LOW-CARB PEANUT BUTTER COOKIES
These Low-Carb Peanut Butter Cookies are a delicious, healthy way to satisfy your cookie craving! They come together in 1 bowl with only 5 ingredients for a super easy treat.

Steps:
- Preheat oven to 350F (180°C) and line a cookie tray with baking paper. Set aside.
- Add the erythritol to a Nutribullet or blender and blend until powdered. Set aside. If using a confectioner's low-carb sweetener, you can skip this step.
- Add all of the ingredients into a medium mixing bowl and mix until a smooth, glossy dough forms.
- Roll about 2 tbsp of dough between your palms to form a ball, then place on the prepared cookie tray. Repeat until all dough has been used. You should end up with 12-14 cookies.
- Use a fork to flatten the cookies, creating a criss-cross pattern across the top.
- Bake the cookies for 12-15 minutes.
- Remove from the oven and allow to cool for 25 minutes on the baking tray, then transfer to a cooling rack for another 15 minutes.

- Preheat the oven to 325 degrees F (165 degrees C).
- Combine peanut butter, egg, and vanilla extract in a bowl with a fork. Mix until smooth. Add sugar, whey protein, and salt. Mix well until ingredients are blended together.
- Scoop the mixture out with a tablespoon and roll into 3/4-inch balls. Place onto ungreased baking sheets, about 1/2 inch apart. Flatten each cookie to 1/4-inch thickness with a fork.
- Bake in the preheated oven until golden brown on the edges, about 6 minutes. Let cool for at least 3 minutes before transferring to a wire rack to cool completely.

- In a large bowl, cream the butter, peanut butter and sugars until light and fluffy. Add egg white; beat until blended. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to the creamed mixture and mix well. Shape into an 8-in. roll; wrap in plastic. Freeze for 2 hours or until firm., Unwrap and cut into slices, just over 1/4 in. thick. Place 2 in. apart on baking sheets coated with cooking spray; press with a fork to make crisscross pattern. Bake at 350° for 6-8 minutes for chewy cookies or 8-10 minutes for crisp cookies. Cool for 1-2 minutes before removing to wire racks; cool completely.

LOW CARB PEANUT BUTTER COOKIES
I adapted this from The High Protein Low Carb Peanut Butter and Nuts Cookies recipe #966930. I didn't have 4 cups of nuts on hand and I changed it around a little. My kids love them. And since they're low in carbs and sugar its a good snack for my son who is diabetic. The orginal recipe makes small cookies but i like to use a tablespoon instead of a teaspoon because i like to use them between meals for a high protein low carb quick snack. I hope you enjoy! - Place a rack in the center of your oven and preheat the oven 350 degrees F. Line a baking sheet with parchment paper.
- In a medium bowl, combine the peanut butter, coconut sugar, salt, egg, egg white, and vanilla extract. Mix briskly until ingredients are well blended. Sprinkle the baking soda over the top. With a rubber spatula, work in the protein powder and coconut flour until well combined. The will seem very dry first but will continue to come together as you stir and push. Fold in chocolate chips.
- At this point, judge your dough, as the amount of moisture may vary based on the brand of protein powder and nut butter you use. It should be slightly sticky but not a total mushy mess. If you need a firmer dough, add a bit more protein powder. For a looser dough, sprinkle the batter with a bit of milk (or almond milk) and with a spatula, fold it in until the dough comes together.
- With a small cookie scoop or spoon, portion the cookie dough by tablespoonfuls and drop onto your prepared baking sheet (you will have 12 to 14 cookies total). With your fingers, gently flatten the tops of the cookies, as they will not spread but will puff up during baking. Bake for 5 to 6 minutes, until the edges are barely golden brown and dry to the touch but the middles seem fairly doughy. Do not overbake! Place the cookie sheet on a wire rack and allow the cookies to cool on the baking sheet for 3 minutes before transferring them directly to the wire rack to finish cooling.

- Preheat oven to 350F. In a food processor, chop dates until they turn into puree/paste. Helpful Tips on baking with dates: From what i've noticed some dates range in texture. And some are not always chewy and pull-apart soft. When I purchase dates and they're a little harder, I like to soak them in very warm water for 5 minutes to soften them. Otherwise your blender will not process them well.
- In electric mixer: mix date paste, peanut butter, vanilla, protein powder, almond flour, coconut oil, and vanilla. Mix in baking soda and eggs. Add chocolate chips in last.
- Line a sheet pan with parchment paper. Use a one inch cookie scoop (or measure with regular spoon) and line sheet with dough balls.
- Bake for 8 minutes. Let cool for 10 minutes. Store in a sealed container in refrigerator (can freeze too). ENJOY!
