OVEN BAKED BANANA FRITTERS



Oven Baked Banana Fritters image

This recipe comes from Teresa Cutter a "healthy eating" nutritionist. My daughter loves banana fritters and this one is low fat and not too much sugar either. Serve with low-fat ice-cream and spoon over passionfruit.

1 cup wholemeal breadcrumbs or 1 cup ground almonds
1/2 cup desiccated coconut
2 tablespoons raw sugar or 2 tablespoons sugar substitute
1 teaspoon cinnamon
6 bananas, peeled
1 egg white, beaten
vegetable oil cooking spray

Steps:

  • Preheat oven to 180 degrees Celsius.
  • Combine breadcrumbs/almond meal with the coconut, sugar and cinnamon.
  • Brush bananas with egg white and coat with crumb mixture.
  • Place on lined baking sheets and spray with vegetable oil.
  • Bake for 10 minutes until golden brown.

Low Fat Banana Fritters Recipe image

For these banana fritters, ripe bananas are mashed and shaped like pancakes before pan-frying in minimal fat. They're delicious even when not deep-fried.

3 medium, very ripe Bananas
2 tbsp sugar
2 large, beaten eggs
3 tbsp flour
½ tsp vanilla extract
buttered flavored Pam
½ tsp plus more to sprinkle on top Cinnamon
1 tsp powdered sugar

Steps:

  • Mash the bananas.
  • Add sugar, eggs, flour and vanilla.
  • In a large skillet, heat on low flame.
  • When hot, spray with Pam and using a tablespoon, pour 1 tablespoon of batter for each fritter.
  • Cook for 1 to 2 minutes on each side.
  • Set aside in a dish and keep warm in the oven while cooking the rest of the batter.
  • When ready to serve, put 4 on a plate and top with a little powdered sugar and cinnamon.
  • Serve with low fat ice cream.
