- Cook the pasta according to the package instructions. Drain and set aside.
- Heat the butter and olive oil in a large pot over medium-high heat. Add the broccoli, scallion whites, garlic, asparagus and bell pepper. Season with the salt and pepper and cook, stirring, for 3 minutes. Splash in the wine and allow it to reduce for 1 minute. Add the milk and cream and continue to cook until warmed through. Stir in the peas.
- Toss together the fontina, Cheddar and cornstarch in a bowl.
- While stirring the sauce, sprinkle in the cheese mixture. Stir until the cheese is completely melted. Bring to a simmer and allow the sauce to thicken, about 1 minute. Add the pasta and stir until well combined. Taste and adjust the seasoning to taste. Garnish with the reserved scallion greens.

- Boil the pasta JUST until al dente, according to package directions. Drain and return to the pan you boiled it in. Set aside. (Mix in a little butter to keep the noodles from sticking if it's going to be awhile before you make the sauce)
- Preheat the oven to 375 degrees Fahrenheit.
- To a medium saucepan over medium heat, add the butter. When the butter has melted, add the flour, salt, dry mustard, pepper, and 1/8 teaspoon smoked paprika. With a wooden spoon or whisk, stir constantly for three minutes.
- Add the milk in a thin stream, stirring constantly with a whisk. Continue to stir constantly until the sauce thickens enough to coat the back of a spoon, 5-8 minutes.
- Remove from heat and add 2 cups of the cheese, stirring until melted. You'll reserve the last cup of cheese for topping. Pour the cheese sauce over the pasta and toss gently until all of the pasta is coated.
- Add half the pasta to a two-quart casserole dish (I like a tall 8-inch by 8-inch baking dish). Sprinkle on half the cheese. Add the rest of the pasta. Sprinkle on the rest of the cheese, then dust lightly with the smoked paprika.
- Bake for 25-30 minutes, until the mac and cheese is bubbling and browning on top.
- Serve, topping individual servings with parsley or cooked, chopped bacon if desired.

I love this recipe because it's taken me so long to actually get a good tasting noodle and not just a good tasting piece of cheese on top. - Preheat oven to 350°.
- Add beaten Eggs and Evaporated Milk to the cooked Macaroni and slowly bring to a simmer over low heat.
- Continue cooking on med. heat until thick and creamy, about 6 to 8 minute

- Preheat the oven to 350°F. Cook the macaroni until still slightly firm. Drain and set aside. In a small bowl, beat the egg. In a large pot, melt the butter and sprinkle in the flour. TOPPINGS: Fry the bacon in a skillet over medium-high heat until slightly crisp, about 8 minutes. Remove from the pan and cut into bite-size pieces. In a separate pan, cook the onions in the butter over a low heat until caramelized, 20 to 30 minutes, stirring occasionally. Use a fork to crumble the gorgonzola. - Preheat oven to 350.
- Grease a 11X13 pan.
- Cook macaroni in salted water until "al dente" according to the box.
- Layer cooked macaroni, then sliced Velveeta (about 6) on top and some shredded cheese.
- Season each layer with salt (kosher or seasoned) and pepper. (It is not necessary to use a whole teaspoon because it all depends on your personal tastes.).
- Keep repeating layers until all macaroni is used with cheese on top.
- Top with small pieces of butter and pour milk over the top.
