VANILLA VEGAN PUDDING
Quick and easy Vanilla Vegan Pudding. Just a few ingredients needed to make this creamy dairy free treat. Top it with your favorite berries for a light summer dessert.

Steps:
- In a blender, purée the silken tofu, maple syrup, salt, and 1/3 cup almond milk until smooth
- Pour the mixture into a sauce pan and bring just to a simmer.
- Whisk the arrowroot powder into the remaining 1/4 cup almond milk until smooth.
- Pour the arrowroot mixture into the sauce pan and whisk well to combine.
- Turn down the heat to medium-low and continue whisking until the mixture thickens. This should only take about 1 to 2 minutes. Do not overcook! It should be thicker than when it started, but still very pourable...not gelatinous.
- Take off heat. Add the vanilla extract and whisk to combine.
- Transfer to individual bowls and cover. Place in the fridge for at least 3 to 4 hours or overnight to set.
- Add berries, if desired, before serving.

I like this recipe because it doesn't include any butter and still has a delicious rich taste. It is also easy since it is made on top of the stove. I modified the instructions after the first review to make them more clear. It is important to stir the pudding the whole time it is cooking.

Steps:
- Combine first 3 ingredients in a saucepan.
- Combine milk and egg in a bowl.
- Gradually add milk mixture to sugar mixture, stirring constantly.
- Cook over medium heat until thick and bubbly, stirring constantly. Cook for one additional minute after bubbling starts, stirring constantly.
- Remove pan from heat; stir in vanilla.
- Serve warm, or place plastic wrap on surface; cool to room temperature.
- Chill thoroughly.

- Whisk together the cornstarch, sugar, and salt in a 2 1/2 to 3 quart pan until combined. Add 1/2 cup of milk, and gently whisk together until it is throughly combined. A few small lumps of cornstarch may remain, but that will eventually combine once the milk is heated.
- Add the remaining milk, and whisk constantly over medium-low heat. After about 8-10 minutes, the milk mixture will begin to thicken at 160 degrees F taken wit a digital thermometer.
- While whisking the egg yolks, spoon in 2 tablespoons of the hot milk mixture. This is called “tempering”. Tempering is the process of adding a hot mixture slowly and in small increments while constantly whisking. This process will keep the eggs from scrambling. Continue with this step adding a total of about 6 tablespoons of hot milk mixture to the eggs. Once they are throughly tempered, pour the egg mixture back into the hot milk mixture and continue to whisk together.
