small pieces
1/2 cup Avocado Oil Mayo {this brand is my favorite, or homemade}
1/2 cup Sour Cream
2 T. Dijon Mustard
2 hard boiled eggs, chopped {optional}

Steps:

  • Cook the macaroni according to the package directions. Drain and set aside to cool.
  • In a large bowl, mix together the chopped broccoli, chopped red pepper, sour cream and mustard.
  • Mix in cooled pasta and hard boiled eggs until just combined.
  • Add salt and pepper to taste. Chill until serving time.

1 Recipe Spaetzle Noodles
1 Hard Boiled Egg (Or Two If You Want More)
½ C Small Diced Celery
¼ C Small Diced Red Peppers
¼ C Small Diced Red Onion
¼ C Green Onion Tops
1 Small Diced Medium Dill Pickle
⅓ C Mayonnaise (More If Needed)
2 T Yellow Mustard
¼ t Spike Spice (Or Salt)
¼ t Celery Seed
¼ t Pepper
More Mayo If Needed

Steps:

  • Mix cold spaetzle noodles with pickle & all vegetables. Mix Mayo, mustard & all spices. Dress vegetables with mayo mixture. Taste & correct seasonings. 1 cup raw cauliflower (broken into very small pieces)
1 to 2 tablespoons sugar free Mayonnaise
1/2 teaspoon cider vinegar (optional)
Pinch of salt
Pinch of pepper
Stevia or other sweetener to taste
1 teaspoon Dijon mustard
2 tablespoons of thinly sliced celery
1 tablespoon of bell pepper
2 teaspoons of chopped onion
1 teaspoon of grated carrot
3 tablespoons salad olives

Steps:

  • Steam cauliflower until very tender but not mushy..
  • Combine mayonnaise, mustard, vinegar, salt, pepper, and sweetener and mix well.
  • Taste and adjust seasoning.
  • Put cauliflower, celery, carrot, onion, peppers, and olives in a bowl.
  • Pour mayonnaise mixture over and combine gently.
  • Chill overnight or longer.
  • Add a little more dressing if necessary before serving.

4 cups whole wheat elbow macaroni
1 cup mayonnaise
¼ cup distilled white vinegar
⅓ cup white sugar
2 ½ tablespoons prepared yellow mustard
1 ½ teaspoons salt
½ teaspoon ground black pepper
1 large onion, chopped
2 stalks celery, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
¼ cup grated carrot
2 tablespoons chopped pimento peppers

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Rinse under cold water and drain.
  • Mix mayonnaise, vinegar, sugar, mustard, salt, and pepper together in a large bowl. Stir in onion, celery, green bell pepper, red bell pepper, carrot, pimentos, and macaroni. Refrigerate for at least 4 hours or overnight, before serving.

  • Cook the macaroni and rinse in cold water.
  • Cut the vegetables and eggs in small pieces.
