LUCKY CHARMS MARSHMALLOW TREATS
Say hello to these super-fun, double-marshmallow treats. Not only are these crunchy bars coated in a marshmallow-butter mixture, but the small, colorful ones from the cereal box are the perfect decoration.

- Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang on at least two sides; butter the foil. Pick out and reserve 1/2 cup the colorful marshmallows from the cereal.
- Melt the butter in a large saucepan over medium-low heat. Add the standard marshmallows and stir continuously until melted, about 5 minutes. Remove from the heat and stir in the cereal until coated.
- Press the mixture into the prepared baking dish and let cool completely at room temperature, about 1 hour.
- Meanwhile, put the chocolate in a medium microwave-safe bowl. Microwave for 30 second increments, stirring after each, until melted.
- Use the foil overhang to lift out the treats from the pan. Drizzle the chocolate over the treats and sprinkle with the reserved colorful marshmallows. Let the chocolate coating harden at room temperature, about 2 hours. Cut into 18 bars.

- Melt butter over medium low heat in a large sauce pan.
- Add in the marshmallows and stir together, while melting, until marshmallows are completely melted.
- Pour in Lucky Charms cereal and stir until cereal is evenly coated.
- Pour cereal treats into a greased 9x13 pan. Carefully press down evenly.
- Allow to cool for an hour or two before cutting into shapes.
- Microwave white chocolate for 1 minute, stirring after. Microwave for additional 30 second intervals, stirring after each, until creamy.
- Dip bottom of cereal bars into melted white chocolate.
- Place on waxed paper or parchment and let sit until white chocolate sets.

- Line a 9-inch square baking dish with parchment paper. Set aside.
- In a large saucepan, melt butter over medium heat. Add in all but one cup of the mini marshmallows. Reduce heat to low and stir continuously until marshmallows are completely melted.
- Remove from heat. Stir in vanilla extract. Add in the cereal and the remaining 1 cup of mini marshmallows, folding gently.
- Pour into prepared baking dish. Use your fingers (dipped in water) to gently press the treats into the pan. Allow to set one hour.

- Line an 8 or 9-inch baking pan with non-stick foil or lightly greased parchment and set aside.
- Spray a large bowl with cooking spray, add the cereal, and set aside.
- In a microwave-safe bowl, place the marshmallows and butter. Microwave for 1 minute. Stir the mixture very well, until smooth.
- Pour the marshmallow mixture over the cereal and stir very well with a spatula that has been greased with cooking spray.
- Transfer to the prepared baking pan and press evenly with a spatula.
- Let cool 2 hours. You may refrigerate to speed things up.
