1-1/2 cups uncooked elbow macaroni
3 cups fresh broccoli florets
2 cups fresh cauliflowerets
3 large carrots, halved lengthwise and thinly sliced
2 celery ribs, sliced
1 tablespoon butter
1 medium onion, chopped
1/4 cup all-purpose flour
1 cup 2% milk
1 cup chicken broth
3 cups shredded sharp cheddar cheese
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon paprika

Steps:

  • Preheat oven to 350°. In a 6-qt. stockpot, cook macaroni according to package directions, adding broccoli, cauliflower, carrots and celery during the last 6 minutes of cooking. Drain; transfer to a greased 13x9-in. baking dish., Meanwhile, in a large saucepan, heat butter over medium-high heat; saute onion until tender. Stir in flour until blended. Gradually stir in milk and broth; bring to a boil. Cook and stir until thickened, about 2 minutes; stir in cheese, mustard, salt and pepper. , Add to macaroni mixture, stirring to coat; sprinkle with paprika. Bake, uncovered, until heated through, 15-20 minutes.

Easy 15-Minute Vegetarian Macaroni and Cheese image

This Easy 15-Minute Vegetarian Macaroni and Cheese is the perfect quick and easy weeknight meal idea! It's packed with veggies and it's kid-friendly!

1 tablespoon butter
1 tablespoon all purpose flour
1 cup low fat milk
salt and pepper (to taste)
a dash of Sriracha (for flavour, not heat!)
2 cups shredded cheddar cheese
1 package Barilla Ready Pasta Cut Macaroni
2 cups chopped/shredded veggies (I use 1 1/2 cups chopped broccoli and 1/2 cup shredded carrots)
3/4 cup seasoned breadcrumbs
2 tablespoons melted butter

Steps:

  • Set your oven to preheat to 400 degrees Fahrenheit and quickly grease 4 small baking dishes or ramekins with butter or cooking spray (crème brulee dishes work great!).
  • Heat a small pot over medium heat and add the butter to melt.
  • Add the flour and whisk together, continuing to whisk over the heat for one minute.
  • Turn the heat to low and add the milk in a slow, steady stream, whisking constantly so the mixture gets nice and thick and smooth.
  • Add the salt and pepper and Sriracha, stirring until combined.
  • Stir in the cheese until it melts into the smooth sauce. Turn off the heat and set the cheese sauce aside.
  • Prepare the Barilla Ready Pasta according to the package directions (vent the package and cook for only one minute!).
  • Stir the cooked Barilla Ready Pasta and the chopped veggies into the cheese sauce.
  • Divide the macaroni and cheese evenly between the baking dishes.
  • Stir the breadcrumbs and melted butter together in a small bowl and sprinkle the mixture over the tops of the macaroni and cheese in the baking dishes.
  • Bake for about 7-8 minutes at 400 degrees Fahrenheit until the tops are golden brown and the cheese is bubbly.
  • Serve immediately.

Sneak vegetables into macaroni cheese, a popular family meal that becomes even more nourishing for kids with the addition of butternut squash, leeks and peas

150g butternut squash, cut into chunks
300g penne (we used Napolina 50% white 50% wholemeal)
40g butter
1 small leek, finely sliced (about 50g)
25g flour
600ml milk
100g frozen peas
175g mature Cheddar cheese (we used a vegetarian version)
1 slice day-old brown bread, blitzed into crumbs

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Put the butternut squash in a steamer over boiling water. Steam for around 15-20 mins or until tender. Drain and then blitz in a food processor until smooth.
  • Cook the pasta according to the pack instructions.
  • Heat the butter in a medium saucepan, add the leek and cook for 2 mins. Stir in the flour and cook for 1-2 mins more. Take the pan off the heat and gradually whisk in the milk. Return to the heat and bring to the boil, stirring all the time. Simmer for 5 mins. Stir in the peas and bring back to a simmer. Take the pan off the heat and stir in the butternut squash, then 125g cheese.
  • Stir the pasta into the sauce and transfer to an ovenproof dish. Sprinkle over the remaining cheese and the breadcrumbs. Bake for 20 mins or until golden and bubbling.

3 cups (750 mL) dry macaroni
1 minced, small onion
3 Tbsp. (45 mL) olive oil
3 Tbsp. (45 mL) unbleached white flour
3 cups (750 mL) 1 % milk
2 Tbsp. (30 mL) Dijon mustard
2 1/2 cups (625 mL) shredded low-fat cheddar cheese
1 Tbsp. (15 mL) Worcestershire sauce
1 1/2 tsp. (8 mL) Salt
1/2 tsp. (3 mL) nutmeg
1/4 tsp. (1 mL) white pepper
1/4 cup (60 mL) fresh parsley
1 chopped jumbo veggie dogs, veggie or tofu wieners

Steps:

  • Preheat oven to 350°F/180°C. Cook macaroni according to package directions. Drain well but do not rinse under water.In saucepan, sauté onion in oil over medium heat for 5 minutes or until onion is soft.Add flour, mix well and cook for 1 minute, stirring to prevent burning.Remove from heat for 2 minutes and gradually add 1 cup (250 mL) milk. Return to heat and slowly add remaining milk.Cook for 5-10 minutes, stirring occasionally, until sauce is smooth and thickened. Add 2 cups (500 mL) cheese, (set 1/2 cup / 125 mL aside for topping), mustard, Worcestershire sauce, salt, nutmeg, pepper, parsley and stir until cheese is melted.Add pasta, Yves Veggie Dogs, stir and transfer to lightly oiled 8 x 8 in. (20 x 20 cm) baking dish.Top with remaining cheese and bake 30 minutes or until heated through.

1 pound elbow macaroni
Salt
2 tablespoons extra-virgin olive oil, divided
1 package beef or pork hot dogs, chopped into 1-inch pieces
1 tablespoon butter
1 medium onion, finely chopped
2 tablespoons all- purpose flour
1/2 cup beer, 1/3 of a bottle - whatever you have on hand, chicken broth can be substituted
2 cups milk
Pepper
1 rounded tablespoon spicy mustard
2 rounded tablespoons ketchup
3 cups yellow sharp Cheddar, shredded, divided (Buy preshredded cheese. You will need 1 1/2 sacks of 10-ounce packages.)

Steps:

  • Boil a large pot of water for macaroni. Salt water and under cook macaroni, cook about 7 minutes until just under al dente in doneness.
  • Preheat broiler and set rack 12 inches from heat.
  • While pasta works, heat a large deep nonstick skillet over medium-high heat. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, then add hot dogs and brown on both sides, 4 minutes total. Remove the dogs with a slotted spoon to a paper towel lined plate. Add another tablespoon extra-virgin olive oil, 1 turn of the pan, and the butter. When butter melts, cook onions 4 to 5 minutes, then add flour and cook another minute. Add beer and cook off completely, 1 minute. Whisk in milk and bring to a bubble, then season the sauce with salt and pepper and stir in the mustard and ketchup. Lower heat and add 2 cups of the cheese. Stir to melt, 1 minute. Adjust mustard, ketchup, and salt and pepper, to your taste.
  • Drain pasta well. Combine pasta and hot dogs with sauce and coat evenly then pour into large casserole and top with remaining cheese. Melt and brown cheese under broiler, 2 minutes. Serve.

500ml skimmed milk
25g cornflour
220g macaroni
100g extra mature cheddar , grated (check the label for vegetarian)
25g Grana Padano or vegetarian altenative, grated
8 blocks frozen spinach , defrosted
220g ripe cherry tomatoes , halved

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix 3 tbsp of the milk with the cornflour and warm the remaining milk in a pan. Meanwhile, bring a pan of water to the boil, tip in the macaroni and cook for 6 mins, stirring occasionally.
  • To make the sauce, stir the cornflour mix into the warm milk and keep stirring over a low heat until thick and smooth. Remove from the heat and stir in most of the cheddar (leaving a little to sprinkle over at the end) along with the Grana Padano and pepper to taste.
  • Drain the macaroni well, then stir into the sauce. Squeeze the excess moisture from the spinach by pressing it into a fine sieve. Divide the spinach between four individual ovenproof dishes, followed by the tomatoes. Spoon the macaroni cheese over the veg, then finish with a sprinkle of the remaining cheddar. Bake for 15-20 mins or until the sauce bubbles and browns on top.

  • Preheat oven to 350ºF and get a 12-ct. cupcake baking sheet out. Cook pasta according to the directions on the package, then drain and rinse with cool water.
  • Return the drained pasta to the pot and heat over medium. Add the cheddar shreds, non-dairy milk and vegan butter to the noodles. Stir the mixture until the shreds melt completely. Once creamy, fold in the panko bread crumbs with the salt.
  • Oil the cupcake pan and start assembling the mac 'n' cheese hot dog bites by filling up each insert half way with macaroni. Gently press down on the pasta to flatten it slightly, then place one hot dog piece in the middle of each one. Fill to the top with the rest of the mac, press down gently, again. Then, sprinkle the remaining cheddar shreds on top.
  • Bake for 10-15 minutes, making sure that the shreds are melted on top. Wait 5-10 minutes before serving.
