- Preheat the oven to 450 degrees F.
- Butter a 13 by 9-inch glass baking dish and set aside. Cook the noodles in a large pot of boiling salted water until tender but still firm to bite, stirring frequently, about 5 minutes. Drain well, but do not rinse.
- Whisk the cream, milk, flour, 1/2 teaspoon salt, and pepper in large bowl to blend. Stir in 1 cup Fontina, 1/2 cup Parmesan, 1/2 cup mozzarella, ham, if using, and parsley. Add the noodles and toss to coat. Transfer the noodle mixture to the prepared baking dish. Toss the remaining 1 cup Fontina, 1/4 cup Parmesan, and 1/4 cup mozzarella in a small bowl to blend. Sprinkle the cheese mixture over the noodle mixture. Bake until the sauce bubbles and the cheese melts and begins to brown on top, about 20 minutes. Let stand for 10 minutes before serving.

- Preheat the oven to 350 degrees F.
- Cook the macaroni until still slightly firm. Drain and set aside.
- In a small bowl, beat the egg. In a large pot, melt the butter and sprinkle in the flour. Whisk together over medium-low heat. Cook for a couple of minutes, whisking constantly. Don't let it burn. Pour in the milk, add the mustard and whisk until smooth. Cook until very thick, about 5 minutes. Reduce the heat to low.
- Take 1/4 cup of the sauce and slowly pour it into the beaten egg, whisking constantly to avoid cooking the eggs. Whisk together until smooth. Pour the egg into the sauce, whisking constantly. Stir until smooth. Add in the cheese and stir to melt. Add 1/2 teaspoon salt, 1/2 teaspoon seasoned salt and the pepper. Add any additional spices if desired. Taste the sauce and add more salt and seasoned salt as needed! DO NOT UNDERSALT.
- Pour in the drained, cooked macaroni and stir to combine. Serve immediately (while it's still very creamy) or pour into a buttered baking dish, top with extra cheese and bake until bubbly and golden on top, 20 to 25 minutes.
- Fry the bacon in a skillet over medium-high heat until slightly crisp, about 8 minutes. Remove from the pan and cut into bite-size pieces.
- In a separate pan, cook the onions in the butter over a low heat until caramelized, 20 to 30 minutes, stirring occasionally.
- Use a fork to crumble the gorgonzola.
- Put the bacon, caramelized onions and crumbled gorgonzola into separate bowls. Serve as delicious toppings for both sliders and macaroni cheese.
MACARONI AND CHEESE ARRABIATA
Arrabiata means a hot, spicy dish with tomatoes. My boys love this dish and you can adjust just how spicy you like it. Good for those crisp fall evenings. I got this recipe out of our newspaper a long time ago.

Steps:
- Cook pasta in boiling, salted water until al dente.
- In a medum skillet heat olive oil.
- Saute garlic until golden.
- Add the tomatoes and the peppers.
- Simmer uncovered over medium heat for 5 minutes, until tomatoes are almost mushy.
- Stir in olives and basil and set aside.
- Melt butter in heavy saucepan.
- Stir in flour.
- Cook and whisk over medium heat for l minute.
- Add milk all at once, whisking until smooth.
- Cook and stir until thickened and bubbly.
- Stir in fontina and 1/4 cup Parmesan cheese and remove from heat.
- Stir until cheese melts.
- Add salt to taste.
- Stir in tomato mixture and stir well.
- Drain macaroni.
- Return to pasta pot and shake until all moisture evaporates.
- Add sauce, sirring well to coat all the pasta.
- Pour into a 9 by 13 inch baking pan.
- Sprinkle with remaining Parmesan chees.
- Bake at 400 degrees for 20 minutes, until golden brown.
ARRABIATA
This is a spicy pasta dish that is very fast and easy to make. It's my variation of the dish found at Macaroni Grill. I usually serve this with an italian style salad, garlic shrimp, and either herb bread or french bread.

Steps:
- In skillet, saute garlic in olive oil until garlic is lightly browned.
- Add italian style stewed tomatoes and crushed red peppr.
- Simmer for approx 20 minutes on low.
- Cook pasta according to package directions.
- When both arrabiata sauce and pasta are done, toss together.
- Toss in cheese while sauce is hot so it will melt.

BROOKLYN GIRL'S PENNE ARRABIATA
One thing I learned in my years living in the Canarsie section of Brooklyn, NY was how to cook a good Italian meal. Here is a recipe I created after having this dish in a restaurant. Enjoy!

Steps:
- Heat 1/4 cup of olive oil in a large skillet over medium heat. Add the garlic, and saute for a few minutes. Sprinkle in the red pepper flakes, and saute for another minute. Pour in the diced tomatoes and tomato sauce, and add the basil. Simmer for about 20 minutes, stirring occasionally.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add penne pasta, and cook for 8 minutes, or until tender. Drain.
- In a small bowl, whisk eggs with a fork. Place bread crumbs in a separate bowl. Stir the garlic powder, salt and pepper into the bread crumbs. Dip chicken cutlets into the egg, then press into the bread crumbs until completely coated.
- Heat remaining olive oil in a large skillet over medium heat. Fry chicken for about 5 minutes per side, or until the coating is a nice dark brown color.
- Remove chicken, and cut into slices. Toss the chicken slices into the sauce, and simmer for about 10 minutes. Stir in the cooked penne, simmer for a few more minutes to soak up the flavor, then serve.

- In a large skillet, heat 2 tablespoons olive oil over low heat. Add onion, chilies and garlic; cook and stir until fragrant, 2-3 minutes. Add the tomatoes, gently breaking up with the back of wooden spoon; cook until tender over medium heat, about 10 minutes., Meanwhile in a large saucepan, cook penne according to package directions for al dente. Drain pasta, reserving 1/2 cup pasta water. , Add vinegar to thickened tomato sauce; season with salt and pepper. To make breadcrumb topping, heat remaining olive oil over medium heat in second skillet. Add breadcrumbs and fresh thyme, if desired; fry until crispy, 2-3 minutes. Remove from heat., Add drained pasta and reserved pasta water to tomato sauce; toss to coat. Top with fried breadcrumbs. If desired, drizzle with additional olive oil and garnish with fresh herbs and cheese.

- Halve 1 pound tomatoes, then purée with cherry pepper (if using), red pepper flakes, oil, and 1/2 teaspoon salt in a blender until smooth.
- Finely chop remaining tomatoes and combine with celery and tomato purée in a large bowl.
- Toss hot capellini with tomato sauce and mozzarella. Serve sprinkled with celery leaves.
