LOWER FAT FUDGE BROWNIES
After many tries, I've finally developed a really fudge-y, chewy brownie recipe. Several people in my office are on diets and swear by these. You can use low fat or nonfat yogurt and egg replacers to make it even lower in fat and cholesterol, but the full fat yogurt really adds to the texture of the brownies.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8 inch baking dish.
- In a medium bowl, stir together the sugar, cocoa powder and yogurt. Stir in the eggs one at a time until well blended, then add vanilla and salt. Stir in the flour until just absorbed. Spread evenly into the prepared pan.
- Bake for 28 to 32 minutes in the preheated oven, until the brownies begin to pull away from the sides of the pan, and a toothpick inserted comes out fairly clean (sticky crumbs are okay). Cool brownies in the pan over a wire rack before cutting into squares. Cover tightly with plastic wrap to store.

LOW-FAT FUDGE BROWNIES
After finding the recipes for low fat brownies on the Zaar lacking, I decided to create my own recipe. Here is what I've come up with, much lower in fat and still delicious. I've put the molasses as optional, because I've made it with out, but I think it really enhances the flavor. You may stir in 1/2 cup chopped nuts after the last step, but that will add more fat to the recipe. And, you may use two squares unsweetened baking chocolate instead of the cocoa, oil, and extra tablespoon of applesauce

Steps:
- Line a 9 x 9 inch pan with foil and spray with cooking spray. Place the peanut butter cups in an even layer on the bottom of the pan. (You should use 16 on the bottom)
- Place chocolate chips and sweetened condensed milk in a medium saucepan over low heat. Stir until chips and milk are melted together.
- Once everything is melted together, spread evenly over peanut butter cups in prepared pan. Immediately sprinkle with the crumbled Reese's, pressing them lightly into the fudge.
- Cool until firm. I like to cool the fudge on the counter until it is room temperature, then cover with plastic and place in the refrigerator to harden completely. Cut into squares and serve.

- Prepare a mold or a cake pan by lining it with the parchment leaving it overhanging on two sides of the mold (to ease taking the fudge out).
- Beat the eggs with the flour or cornstarch, salt, vanilla and sugar just until the texture is even. Don't whip them up.
- Heat up the milk until it boils. Pour 1/3 of the milk into the bowl with the eggs. Add the rest of the hot milk. Stir well.
- Pour the mixture back into the pot and either set it over a low heat and constantly stir it until the mixture just begins to boil and thickens or set it over the water-bath and stir frequently until the mixture is very hot and thick. Turn the heat off.
