Keto Low-Carb Cheeseburger Soup image

Keto Low-Carb Cheeseburger Soup is a quick and easy one-pot dinner recipe. The ingredients include ground beef, cheddar cheese, cauliflower, and cream cheese. Load it up with crunchy bacon, pickles, and tomatoes if you wish. This healthy hamburger recipe is perfect for meal prep and leftovers.

1 pound ground beef (I use organic, grass-fed.)
salt and pepper to taste
1 cup diced onions
2 tablespoons unsalted butter
3 cups chopped, fresh cauliflower
3 cups chicken broth
1 teaspoon worcestershire sauce
1 teaspoon garlic powder
1 tablespoon Italian Seasoning
1 tablespoon dried, ground mustard
1 cup heavy cream
2-3 cups shredded cheddar cheese
2 oz cream cheese
1/2 teaspoon xanthan gum (See notes. Optional for thickening)

Steps:

  • In a large soup pot, I use a Dutch oven, brown the ground beef on medium-high heat with salt and pepper to taste.
  • Use a meat chopper to break down the ground beef. Cook for 3-4 minutes or until the beef is no longer pink. Drain the excess fat and set the beef aside.
  • Add the butter and onions to the pot on medium-high heat. Cook until the onions are translucent and fragrant and the butter has melted.
  • Add in the chicken broth, cauliflower, worcestershire sauce, garlic powder, Italian Seasoning, dried mustard and stir. Cover the pot and reduce the heat to medium. Cook for 15 minutes until the cauliflower is soft and can be pierced with a fork.
  • Uncover the pot and add the cooked ground beef, heavy cream, cream cheese, and shredded cheese. Stir.
  • For thick soup: Scoop out a couple of tablespoons of the soup and add it to the bowl with the xanthan gum. Stir the mixture until its thick and no longer clumpy, then add the mixture back to the pot. Stir the soup. This will thicken up the soup.

2 teaspoons onion powder
Salt & pepper, to taste
1 teaspoon basil
3 cups chicken broth
1 cup frozen broccoli
1 cup frozen cauliflower
1/2 cup frozen carrots
1 1/2 cups fat free half and half
8 ounces cheddar cheese, shredded

Steps:

  • In a large pot over medium-high heat, brown the ground turkey, breaking it apart as your do so. Drain off any fat from the meat, then return it to the pot and add onion powder as well as a little salt and pepper. Cook for 30 seconds to a minute while distributing the seasoning through the meat. Add chicken broth, basil and frozen veggies. Bring to boil and simmer covered about 20 minutes until the veggies are tender. Add fat free half and half and shredded cheese. 2 lbs lean ground beef
1 lb bacon
2 cups celery
2 cups onions, chopped
1/2 cup carrot, sliced
2 teaspoons basil
6 cups chicken broth
2 cups broccoli, broken into small pieces
2 cups cauliflower, broken into small pieces
1 lb cheddar cheese, grated
3 cups heavy cream (for lower fat, use half 'n half or non-fat half 'n half)
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 cup sour cream (for lower fat, use lite or non-fat)

Steps:

  • Brown the hamburger in a Dutch Oven, then drain the meat and set aside.
  • Brown the bacon, in the same Dutch Oven, drain it, and then return both the bacon and hamburger to the pot. Add the celery, onions, and carrots. Saute until the vegetables are just tender.
  • Add basil, broth, broccoli, cauliflower and cook until vegetable are just tender.
  • Then add the cheese, heavy cream, pepper, and salt and stir until the cheese melts.
  • Turn off heat and add the sour cream.
