LUKE'S TOMATO CHUTNEY

A tangy and tasy addition to cold meats.

Yield MAKES 4-5 cups

Number Of Ingredients 10

1kg tomatoes.
2 tbsp olive oil.
2 onions, finely chopped.
1 1/2 tbsp brown mustard seeds.
1 tbsp curry powder.
1 large red capsicum, seeds and membrane discarded, finely chopped.
1 large green apple, peeled, cored and finely chopped.
1/4 cup brown sugar.
2/3 cup malt vinegar.
Sea salt.

Steps:

  • Bring a large saucepan of water to the boil. Cut a cross in the base of the tomatoes and drop into the water for about 60 seconds. Remove and refresh in a bowl of iced water. Drain, peel off the skin, cut the tomatoes in half and squeeze or scrape out the seeds. Chop the flesh roughly. Heat the oil in a large saucepan and add the onions and mustard seeds. Cook over medium heat until the onion is soft and the mustard seeds start to pop. Add the curry powder, capsicum and apple, stir, then add the tomatoes, sugar and vinegar. Stir again, and gently simmer for 30 minutes (add a little water if it's too dry). Season to taste with salt.

A sweet and spicy chutney that's very addictive. So easy to make you'll find yourself adding this to just about any dish!

15 tomatoes, peeled and chopped
5 fresh peaches - peeled, pitted and chopped
5 red apples - peeled, cored and diced
4 medium onions, diced
4 stalks celery, diced
1 ½ cups distilled white vinegar
1 tablespoon salt
1 cup pickling spice, wrapped in cheesecloth

Steps:

  • Combine the tomatoes, peaches, apples, onions, celery, vinegar, salt and pickling spice in a large stockpot. Bring to a boil, then reduce heat to low, and simmer for about 2 hours, or until thickened. Transfer to sterile jars and store in the refrigerator, or freeze in plastic containers.

500g red onion, finely sliced
1kg tomato, chopped
4 garlic cloves, sliced
1 red chilli, chopped (optional)
4cm piece ginger, peeled and chopped
250g brown sugar
150ml red wine vinegar
5 cardamom seeds
½ tsp paprika

Steps:

  • Tip all the ingredients into a large heavy-based pan and bring to a gentle simmer, stirring frequently. Simmer for 1 hr, then bring to a gentle boil so that the mixture turns dark, jammy and shiny. Place into sterilised jars and allow to cool before covering. Will keep for 6 weeks.
