Macaroni and Cheese image

Number Of Ingredients 16

4 cups dried macaroni
1 whole egg
1/2 stick (4 tablespoons) butter
1/4 cup all-purpose flour
2 1/2 cups whole milk
2 heaping teaspoons dry mustard (more if desired)
1 pound sharp Cheddar, grated (not pre-grated cheese), plus more for baking
Salt
Seasoned salt
1/2 teaspoon ground black pepper
Optional spices: cayenne pepper, paprika, thyme
1 pound thick-cut peppered bacon
3 yellow onions, halved and sliced
3 tablespoons butter
8 ounces gorgonzola
Cooked sliders and/or macaroni and cheese, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the macaroni until still slightly firm. Drain and set aside.
  • In a small bowl, beat the egg. In a large pot, melt the butter and sprinkle in the flour. Whisk together over medium-low heat. Cook for a couple of minutes, whisking constantly. Don't let it burn. Pour in the milk, add the mustard and whisk until smooth. Cook until very thick, about 5 minutes. Reduce the heat to low.
  • Take 1/4 cup of the sauce and slowly pour it into the beaten egg, whisking constantly to avoid cooking the eggs. Whisk together until smooth. Pour the egg into the sauce, whisking constantly. Stir until smooth. Add in the cheese and stir to melt. Add 1/2 teaspoon salt, 1/2 teaspoon seasoned salt and the pepper. Add any additional spices if desired. Taste the sauce and add more salt and seasoned salt as needed! DO NOT UNDERSALT.
  • Pour in the drained, cooked macaroni and stir to combine. Serve immediately (while it's still very creamy) or pour into a buttered baking dish, top with extra cheese and bake until bubbly and golden on top, 20 to 25 minutes.
  • Fry the bacon in a skillet over medium-high heat until slightly crisp, about 8 minutes. Remove from the pan and cut into bite-size pieces.
  • In a separate pan, cook the onions in the butter over a low heat until caramelized, 20 to 30 minutes, stirring occasionally.
  • Use a fork to crumble the gorgonzola.
  • Put the bacon, caramelized onions and crumbled gorgonzola into separate bowls. Serve as delicious toppings for both sliders and macaroni cheese.

2 cups elbow macaroni
2 tablespoons butter
2 tablespoons flour
1 teaspoon dry mustard
1 teaspoon salt
2 1/2 cups milk
2 cups sharp cheddar cheese, shredded

Steps:

  • Preheat oven to 375 degrees.
  • Cook macaroni in 5 quarts boiling water for 8 minutes. Drain macaroni.
  • In medium saucepan, melt butter.
  • Stir in flour, mustard, and salt. Gradually stir in milk. Cook and stir until mixture thickens slightly.
  • Remove from heat.
  • Add 1 1/2 cups cheese to milk mixture and stir until melted.
  • Stir in macaroni.
  • Turn into greased 2 quart baking dish.
  • Top with remaining cheese.
  • Bake 20-25 minutes or until bubbly.
  • Refrigerate leftovers.

1 pound elbow macaroni
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
1 cup fresh bread crumbs
1/4 cup grated Parmesan, plus 8 ounces
1 tablespoon chopped fresh parsley leaves
1 tablespoon canola oil
1 teaspoon paprika
1 (8-ounce) block Cheddar, grated
1/2 cup cottage cheese
Freshly cracked black pepper
Cooking spray

Steps:

  • Preheat oven to 350 degrees F.
  • Bring a large pot of salted water to a boil over medium heat. Add the macaroni and cook until slightly underdone, or very al dente, about 7 minutes. Drain the pasta and return it to the pot.
  • In a saucepan over medium heat, melt the butter and stir in the flour. Cook, stirring constantly, until the roux turns a very pale golden color. Add the milk and whisk well to remove any lumps. Bring to a simmer over low heat.
  • Meanwhile, in a small bowl, mix together the bread crumbs, 1/4 cup of Parmesan, parsley and canola oil. Reserve.
  • Add the paprika, Cheddar, the remaining 8 ounces of grated Parmesan, the cottage cheese and salt and pepper, to taste, into the milk mixture. Pour the cheese sauce over the pasta and stir to combine.
  • Reserve 3 cups for the Round 2 web recipe Spicy Macaroni and Cheese Bites.
  • Spray a 9 by 13-inch ovenproof baking dish with cooking spray. Pour in the macaroni and cheese and spread it evenly in the pan. Sprinkle with the bread crumb mixture and bake for about 30 minutes until the bread crumbs are toasted and golden.

6 cups dry pasta, shapes
1/4 cup olive oil
1 large yellow onion, minced
2 teaspoons salt
8 garlic cloves, minced
1/3 cup chopped oregano
2 tablespoons chopped thyme
1/2 cup chopped Italian parsley
1/4 cup butter
3 1/2 cups milk
1/4 cup unbleached flour
4 cups grated aged white cheddar cheese (about 330g)
4 cups fresh breadcrumbs
1 cup grated parmesan cheese
1/2 cup pine nuts

Steps:

  • *I would use a bit less pasta, maybe 5 cups, because I like lots of sauce.
  • **Fresh herbs are best of course but dried works fine too.
  • ***4 Pieces of bread ripped up.
  • Cook pasta in boiling, salted water until just done. strain and toss with a light coating of olive oil. set aside or refrigerate. (This step can be done one day in advance.).
  • Meanwhile, heat 1 tbsp (15ml) olive oil in a small skillet and sauté onion for 5 minutes. add half of the minced garlic, 1/2 tsp (2.5ml) salt and sauté until the garlic turns golden. transfer to a small bowl and stir in half of the chopped herbs. Set aside.
  • Next, make a roux for the cheese sauce. Gently heat the milk and keep it warm. Set a saucepan over medium heat and melt the butter. Sprinkle in flour and whisk constantly as the flour and butter turn golden. Gradually add the warm milk and 1 tsp (5ml) salt and whisk thoroughly. heat until the sauce thickens (about 10 minutes). Add the sautéed onion/herb mix, grated cheese and stir until the cheese melts. Season to taste.
  • Finally, make the topping. Combine the breadcrumbs with the remaining garlic, herbs, Parmesan, pine nuts, 1/2 tsp (2.5ml) salt, plenty of cracked pepper and the remaining 3 tbsp (45ml) olive oil. Mix together thoroughly.
  • Preheat the oven to 350°F.
  • To assemble, combine the noodles and cheese sauce in a large bowl and mix well. pour into an oiled 8 x12-inch dish.* Scatter the topping over the entire surface, working some of it into the noodles. Bake uncovered until golden and bubbly (about 45 minutes). Serve piping hot.
  • *Not necessary to oil the dish.

This is the recipe that caused me to buy the Reata's cookbook. Boy, was it worth it! I've loved homemade mac and cheese since forever, but finding one that my family would enjoy hadn't worked until now. I've tried recipes from all sorts of cookbooks: Martha Stewart's, Better Home and Gardens, and too many others to list. I'd given up hope until I found this one. This is a keeper! My daughter and I did have trouble finding asiago cheese in our small West Texas town, so she drove to San Antonio and bought some for me. That is trust and love.

2 cups heavy cream
1/2-3/4 cup asiago cheese, grated
1/2-3/4 cup plain monterey jack cheese, shredded
4 cups elbow macaroni, cooked and drained
1/4 cup fresh jalapeno pepper, seeded and diced
4 -5 slices bacon, cooked crisp and crumbled
salt and pepper
2 cups sharp cheddar cheese, shredded
1 1/2 cups dried breadcrumbs (optional)

Steps:

  • Preheat the oven on the broil setting.
  • Heat a large pot to medium and add the heavy cream. When the cream begins to bubble around the edges, add 1/2 cup each of the asiago and Monterey jack cheese, stirring constantly until the cheeses are melted.
  • Remove from heat and add the macaroni, stirring until thoroughly incorporated.
  • Add the diced jalapenos and bacon. The cheese mixture should be like glue now. If it's not add a little more of the remaining 1/4 cup of asiago and Monterey jack cheeses until they are melted and the mixture isn't too wet looking. If the mixture seems too dry, add 2 tablespoons of the heavy cream until it's the consistency you like.
  • Sprinkle in a little salt and pepper. I didn't use very much. The bacon and cheese must have plenty of salt.
  • Pour the mixture into a large baking dish and distribute evenly. Top with the cheddar cheese and if you wish, the bread crumbs.
  • Place the dish under the broiler. It's done when the cheese on top begins to bubble and brown around the edges.
  • Note: Don't be afraid to add all the jalapenos. I was afraid they'd be too hot for the grandkids who don't care for the heat. But the peppers didn't seem hot at all.

  • Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • Heat the milk in a small saucepan. Stir in mustard, Worcestershire sauce, salt, and hot sauce. Set aside.
  • Stir 1 1/2 tablespoons butter and 3 cups cheese into the drained macaroni. Pour the hot milk mixture over the cheese and macaroni. Transfer to prepared baking dish. Sprinkle remaining 1/2 cup cheddar on top. Combine the bread crumbs with the melted butter, and spread over the top. Sprinkle with paprika.
  • Bake in preheated oven for 30 minutes, and then place under the broiler for 1 to 2 minutes.
