This healthy apple cake is delicious and incredibly easy to make. And the extra bonus: a low-calorie, low-fat apple cake without butter, oil, or sugar.

3 apples (about 250 g/ 9 oz, Note 1)
3 eggs (large, at room temperature)
¾ cup xylitol (or granulated sugar 150 g/ 5.5 oz/)
1 teaspoon vanilla extract
1 ⅓ cup + 1 tablespoon all-purpose flour (170 g/ 6 oz)
1 teaspoon baking powder
1 teaspoon cinnamon
pinch of salt
2 teaspoons sugar
½ teaspoon cinnamon

Steps:

  • Preparations: Preheat the oven to 350°F/ 180°C. Grease and flour the springform.
  • Prepare apples: Peel and remove the cores. Cut the apples into small cubes. Set aside.
  • Wet ingredients: Beat the eggs and the sugar until light and fluffy, about 3 minutes. Mix in the vanilla extract.
  • Dry ingredients: In another bowl, mix the flour, baking powder, cinnamon, and salt. Carefully fold the flour into the egg mixture. Do not over mix.
  • Batter: Fold the chopped apples into the batter. Pour the batter into the prepared pan.
  • Topping: Mix the sugar and cinnamon and sprinkle this mixture over the batter in the pan.
  • Bake for 30-35 minutes or until golden. A toothpick inserted in the middle of the cake should come out clean.
  • Rest the cake for 10-15 minutes, take it out of the tin and serve either warm or at room temperature (Note 2).

Steps:

  • Preheat your oven to 325 and prep a pan for nonstick
  • Mix together your apples, nuts, cinnamon, and vanilla. Set this bowl aside.
  • In another bowl, beat together the liquid, oil, and the eggs. Set this aside
  • Now in a mixing bowl, combine together the sugar alternative and the Carbquick. You can sift this or use the method of your choice.
  • Slowly pour half of the contents from the wet bowl into the dry ingredient mixing bowl.Mix gently and then add the remainder.
  • Fold in the contents from the first bowl (apples etc) into the mixing bowl by hand. Bake this for an hour or until a toothpick comes out clean.

1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cardamom
1/4 cup canola oil
1/4 cup molasses
1 egg
1 teaspoon vanilla extract
1/2 cup Splenda granular
1 cup low-sugar apple butter
1 granny smith apple, cored and grated

Steps:

  • Preheat oven to 350°F.
  • Spray an 8" springform pan with vegetable cooking spray.
  • In a small bowl, stir together flour, baking powder, baking soda, cinnamon, nutmeg and cardamom. Set aside.
  • In a large mixing bowl, beat oil and molasses with an electric mixer on high speed for one minute.
  • Add egg and vanilla and blend on high speed 30 seconds.
  • Add Splenda and beat until smooth.
  • Add flour mixture, grated apple, and apple butter. Mix until blended.
  • Spread batter evenly in pan and bake for 30 minutes.
  • Cool on wire rack.
  • Remove springform sides from bottom.
  • Serve warm.

Steps:

  • Combine flour, spices, and leveling ingredients in a large bowl. Set aside.
  • Combine 1/2 cup butter and sugar in another bowl. Beat until combined. Add eggs 1 at a time beating well after each addition.
  • Add in the applesauce,milk, and vinegar to the butter mixture and mix well.
  • Fold the wet mixture into the dry incorporating well.
  • Spread out into a greased 13x9 cake pan and bake for 35 minutes at 350°F
  • When cake is cool make the frosting. In a saucepan melt the 1/3 cup of butter. Watch until it begins to brown, once a nutty color remove from heat and pour into a bowl.
  • Add powdered sugar, milk, and vanilla and beat until smooth. Spread on top of cake and serve.
