MEATLOAF MUFFINS
Meatloaf Muffins are a quick and easy kid-friendly meatloaf recipe. Mini beef meatloaves baked in a muffin tin topped with a sweet and tangy ketchup glaze.

Steps:
- Preheat oven to 375 degrees.
- In a large bowl mix the ground beef, onion, garlic, Worcestershire sauce, eggs, breadcrumbs, salt and pepper until just combined.
- Roll mixture into 12 pieces and place in greased muffin tin, flattening the tops slightly.
- Bake for 25-30 minutes.
- Turn oven onto broil.
- Glaze with sauce then broil until the sauce caramelizes, about 1 minute. (If you prefer not to broil, cook at 450 for 5 minutes)

Steps:
- Preheat oven to 400 degrees.
- Lightly spray a nonstick or silicone muffin pan with nonstick cooking spray.
- Crumble ground beef into a large bowl.
- Add shredded carrots, chopped onion, and green pepper.
- Add chili powder, Worcestershire sauce and the breadcrumbs. Stir with a fork. Add egg whites and stir again with a fork until well blended. You can knead the mixture with your hands but sometimes this makes the meat overly tough.
- Spoon mixture into prepared muffin pan, and top each cup with ketchup. Bake for 25 minutes, making sure that the internal temperature reaches 165 degrees.
- Serves 6.

LOW FAT MEATLOAF MUFFINS
This is a twist to one of Rachael Ray's recipes. I baked them in regular sized muffin pans so they cook in 1/2 of the time.

Steps:
- Preheat oven to 450°F.
- Puree all vegetables in food processor to a fine consistency.
- Add to the ground turkey, breadcrumbs, eggs and seasonings.
- Spray the muffin tins with Pam so they don't stick.
- Fill each to the top with meatloaf mixture. Combine all sauce ingredients in a microwave safe bowl reserving some to the side.
- Using the reserved sauce, brush each of the meatloaf muffins with some sauce.
- Cook for 20-30 minutes.
- While cooking microwave the remaining sauce until warm.
- Enjoy!

Another good one from Toronto Chef Michael Bonacini. Not your ordinary meat loaf, its great with his Macaroni & Cheese and a green vegetable for a "retro" dinner!!!!

Steps:
- Combine all ingredients in a large bowl& mix until well blended- do not over mix.
- Place a 2 inch wide parchment strip across each mould of the muffin tin, coming up from each side by about 2 inches.
- This will be used for unmoulding after they are cooked.
- Using an ice cream scoop or a large spoon, generously fill each section of the muffin tin with meat, rounding the top to obtain a muffin shape.
- Brush with BBQ sauce& bake in a preheated 350F oven for 15- 20 mins (or until meat thermometer reaches 160F), brushing occasionally with more BBQ sauce.
