SPICY VEGAN BLACK BEAN BURGERS
I'm so excited for these Spicy Black Bean Burgers. Make them ahead of time, freeze them and then pop them on the stove for an easy weeknight dinner.

Steps:
- Add onion and garlic to a small pan over medium heat with 1 tbsp. of water. Saute until veggies start to soften.**
- Scoop cooked veggies into a blender or food processor and pulse 2-3 times until combined, but not total mush.
- Add beans to a large bowl and mash with a potato masher or fork until about half of the beans are mashed and the other half are still intact.
- Add onion and garlic mixture to the bowl as well as remaining ingredients. Stir to combine.
- Line a baking sheet with parchment paper.
- Form mixture into 6 balls and flatten into patties.*** Place patties on baking sheet and put in the freezer for at least an hour.
- If you are going to eat them right away, heat a pan over medium heat. Coat with non-stick spray and add frozen patties. Cook until browned and warmed through (about 6-8 minutes per side).
- Serve on a burger bun, in a wrap or over a salad with your favorite toppings.
- If you plan to store the patties for later: remove baking sheet from the freezer after an hour and cut parchment paper into squares. Stack patties on top of each other (with a piece of parchment paper between each patty) and place in freezer proof container. When ready to serve, follow cooking instructions above - no need to thaw patties.
10 MINUTE SPICY VEGAN BEAN BURGERS
An easy one-bowl recipe for the quickest 10 minute spicy bean burgers that taste so good. No fancy ingredients either.

- Once you've rinsed the beans, reserve a quarter (roughly) to add later and pop the rest in a large bowl.
- Mash the beans into a rough paste, then add the spices, herbs, oats and whole beans and mix until well combined.
- Shape the spicy bean burger mixture into 6-8 burgers, depending on how big you like them.
- These are now ready to cook. They are best fried in a little oil, a few minutes on both sides until crisp and browned. Check notes below for oven or air fryer cooking.
- Serve and enjoy!

- Mash the beans in a large bowl and add onion, hot sauce, bell pepper, if using, cayenne pepper, egg substitute, and breadcrumbs. Mix until well combined.
- Press firmly to form into 4 patties.
- If pan-frying, heat a tablespoon or so of oil in a skillet and lightly fry until a nice outer crust forms. Or, fire up the grill and barbecue your black bean veggie burgers over medium heat.

- Put half) of the breadcrumbs in a large mixing bowl.
- Finely chop the onion and grate the carrot.
- Fry the onion gently in a tablespoons of oil until softened.
- Add the grated carrot and fry for another 2 or 3 minutes, then add the onions and carrot to the breadcrumbs in the mixing bowl.
- Rinse the kidney and cannellini beans thoroughly and drain.
- Mash them roughly with a fork and stir into the carrot mixture with the chillies, salt and pepper.
- Put the remaining half of breadcrumbs in a shallow bowl with the flour, herbs, salt and pepper.
- Shape the bean mixture into 6 burgers.
- Thoroughly coat each burger in the flour and breadcrumb mixture.
- Heat 3 tbsps. oil in a frying pan, and carefully add 3 burgers.
- Fry each side for about 5 minutes until golden brown.
- Repeat with the other 3 burgers.

SPICY (ALSO VEGAN VERSION) BLACK BEAN VEGGIE BURGERS
I wanted to make my own to save money, to include Vegan version and to spice it up different ways. Can use Italian seasoning instead of spicy ingredients. Also, have made these burgers with pasta and spaghetti sauce.

- Note:.
- To keep them from falling apart. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor. Rinse the black beans and dry them off before they go in the food processor.
- Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs (or rolled oats), eggs (or flaxseed mixture) and spices and then the beans last. If mixture needs to be firmer, add cooked brown rice, mix by hand.
- Note: put a little oil on your hands when shaping the patties to prevent sticking.
- Divide mixture into four patties. (Can make them smaller, into 6 patties and serve them with a salsa dip or with a pasta dish.).
- So patties are easier to handle: Freeze patties and grill them frozen.
- For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. Place patties on foil, and grill about 8 minutes on each side.
- For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.

- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Mash black beans in a bowl; add onion, garlic, carrots, and green bell pepper. Mix.
- Whisk cornstarch, water, chile-garlic sauce, chili powder, cumin, seafood seasoning, salt, and black pepper together in a separate small bowl. Stir cornstarch mixture into black bean mixture.
- Mix whole-wheat bread into bean mixture. Stir flour, 1/4 cup at a time, into bean mixture until a sticky batter forms.
- Spoon 'burger-sized' mounds of batter onto the prepared baking sheet, about a 3/4-inch thickness per mound. Shape into burgers.
- Bake in the preheated oven until cooked in the center and crisp in the outside, about 10 minutes on each side.

- Blitz the bread and fresh corriander together to make breadcrumbs.
- In a blender put the beans with the breadcrumbs and egg. Blend together but leave chunky.
- Stir in the rest of the ingredients until combined. Dust hands with flour and shape mixture in to burger shapes. This mixture makes 4 VERY large burgers or 6 smaller ones.
- Fry burgers in a pan, on a medium heat until brown and hot all the way through.
- Serve burgers in a bread bun with ketchup and salad. Lovely with potato wedges too.
