I found this recipe for pizza crust made from cheese on low carb friends. I have not made this yet, but it sure sparked my interest! Please if you do make this recipe, write an honest review and add your tips or tweaks! Enjoy! (prep time included freezing time.

2 cups cheddar cheese (shredded)
3/4 cup dry parmesan cheese
1 1/2 teaspoons pizza seasoning

Steps:

  • Spray pizza pan with non stick spray.
  • Blend cheeses and spread evenly over pan.
  • Sprinkle pizza seasoning over mixture.
  • Cook in 325 degree oven for 10 minutes until cheese is melted and lightly browned.
  • Remove from oven and place in freezer for 30 minutes.
  • Remove from freezer and top with your favorite pizza sauce and toppings. Cook at 350 degrees for 10 minutes or until cheese is melted.

1⁄4 cup shredded mozzarella cheese
1⁄4 cup shredded provolone cheese
1⁄8 cup shredded Swiss cheese (or 1 slice)
1⁄4 teaspoon dry oregano leaves
1⁄8 teaspoon kosher salt
1⁄8 teaspoon garlic powder
SPECIAL EQUIPMENT: 8 inch nonstick fry pan

Steps:

  • Directions 1. Set the stove burner to medium or number 5 on the dial. 2. Evenly add the 3 cheeses to the center of the pan in a thin layer leaving an inch or so space around the inside so you can flip the fried cheese later. 3. Next sprinkle the cheese evenly with the oregano, salt and garlic powder and place the pan over the heat. 4. Cook the cheese for about 3 minutes until the bottom of the cheese when lifted at the edge to check is a golden dark brown. 5. Carefully flip the fried cheese and cook for an additional 2 minutes. Remove from heat, flip right side up onto a paper towel or napkin to drain excess oil and immediately cut into 8 wedges. This very low carb pizza should please even the Big Carbers amongst your friends and family. Eaten hot, it should be treated like a casserole, but cold it can held like a regular pizza slice. Bonus -- no wheat or gluten. Just meat, cheese and a bit of tomato paste.

Number Of Ingredients 6

3 lbs ground beef
3 eggs
2 ounces pork skins, crushed (see note A)
3 ounces tomato paste (see note B)
6 -8 cups mozzarella cheese (see note C)
6 -8 cups pepperoni slices (see note C)

Steps:

  • Cook ground beef with about 2 cups of water (water helps beef cook to crumbly) in a large pan on medium-high til completely done. Drain.
  • Add 3 eggs, crushed pork skins, and 1/2 can of tomato paste and stir til blended. Spread in large casserole dish and press into bottom to make burger crust.
  • Make 3 layers of cheese and pepperoni over hamburger. Cover with tin foil and cook at 400 for 30 minutes. Uncover and cook til browned to taste.
  • Serve hot in dishes, as it will not hold together. Cold, it can be sliced and eaten like regular pizza.
  • Optional:.
  • Feel free to add any other spices, meats or (argh) veggies to taste. I like to add about a 1/4 cup of Frank's Red Hot to my hamburger crust mix before spreading it into the pan.
  • NOTES:.
  • A - This is 1/2 of 4oz bag of Rinds. Any pork skin/rinds will do. The dryer the better.
  • B - This is 1/2 of 6oz can of Tomato Paste.
  • C - I buy the large bag of shredded mozzarella cheese and pepperoni at Costco. Since my family loves tons of cheese and pepperoni, the cheese will do just over 2 pizzas, and the pepperoni will do just over four.
