1 cup milk
2 tablespoons distilled white vinegar
2 cups all-purpose flour
1 tablespoon white sugar
½ teaspoon baking soda
½ teaspoon salt

Steps:

  • Stir the milk and vinegar together, and allow to stand until curdled, about 10 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet. In a bowl, mix together the flour, sugar, baking soda, and salt.
  • Gradually stir the soured milk into the flour mixture until the dough just comes together, and turn the dough out onto a well-floured surface. Knead a few times, and shape into a round. Place the dough onto the prepared baking sheet. With a sharp knife, cut an X shape into the top of the dough to release steam and help the bread keep its round shape.
  • Bake in the preheated oven until golden brown, about 45 minutes.

I love to have Irish Soda Bread for breakfast hot out of the oven with some low fat spread and a cup of tea. This is very easy to make, even if you have no experience baking. If you prefer to make a bread to serve with dinner, omit the raisins and sugar and you can add caraway seeds.

1 1/2 cups all purpose flour
1 1/2 cups whole wheat flour
1 1/2 tsp baking soda
1 tsp salt
4 tbsp sugar
1 1/2 cups 1% buttermilk
3 oz 2/3 cup raisins

Steps:

  • Preheat oven to 375°.
  • Mix all dry ingredients (first 5) in a large bowl with a whisk.
  • Slowly add buttermilk stirring with a wooden spoon until a soft dough is formed.
  • Add raisins, knead the dough lightly on a sheet of wax paper or a floured surface for about 1 minute.
  • Form into a round, slightly flattened shape.
  • Place on a cookie sheet with a silicone baking mat or parchment paper.
  • Using a sharp knife, make an X at the top about 1/2 inch deep. Bake about 40 minutes, until golden.
  • To test if it's done, insert a toothpick into the bread, if it comes out clean it is done.
  • Let it cool on a bakers rack for about 5-10 minutes before serving.

1 cup whole wheat flour
1/2 cup sugar or 1/2 cup Splenda sugar substitute
2 teaspoons baking soda
1 teaspoon salt
4 tablespoons butter
1 cup dried currant
1 1/2 cups low-fat plain yogurt

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine dry ingredients.
  • Cut in butter until clumps are pea-sized.Stir in currants and yogurt.
  • Turn the dough onto a floured cutting board, knead 1 minute, and shape into a round loaf;
  • Slice an x in the top of a loaf and bake on a greased baking sheet for 45-50 minutes,yields one 8-inch loaf.

My grandma made this every weekend to go with her traditional big Irish breakfast. It's cooked on an electric griddle and cut into toast-sized slices that can be eaten buttered, toasted, or fried crisp in the bacon drippings. Serve with butter and jam or fry insides down on hot pan with bacon drippings for a minute until golden and crispy. Unfried pieces can be toasted on the second day, but won't keep longer then that.

2 ½ cups all-purpose flour
1 teaspoon salt
1 ½ teaspoons baking powder
1 teaspoon baking soda
2 cups buttermilk, or as needed

Steps:

  • Preheat an electric griddle or fry pan to medium-high, about 350 degrees F (175 degrees C). Stir the flour, salt, baking powder, and baking soda together in a large bowl until well combined.
  • Stir in the buttermilk, 1/2 cup at a time, until the mixture forms a very sticky ball of dough. Turn the dough out onto a well-floured surface, and knead gently 8 to 10 times. Pat the dough into a circle about 1 1/2 inch thick, and cut the circle into quarters.
  • Place the wedges onto the preheated griddle and cook until the bottom is golden brown, about 15 minutes; turn over and cook the other side until golden, another 10 to 15 minutes. A toothpick inserted into the center of a wedge should come out clean. Stand the wedges on a wire rack to cool, then cut each wedge in half and slice horizontally for serving.

HEALTHY IRISH SODA BREAD SCONES



Healthy Irish Soda Bread Scones image

This is the easiest bread recipe you'll ever make! These (mostly) traditional Irish soda bread scones are really moist with a lovely hint of soda flavor, and although not exactly traditional, that optional sprinkling of sea salt adds such a bright and delicious pop of flavor, too. These scones are best if served warm the same day they're made, but they'll keep for at least 3 days if stored in an airtight container at room temperature or at least 5 days if stored in an airtight container in the refrigerator (if not longer!).

Yield 12 scones

Number Of Ingredients 6

2 ¼ cups (270g) white whole wheat flour or gluten-free* flour (measured like this)
¾ tsp baking soda
½ tsp salt
½ cup + 3 tbsp (165mL) unsweetened vanilla almond milk (see Notes!)
2 tbsp (30mL) plain white vinegar
optional: flaky sea salt, for finishing (highly recommended!)

Steps:

  • Preheat the oven to 425°F, and line a baking sheet with a silicone baking mat or parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Make a well in the center. Pour in the milk and vinegar. Stir together until the flour is fully incorporated.
  • Working with a small section of dough at a time, shape into a ball. Place onto the prepared baking sheet, and flatten to the desired thickness and width. (If the dough sticks to your hands, moisten your fingers and palms with a bit of water in between shaping each scone!) Once all of the scones have been shaped, score a + into the top of each one with a sharp knife, slicing about halfway through the dough (not all the way through!). If using the flaky sea salt, sprinkle a generous amount on top of each scone.
  • Bake at 425°F for 15-17 minutes or until the outsides are crusty and the insides feel firm to the touch. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
