CAMPER'S BREAKFAST HASH

When we go camping with family and friends, I'm always asked to make this hearty breakfast. This camping breakfast is a favorite at home, too. -Linda Krivanek, Oak Creek, Wisconsin

1/4 cup butter, cubed
2 packages (20 ounces each) refrigerated shredded hash brown potatoes
1 package (7 ounces) frozen fully cooked breakfast sausage links, thawed and cut into 1/2-inch pieces
1/4 cup chopped onion
1/4 cup chopped green pepper
12 large eggs, lightly beaten
Salt and pepper to taste
1 cup shredded cheddar cheese

Steps:

  • In a deep 12-in. cast-iron or other heavy skillet, melt butter. Add the potatoes, sausage, onion and green pepper. Cook, uncovered, over medium heat until potatoes are lightly browned, 15-20 minutes, turning once., Push potato mixture to the sides of pan. Pour eggs into center of pan. Cook and stir over medium heat until eggs are completely set. Season with salt and pepper. Reduce heat; stir eggs into potato mixture. Top with cheese; cover and cook until cheese is melted, 1-2 minutes.

Number Of Ingredients 12

6 pieces peppered bacon, chopped
4 large eggs
2 sweet potatoes, peeled and diced into 1/2-inch pieces
4 parsnips, peeled and diced into 1/2-inch pieces
2 cups Brussels sprouts, quartered
1 medium red onion, chopped
3 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 Roma tomato, diced
1 cup crumbled goat cheese
1/4 cup fresh parsley leaves
8 leaves basil, chiffonade

Steps:

  • Line a plate with a paper towel and set aside. Heat a large nonstick skillet over medium-high heat. Fry the bacon, stirring occasionally, until crisp, 4 to 5 minutes. Remove the bacon to the lined plate with a slotted spoon or spatula.
  • Remove all but 2 tablespoons of grease from the skillet, reserving the remaining grease. Fry the eggs in the bacon fat for 2 to 3 minutes. Remove to a plate and cover with a paper towel to keep warm.
  • Add 1 more tablespoon bacon grease and turn up the heat to high. Add the sweet potatoes, parsnips, Brussels sprouts, onion, garlic and some salt and pepper, then cook, stirring occasionally, for 3 to 4 minutes. Deglaze the pan with 1/4 cup of water, then put the lid on and steam for 1 to 2 minutes.
  • Place fried eggs on top of hash and sprinkle over the bacon, diced tomatoes, goat cheese, parsley and basil.

A hearty breakfast hash fit for a lumberjack - nicely spiced hash browns with sausage, onions, and bell peppers.

2-4 Tablespoons sunflower or olive oil
1 large onion, diced
2 green peppers, diced
1/4 lb. kielbasa, diced
5-6 russet potatoes, scrubbed well and diced
salt and fresh ground black pepper
1/2 to 1 teaspoon smoked paprika
1/4 to 1/2 teaspoon garlic powder
2 ripe tomatoes, sliced
6 fried eggs
hot sauce, optional

Steps:

  • Heat a large, 12-inch cast iron (or other non-stick) skillet over medium-high heat. Add a few tablespoons of oil and heat for 30 seconds. Add the diced onions and cook until they start to soften. Add the green pepper and continue cooking over medium-high heat until they start to brown. Next add the sausage. Allow it to get nice and crispy. Transfer everything to a bowl and keep warm while cooking the potatoes.
  • Add a little more oil to the pan, then add the potatoes and season well with salt and pepper. Cook, turning the potatoes every few minutes with a spatula, until they start to brown. Add the onions, peppers and sausage back to the skillet. Sprinkle with smoked paprika and garlic powder. Continue cooking for another 5-10 minutes until the potatoes are tender. Taste and adjust seasonings, if needed.
  • Serve with sliced tomato and a fried egg on top, if desired, and a few shakes of hot sauce.

Timberlodge restaurant makes these hashbrowns as a side dish and they are wonderful. This recipe was published in the newspaper a couple of years ago. Enjoy I love these.

40 ounces frozen shredded hash browns, about 13 1/3 Cups
1/3 cup onion, chopped to about 1/2 inch
1 cup cheddar cheese, shredded
1 cup monterey jack cheese, shredded
1/2 teaspoon pepper
1/2 teaspoon salt
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup butter, melted

Steps:

  • Preheat oven to 450.
  • In a Large mixing bowl, combine the hashbrowns, onion, shredded cheeses, salt and pepper.
  • Add soup and mix thoroughly.
  • Add melted butter and mix thoroughly.
  • Grease a 9X13 pan with additional butter.
  • Transfer the hashbrown mixture into greased pan and spread evenly. *DO NOT pack down*.
  • Bake for 1 hour until golden brown.
  • Rotate pan for even browning if necessary.
  • Let stand for 5 minutes before serving.

1 small green pepper, diced

2 tablespoons butter
