4 chicken breasts
2 Ritz Cracker packages, divided
1 can cream of mushroom soup
1 can cream of chicken soup
1 container (8 oz.) sour cream
1 can English peas, drained
1 can cut carrots, drained

Steps:

  • Boil chicken and shred. Crush 1 package Ritz crackers on bottom of baking dish. Add chicken.
  • Mix soups and sour cream and pour on top of the chicken. Add peas and carrots. Crush the other package of Ritz crackers on top.
  • Bake at 350°F for 40 minutes.

1 (2 1/2-3 lb) roasting chickens, cut up
1/4 teaspoon poultry seasoning
1 1/2 teaspoons pepper
1 1/2 teaspoons paprika
1 1/2 cups flour
1 tablespoon garlic salt
1/2 teaspoon salt
2/3 cup flour
1 egg yolk, beaten
1/8 teaspoon pepper
3/4 cup water
Crisco (for frying)

Steps:

  • Combine all Seasoned Flour Mixand set aside.
  • Combine Batter ingredients.
  • Heat Crisco to 365°F.
  • Moisten chicken pieces. Dip in seasoned flour, then batter, then back in seasoned flour. Fry for 15 to 18 minutes or until well browned. Drain on paper towels.

This recipe came from my brother-in-law with a few variations from me. Wonderful and flavorful with very few carbs. If you like your jerk chicken spicey, add more crushed red pepper flakes and cayenne pepper. Cooking time does not reflect marinating time.

4 lbs chicken breasts, boneless and skinless
1/2 cup canola oil
2 teaspoons chili powder
2 teaspoons garlic powder
2 teaspoons onion salt
2 teaspoons basil
2 teaspoons thyme
2 teaspoons vegetable seasoning
1 teaspoon crushed red pepper flakes
2 teaspoons cumin
2 teaspoons coriander
2 teaspoons ginger
2 teaspoons black pepper
1 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon allspice
1 teaspoon salt
1/3 cup sugar
1 onion, diced
1 green pepper, diced

Steps:

  • Mix all ingredients, except chicken, in a medium bowl.
  • Cut each chicken breast into 4-6 long pcs.
  • Add marinade to chicken breasts.
  • Marinate at least 4 hours or overnight.
  • Can be grilled on barbecue or in broiler.
  • Cook just until done, do not overcook. This will dry out if overcooked.

Number Of Ingredients 4

4 skinless, boneless chicken breast halves
2 cups sliced fresh mushrooms
1 teaspoon coarse ground black pepper
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat oven broiler to 375 degrees F (190 degrees C). Line a broiler pan with aluminum foil. Place chicken on the broiling pan.
  • Broil chicken breasts in preheated oven for 25 to 35 minutes or until they are cooked through and the juices run clear.
  • Meanwhile, place mushrooms in a medium skillet, season with salt and pepper to taste, cover skillet and cook over high heat until the juices run. Once that happens, lower heat, remove cover and carry on cooking until liquid has evaporated. Add mushrooms to chicken and sprinkle shredded cheese on top.
  • Broil for about 8 to 10 minutes, until the cheese is golden and bubbly.

  • Combine Kosher salt, brown sugar, peppercorns, scallions, garlic, and allspice in a saucepan. Add chicken stock and bring to a boil stirring to dissolve the salt and sugar. Remove from heat and allow to cool.
  • Combine the cooled mixture with remaining water in pot big enough to hold the chicken and stir well. Add quartered chicken and refrigerate overnight.
  • Wrap each piece of quartered chicken in a slice of pancetta and secure with a toothpick. In skillet heat olive oil and butter over high heat. Add chicken and brown for about 10 minutes on each side. Do not crowd or they will not brown. Transfer to plate.
