My take on the layered brownies TikTok trend, using OREO® and Biscoff® cookie layers between layers of my classic brownie recipe batter. My family was begging for more after this was done!

1 ½ cups white sugar
¾ cup all-purpose flour
½ cup unsweetened cocoa powder
½ teaspoon salt
¼ teaspoon baking powder
¾ cup unsalted butter, melted
3 large eggs
1 teaspoon vanilla extract
½ (14 ounce) package chocolate sandwich cookies (such as Oreo®)
½ (8.8 ounce) package speculoos cookies (such as Lotus Biscoff®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking pan.
  • Mix sugar, flour, cocoa powder, salt, and baking powder together in a mixing bowl.
  • Whisk butter, eggs, and vanilla together in a separate bowl. Add butter mixture to the flour mixture and mix until well combined.
  • Pour 1/3 of the batter into the prepared baking pan and smooth out with a spatula. Add OREO® cookies in an even layer, then spread another 1/3 of the batter over top. Add Biscoff® cookies in an even layer, then spread remaining batter over top. (The Biscoff® layer should be two rows of 5 cookies, plus a row of 2 1/2 cookies turned sideways.)
  • Bake in the preheated oven until edges are brown and center is set, 30 to 35 minutes.
  • Remove pan from the oven and let brownies cool completely before slicing and serving, about 30 minutes.

1 (20 ounce) box brownie mix (for 13x9-inch pan)
1 (14 ounce) bag M&M's (for the Holidays)
16 ounces cream cheese
2/3 cup sugar
1/4 cup heavy cream
2 eggs
1/2 teaspoon vanilla extract
1 1/2 cups whipped cream (optional)

Steps:

  • Preheat oven to 350 degrees;.
  • Prepare brownie mix according to package directions. Spoon batter into 13x9-inch baking pan, spreading evenly. Cover with 1 cup of M&M's.
  • In another mixing bowl, thoroughly beat the cream cheese with the sugar. Slowly add the heavy cream, eggs and vanilla extract. Blend mixture until smooth, scraping down the sides of the bowl several times.
  • Evenly spoon the cream cheese mixture over the brownie batter. Bake for 50-60 minutes, or until a toothpick inserted into the center of the pan comes out almost clean.
  • Remove and cool completely.
  • Optional: Just before serving, top with a layer of whipped cream.
  • Cut into 2-inch squares. Prior to serving, decorate with additional M&M's. Store in refrigerator.

These layered cookie brownies are studded with M&M's™ and mint Oreo™ pieces, making them deliciously indulgent, and a perfect St. Patrick's Day treat.

1 box Betty Crocker™ Fudge Brownie Mix
Water, vegetable oil and eggs called for on brownie mix box
1 pouch Betty Crocker™ Sugar Cookie Mix
Butter and egg called for on cookie mix pouch
1 1/4 cups green M&M's® milk chocolate candies
12 Oreo Thins™ chocolate mint creme sandwich cookies, cut into fourths (about 1 cup)

Steps:

  • Heat oven to 350°F. Line 9-inch square pan with foil, allowing foil to hang over sides of pan for easy removal after baking. Spray with cooking spray.
  • Make brownie batter as directed on box. Spread in pan. Bake 32 to 35 minutes or until brownies are set around sides and toothpick inserted in center of brownies comes out almost clean. Cool in pan 10 minutes.
  • Meanwhile, in medium bowl, make cookie dough as directed on pouch for drop cookies. Stir in 1 cup of the candies. Drop half of the cookie dough mixture in chunks on top of baked brownie layer; add half of the Oreo™ pieces. Repeat with remaining cookie dough and Oreo™ pieces. With back of spoon or offset metal spatula, gently press cookie dough together to form even layer. Top with remaining 1/4 cup candies, pressing gently into cookie dough.
  • Bake 23 to 28 minutes or until cookie layer is set, covering with foil last 10 minutes if necessary to prevent overbrowning. Cool at least 2 1/2 hours; remove bars from pan, and cut into 4 rows by 4 rows.
