- Add a small pinch of salt and ground pepper. Mix well and set aside.
- Cut tofu into square cubes (around 2cms). Bring a large amount of water to a boil and then add a pinch of salt. Slide the tofu in and cook for 1 minute. Move out and drain. This helps to remove the raw soy flavor form tofu.
- Get a wok and heat up around 2 tablespoons of oil, fry the minced meat until crispy. Transfer out and leave the oil in.
- Add another 1 tablespoon of vegetable cooking oil and fry doubanjiang for 1 minute over slow fire until the red turns red (bring us a lovely red color dish) and add fermented black beans, garlic, scallion white and ginger, cook for 30 seconds until aroma. Optionally mix pepper flakes in. Pepper flakes should be added at the end because it contains little water and can be burnt easily.
- Pour in water or stock. Add light soy sauce, sugar and half of the cooked beef (providing more flavors to the soup) after the broth boils and let it continue simmering for 2-3 minutes. Place the tofu in, simmer for another 6-8 minutes. The longer time of simmering helps the tofu to absorb the flavors.
- During the process of simmering, mix 1 tablespoon of cornstarch with 2.5 tablespoons of water in a small bowl to make water starch. Stir the water starch and then pour half of the mixture to the simmering pot. Back push and wait for around 30 seconds and then pour the other half. You can slightly taste the tofu and add pinch of salt if not salty enough. Add cooked beef to creates some crispy texture and then drizzle sesame oil. Mix well.
- Transfer out when almost all the seasonings stick to tofu cubes. Sprinkle Szechuan peppercorn powder (to taste)and chopped garlic greens if using.
- Serve immediately with steamed rice.

- Get all the ingredients ready before you start cooking and set them out in bowls. Drain the tofu and cut it into 1.5cm cubes. Put it in a bowl and cover with very hot water. Leave this while you get on with everything else.
- Heat a wok and pour in the groundnut oil. Get this really hot and fry the pork until it's crispy. Remove with a slotted spoon but leave the oil behind.
- Add the bean paste and cook, stirring for a few mins until fragrant, then add the black beans, ginger and garlic. Cook, stirring, for a min or so, then add the stock and let it bubble away.
- Stir the cornflour and water into the mixture in the wok, drain the tofu and stir it into the sauce. Tip in the spring onions and the mince.
- Add the chilli oil, if using, and sprinkle over the Sichuan peppercorns. The sauce shouldn't need seasoning with salt, as many of the ingredients are salty already. Serve with boiled white rice.

I have long enjoyed stir-fried tofu creations like ma-po tofu, a classic dish from Sichuan. But I found making them difficult. This version is easy and quick.

- Put oil in a deep 10-inch skillet or wok, preferably nonstick, and turn heat to medium-high. A minute later, add garlic, ginger and red pepper flakes, and cook just until they begin to sizzle, less than a minute. Add pork, and stir to break it up; cook, stirring occasionally, until it loses most of its pink color.
- Add scallions and stir; add stock. Cook for a minute or so, scraping bottom of pan with a wooden spoon if necessary to loosen any stuck bits of meat, then add tofu. Cook, stirring once or twice, until tofu is heated through, about 2 minutes.
- Stir in the soy sauce; taste, and add salt and red pepper flakes as necessary. Garnish with cilantro if you like, and serve.

- Mix marinade ingredients. Simmer tempeh in marinade for about 20 minutes.
- Cut the tofu (bean curd) into 1/2 inch (1 cm) square cubes, and blanch (drop into boiling water) for 2 - 3 minutes. Remove from boiling water and drain.
- Chop the leek or green onions into short lengths.
- Heat wok and add oil. When oil is ready, add the marinated tempeh.
- Stir-fry tempeh until the color darkens. Add salt and stir. Add the salted black beans. Mash the beans with a cooking ladle until they blend in well with the tempeh. Add the chili paste, then the stock, tofu, and leek or green onions.
- Turn down the heat. Cook for 3 - 4 minutes.
- While cooking, mix cornstarch, water, and soy sauce together. Add to wok and stir gently. Serve with freshly ground Szechuan pepper.

MA PO TOFU WITH SPINACH
Cubes of silken tofu simmered in a spicy sauce, with pork and spinach. This is my favorite, so I usually make a double recipe!

- Start your rice cooker.
- Dice the pork into tiny cubes, stir in a splash of soy sauce, and set aside.
- Cut the silken tofu into 1/2 inch cubes and set aside. Be gentle with your tofu, the soft kind is delicate and comes apart easily.
- Combine the chicken broth, soy sauce, sherry, sugar, and salt, and set aside.
- Heat up the vegetable oil in a wok, deep skillet, or dutch oven.
- when the oil is very hot, add the chili sauce and garlic. Stir for 30 seconds, just enough to wake up the flavors, but not enough to burn the garlic.
- add the diced pork and stir, cooking for another minute or so. (It will cook more later).
- Add the tofu and pour in the sauce. Stir once gently, being careful not to break up the tofu.
- Bring the sauce up to a boil and braise uncovered for 5 minutes or so. (How long you want to braise it depends on how saucy you want it to be--the longer it boils, the more the liquid will reduce.).
- Dice the green onion, white and green parts together.
- After 5+ minutes, the tofu will take on a nice reddish brown color from the sauce. At this point, mix cornstarch and water to make about a tablespoon of goopy paste, and stir into the boiling sauce. Throw about 4 handfuls of baby spinach onto the top and cover, cooking for another 2 or 3 minutes.
- When your spinach is wilted and the sauce is "clingy", gently stir in the green onion and 1/2 tsp of sesame oil.
- Serve on top of lots of steamed white rice.

- Lemony Baked Tofu. Number one for our oven on a busy weeknight is this classic from the meatless masters at Moosewood restaurant. It’s on page 223 of Moosewood Restaurant New Classics cookbook, but I did find a link to share with you too.
- Black Pepper Tofu. This recipe is utterly remarkable in terms of taste, which is not surprising since it comes from Yotam Ottolenghi of Plenty fame. But nutritionally, it’s got some room for improvement which is why it didn’t make #1 on my list.
- Soy-Lime Roasted Tofu. This is easy, works equally well with tempeh, and has a very short ingredient list. If you’re in a pinch, forget marinating for an hour and just put it straight in the oven.
- Braised Tofu in Caramel Sauce. This recipe was originally in Sunset magazine, and I swear I’ve been making it for at least 20 years. (But according to the internet, it was published in 2002, so I’m a few months off with my calculations.)
- Teriyaki Tofu Triangles. You can’t go wrong with recipes from Nava Atlas. You just can’t. I’ve made this one with tempeh, and I don’t always follow the directions to cook on the stovetop.
- TLT Sandwich. Heidi strikes again. I dare say this is the perfect vegetarian sandwich, probably because of the special treatment the tempeh and the cherry tomatoes receive before you actually put them between two slices of (whole grain) bread.
- Orange Pan-Glazed Tempeh. Another reliably good recipe from Heidi Swanson at 101 Cookbooks. And another recipe that tastes equally yummy with tofu or tempeh, whichever you happen to have on hand.
- Sesame-Maple Roasted Tofu. Leave it to Eating Well to embrace this nutritional powerhouse and feature tofu in a magazine that isn’t specifically geared towards vegetarians, just healthy eaters.
- Peas, Carrots and Tempeh with Miso-Almond Sauce. Need a quick meatless meal with plenty of fiber and protein? Vegetarian Times happens to have a few thousand solutions to that problem, and this is one I keep making time and time again.
- Thai-Seared Tofu. This recipe was originally from Cooking Light long, long ago, but the best link I could find was to MyRecipes. I use their marinade recipe (sometimes leaving out the mint and crushed red pepper) and then cook in a bit of toasted sesame oil.
