1 1/2 lbs ground beef (I have used half ground beef & half ground pork)
1 cup pork rind, crumbs
1 egg
1/3 cup tomato sauce
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons parsley
1/2 cup grated parmesan cheese
1/4 cup chopped onion
1/2 teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees.
  • Mix meat and other ingredients.
  • Shape into a firm oval loaf in shallow baking pan.
  • Bake for 1 hour.
  • Makes 6 servings.
  • Laurie's Note: Total 11 carbs.
  • This was really good- very moist.
  • When I removed it from the oven the baking pan was full of fat.
  • I didn't pour it off; just let the meatloaf sit and soak it back up.
  • Lana's Note: We like our meatloaf a little drier, so I drained off the fat.
  • I have tried this recipe both ways& both are very good.

1 pound lean ground beef
1 green bell pepper
1/2 onion
1 clove garlic
2 large eggs
1/2 cup almond flour *see note
1/2 cup shredded cheddar
1/4 cup powdered Parmesan cheese
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon ground black pepper
3 slices thin-cut bacon
3 tablespoons sugar free ketchup
1 tablespoon bottled Italian salad dressing

Steps:

  • Preheat oven to 375 degrees.
  • Mince the green pepper, onion, and garlic.
  • Add to a large bowl with the ground beef, eggs, almond flour, cheddar, Parmesan cheese, Worcestershire sauce, salt, and pepper. Use your hands to combine.
  • Shape mixture into a loaf, about 7x4 inches, and place in a 9x13 baking dish.
  • Cut the bacon slices in half and drape over the meatloaf.
  • Bake for 25 minutes.
  • Whisk together the ketchup and Italian dressing. Spoon half of the mixture over the meatloaf.
  • Increase heat to 425 and bake an additional 10 minutes and then spread the remaining sauce over the meatloaf.
  • Continue baking for 10-15 minutes or until the internal temperature reaches 160 degrees.
  • Let rest 5 minutes before slicing and serving.

1 teaspoon salt (1 to 2)
1/4 teaspoon pepper
1 teaspoon dried basil
1/2 cup parmesan cheese
1/4 cup minced onion
2 eggs, beaten
2 hard-boiled eggs, shelled

Steps:

  • Preheat oven to 450°F.
  • Mix up all ingredients except the hard-boiled eggs.
  • Pat just under half of the meat mixture into a loaf pan.
  • Lay the hardboiled eggs on top and form remainder of meat around them.
  • Bake for 10 minutes at 450, then reduce heat to 350 and bake another 1 hour and 15 minutes (75 minutes total at 350).

1 pound lean ground beef
1 onion, minced
1 carrot, shredded
2 cups chopped fresh spinach
1 large egg, beaten
3 tablespoons taco seasoning mix
3 cloves garlic, minced
2 teaspoons ground black pepper
3 drops ketchup

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place turkey and beef in a large bowl. Add onion, carrot, spinach, egg, taco seasoning, garlic, pepper, and ketchup. Mix with your hands until blended. Shape into 3 equal-sized loaves and place into a 9x13-inch baking dish.
  • Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

2 eggs, beaten
1/4 cup creamy Italian dressing, bottled
1 1/2 cups soft breadcrumbs
2 teaspoons instant minced onion
1 1/2 teaspoons Italian herb seasoning
1 teaspoon salt
1/4-1/2 teaspoon pepper
2 lbs ground beef round
1 cup mozzarella cheese, shredded
1/4 cup fresh parsley, snipped
3 hard-boiled eggs
3 tablespoons creamy Italian dressing, bottled
1 1/2 teaspoons prepared mustard
1/2 teaspoon sugar

Steps:

  • In a large bowl combine beaten eggs, 1/4 cup creamy Italian dressing, bread crumbs, onion, herb seasoning, salt and pepper. Add ground beef, mix well.
  • In a 12 x 7 x 2-inch baking dish, pat half the meat mixture to a 9 x 4-inch rectangle. Sprinkle 1/2 cheese and all parsley on top to within 1-inch of all edges.
  • Peel and place hard-cooked eggs end to end down the center of the rectangle.
  • On wax paper pat remaining meat mixture to a 9 x 4-inch rectangle. Sprinkle remaining cheese on top to within one-inch on all edges, press cheese into meat.
  • Invert on top of egg rectangle. Remove wax paper.
  • Now shaping meat into a loaf about 10-inches long, seal ends and sides well.
  • Make shallow diagonal cuts on top of loaf forming diamond shapes. Bake uncovered in 350 degrees oven for 1 hour.
  • For Sauce Topping: Combine remaining 3 tablespoons salad dressing, mustard and sugar, drizzle over the loaf. Bake 15 minutes more or until done. Transfer to serving platter, let stand 10 minutes before slicing.

3/4 cup kraft low-carb barbecue sauce
1/4 cup Worcestershire sauce
1 1/2 cups parmesan cheese (from the green can)
2 slices toasted and chopped low-carb bread (found at all grocery stores)
1 (1 ounce) packet dry onion soup mix
5 baby dill pickles, chopped (optional)
1/2 teaspoon black pepper

Steps:

  • Mix all ingredients together with hands and mold into a loaf.
  • Bake on pizza sheet for 1 hour on 350°F or until cooked through, about 45 minutes into cooking process.
  • Cover with desired amount of low-carb barbecue sauce and finish cooking.

6 ounces tomato paste
3 ounces water
1 teaspoon alternative sugar
1 teaspoon white vinegar
2 eggs
1 lb ground chuck
1 lb ground pork
1/2 cup parmesan cheese, grated
1/4 cup red onion, chopped
1 tablespoon parsley
2 garlic cloves, mashed
1/2 teaspoon oregano
1/2 teaspoon basil
1 teaspoon kosher salt
1/2 teaspoon pepper
1/4 lb prosciutto
1/4 lb provolone cheese

Steps:

  • Preheat oven to 350 degrees.
  • Mix ketchup ingredients together and set aside. Thickness can be adjusted with more or less water. I used 1 packet of an aspartame sugar substitute but feel free to use your preferred sweetener.
  • Beat eggs slightly. Mix with all the meatloaf ingredients except the prosciutto and provolone. Press into a 9x13 rectangle. Lay the prosciutto on top then layer on the provolone slices (I used 6 slices of provolone). Roll up jelly roll style and place in pan/baking dish. Top with half the ketchup.
  • Bake at 350 degrees for 1 hour 15 minutes. Pour off grease and let sit for 5 minutes. Serve with remaining ketchup.
