GRAMMA'S OLD FASHIONED CHILI MAC

Gramma's Old Fashioned Chili Mac image

This is an old family recipe that my mom has cooked for 50 years. It's a wonderful, 'stick-to-the-ribs' meal that goes wonderful with warm cornbread or rolls. I find that kids love this when they don't like regular 'spicy' chili. Enjoy!

BAKED CHILI MAC

Baked Chili Mac image

In searching what to make for dinner tonight, I took out a package of ground meat (buffalo, specifically) from the freezer, and found a box of elbow macaroni. Looked like Chili Mac makings to me! :) I had never made Chili Mac before (I just remember having it in the cafeteria when in grade school), so I took a look at what was here on Zaar... and was surprised not find many recipes for it. I put together a recipe out of what I found here and elsewhere online, but the below meat chili mac was somewhat adapted from Miss Annie's vegetarian Marvelous Macaroni Chili. Very tasty, very flexible! :) This is a Pantry Challenge recipe.

HOW TO MAKE ONE-POT CHILI MAC - KITCHN
2020-12-18 Sauté the onion and brown the beef. Get the onion started in a bit of oil before adding the ground beef. A little salt draws moisture from the onion and lingers during the beef browning step. The beef needs to brown, rather than steam, so let it sizzle for a minute or so to develop the savory backbone of the chili mac. Season the beef.
