1 (16 ounce) package spaghetti
1 tablespoon olive oil
¼ pound turkey bacon, cut into small pieces
½ large onion, chopped
1 clove garlic, minced
2 (15 ounce) cans tomato sauce
1 ½ teaspoons chopped fresh parsley
¼ teaspoon dried basil
1 teaspoon garlic powder
½ teaspoon pepper
1 (15 ounce) can peas, drained
¼ cup grated Romano cheese

Steps:

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Heat oil in a large pot over medium heat. Saute bacon, onion and garlic until lightly browned. Stir in tomato sauce. Season with parsley, basil, garlic powder and pepper. Bring to a boil, reduce heat, and simmer 20 to 30 minutes, stirring occasionally. Stir in peas. Toss with pasta until evenly coated. Sprinkle top with Romano.

"The best ingredients don't need much to shine" says Luke Holden, President, Luke's Lobster, New York City about his minimalist lobster roll recipe. We adapted this recipe from his restaurant's cookbook, Real Maine Food.

Ingredients

4 tablespoons unsalted butter, divided
4 New Englandâ€"style split-top buns
4 tablespoons mayonnaise
1 pound cooked lobster meat
4 teaspoons fresh lemon juice
2 teaspoons mixed dried spices (celery salt, oregano, thyme, and ground pepper)

Steps:

With a brush, spread 2 tablespoons butter, melted, on outsides of split-top buns. In a skillet or on a griddle, toast buns over medium until crisp and golden brown on both sides, 3 to 4 minutes.
Spread mayonnaise on inside of buns. Divide lobster meat among buns.
Mix together 2 tablespoons butter, melted, and lemon juice. Drizzle over lobster, sprinkle with spices, and serve.

This is a great way to do spaghetti sauce that my mom taught me. It is easy to make and everyone who has it seems to like it a lot. I live alone, so I usually freeze portions, and they reheat great.

Ingredients

1 onion
4 garlic cloves
2 tablespoons olive oil
1/2-1 lb ground beef
1 (15 ounce) can whole tomatoes
2 (8 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
1/2-1 teaspoon red pepper flakes
2 teaspoons dried oregano
2 teaspoons dried basil
1 bay leaf
1 teaspoon sugar

Steps:

Chop the onion and mince the garlic. Saute in olive oil, be careful not to cook the garlic too long. I add the onion first, and the garlic for the last couple minutes of cooking.
Brown the ground beef, I drain and discard most of the fat.
In large pot add whole tomatoes (I chop each of these into smaller pieces in the pot.) Add the tomato sauce. Add the tomato paste. Add the beef and the onion/garlic mixture.
Add your red pepper flakes, 1/2 tsp to 1 tsp depending on how spicy you want it, oregano, basil, sugar, bay leaf, and salt and pepper to taste.
Mix well and simmer on low for 60-90 mins, stirring occasionally. Add 1/4 cup of water if it gets too thick while simmering. Remove bay leaf, and serve over pasta, top with freshly grated parmesan cheese.

1 lb. Hot Italian Sausage, cook in skillet
3 cloves garlic, minced
1 lb. chicken breasts, saute in oil in same skillet
1 med onion, chopped
3 whole roasted red peppers, chopped
1-2 Tablespoon flour
½ - ¾ cup Wine
milk
thyme
oregeno
¾ lb. penne pasta, cooked in cubes
salt
pepper
parmesean cheese, grated (about 1 1/2 Cups

Steps:

Saute the chopped onion and garlic in 1 Tablespoon olive oil, remove from the skillet. Saute sausage in skillet, remove from skillet Saute chicken breasts, remove from skillet Cut Sausage and chicken into bite size pieces Deglaze the skillet with wine. Bring to a boil and scrape up all the bits. Add sausage, chicken, onion and garlic, chopped pepper, herbs and salt and pepper to the skillet. Bring to a boil, turn down heat to simmer. Simmer 10 minutes to meld the flavors. Sprinkle flour over stuff in skillet and cook for a couple of minutes to cook flour. Turn off heat and gradually add milk stirring constantly. Turn up heat and simmer until mixture thickens to a sauce. Add drained pasta and if too thick, a small amount of pasta water. Sprinkle with grated cheese before serving.
