HALIBUT AND VEGGIE FOIL PACKET RECIPE



Halibut and Veggie Foil Packet Recipe image

Grill or bake this foil packet filled with mild-tasting halibut and veggies that even kids will enjoy.

heavy-duty aluminum foil
4 -4 oz halibut fillets
salt and pepper
2 small zucchini (sliced ⅛" thick)
1/2 red onion (thinly sliced)
1 bell pepper (seeded and sliced ⅛" thick)
1 Tbsp dill (chopped fresh herbs like dill or tarragon or basil)
2 Tbsp fresh parsley (chopped)
1 lemon (thinly sliced)
olive oil

Steps:

  • Preheat outdoor grill to medium heat or indoor oven to 400 degrees. Prepare 4 sheets of heavy-duty aluminum foil at least 16" x 12". Season each halibut filet on all sides with salt and pepper then set aside.
  • Spray the center of each piece of foil with cooking spray and add a quarter of the sliced zucchini to each sheet. Divide the onion and bell pepper evenly among each packet and season all the veggies lightly with salt and pepper.
  • Place one seasoned filet on top of each bed of veggies and sprinkle with your choice of chopped fresh herb and parsley. Lay 2-3 slices of lemon on top of each piece of fish and drizzle approximately 1 tsp of olive oil over the fish and veggies.
  • Fold long sides of foil up and over and bring edges together. Roll the foil together, moving downward until 1-2" from the top of the fish. Fold both short ends together to seal the packet but make sure to leave enough space inside the packet for steam expansion.
  • Place packets directly on grill or on a baking sheet in the oven. Grill them 8-9 minutes or bake 12-14 minutes in the oven or until veggies are tender and fish is barely cooked through. Remove from grill or oven and carefully open packets to allow steam to escape. Enjoy!

My grilled halibut in foil packets delivers moist, flavorful fish that is not only delicious but also a pretty presentation. Note: You can also prepare these foil packets in the oven.

halibut fillets, ½ to ¾ inch thick
onion, sliced thin and separated into individual rings
mini colored peppers, sliced into rings
olive oil
butter
salt and pepper
lemon, sliced thin
fresh thyme

Steps:

  • Preheat your grill. If cooking in the oven, preheat oven to 400 degrees.
  • Cut one 12x18 piece of heavy duty foil for each fish packet. Spray with cooking spray.
  • Place one filet on each piece of foil. Season with salt and pepper.
  • Layer with onion rings and pepper rings. Drizzle with olive oil and place a small pat of butter on top.
  • Add three lemon slices on top of each filet and top with fresh sprigs of thyme.
  • Fold foil over fish until edges meet. Seal by folding foil to create packet (see photo in post). Repeat for the end of the packet. Be sure to leave space for steam to circulate.
  • Place on hot grill and cover, grilling for 7 minutes. Flip packets and continue to cook for 8 minutes or until you can flake fish with a fork and vegetables are tender. If baking, place on cookie sheet and bake for 20 minutes.
  • Be careful opening foil packets as the steam will be hot. You can serve the foil packet on a plate, cut an X on the top of each packet and fold back the foil. If you prefer not to serve the fish in the foil, you can also use a slotted spatula to remove the fish and place on a plate. Serve with vegetables and lemon slices on top and drizzle juices from foil pack before serving.

This simple, Asian-inspired broiled halibut recipe features a tasty marinade of soy sauce, sesame and ginger to highlight the meaty flavor of the halibut.

4 (6 ounces each) halibut fillets
1/2 cup soy sauce
1/2cup rice wine vinegar
2 tablespoons sesame oil
2 tablespoons fresh ginger , peeled and minced
3 cloves garlic, peeled and crushed
1/2 cup scallions (green onions), finely chopped
1/4 cup sesame seeds

Steps:

  • In a large glass bowl, combine soy sauce, vinegar, sesame oil, garlic, ginger, and half of the chopped scallion.​
  • Place the fillets in a large resealable zipper baggie, then pour the marinade liquid into the baggie, squeeze out any excess air and seal. This marinating technique allows a relatively small amount of liquid to cover the entire surface area of the halibut fillets.​
  • Marinate fillets in the refrigerator for 2 to 4 hours.​
  • Preheat broiler for 5 minutes.​
  • Remove fillets from baggie and place them skin side down on a sheet pan lined with a silicone baking mat. Sprinkle generously with sesame seeds, patting them firmly against the fillets. The fillets should be fully coated with sesame seeds.​
  • Place pan in on top rack of your oven (or under the broiler if you have a separate broiler) and broil 7 to 8 minutes or until the fillets flake but still give slightly when pressed with your thumb; don't over cook them, though, or they'll be too dry.​
  • While the fillets cook, pour the leftover marinade liquid into a saucepan and bring to a boil, then lower to a simmer and reduce while the fillets cook. Note: For safety reasons, it is important to bring the marinade to a full boil before serving it with the dish.​
  • Serve halibut topped with the reduced marinade and garnished with the remaining green onion.

6 oz 4 oz halibut steaks
2 Tbsp olive oil
6 slice lemon
1/2 c dry white wine
6 sprig(s) thyme
1 1/2 Tbsp fennel seeds
6 sprig(s) parsley
pepper to taste

Steps:

  • 1. Preheat oven to 350. Tear aluminum into 6 large squares. Brush each square with olive oil.
  • 2. place halibut in the center of square. Drizzle each steak with wine. Put a thyme and parsley spring on each piece along with 1 slice of lemon and a few fennel seeds.
  • 3. Grind pepper over each piece of fish and seal foil into a packet. Place all packets on a baking sheet and bake for 10-15 minutes.

1/2 cup reduced sodium soy sauce
1/2 tablespoon fresh orange juice or 1/2 tablespoon prepared orange juice
1/2 tablespoon fresh lime juice
1/2 tablespoon prepared Chinese mustard
1/2 tablespoon Chinese five spice powder
16 ounces salmon fillets
1 tablespoon sesame oil
1 tablespoon sesame seeds

Steps:

  • With a spoon mix together soy sauce, juices, mustard and spice powder in a shallow dish or pan.
  • Add salmon and turn to coat all sides; cover and refrigerate for 1 hour.
  • Bring salmon back to room temperature and preheat broiler.
  • Remove salmon from the marinade and pat dry with paper towels.
  • Brush sides and tops of fillets with sesame oil and place on broiler pan; broiler 4 inches from heat until fish is cooked through, about 5 minutes (you might want to spray your broiler pan w/cooking spray).
  • While fish is broiling heat a small skillet over medium-high heat until hot; Add sesame seeds and, stirring constantly, toast just until golden -be careful, seeds can go from golden to burnt in a flash.
  • Remove skin from salmon, transfer to serving plates and garnish each with toasted sesame seeds.
