This ultimate layered nacho recipe is made with two types of gooey cheese. Tortilla chips topped with refried beans, chili, onion, pepper jack and cheddar is a party and game day favorite.

Ingredients

1 can refried beans
1 large bag white corn tortilla chips
1 medium chopped onion
1 can or homemade chili
1 cup shredded pepper Jack cheese
1 cup shredded cheddar cheese
1 cup sour cream
1 cup chopped green onion
1 diced tomato
1 sliced jalapeño

Steps:

Have all ingredients prepared and ready to assemble nachos.
Pre-heat oven to 350 °F.
In a small saucepan on low, heat refried beans until they are loose enough to spoon onto nachos. On a large oven proof platter, spread out tortilla chips and quickly put a teaspoon of hot refried beans on each chip. Working quickly, sprinkle with onions, Jack cheese, and jalapeño slices. Spoon on chili and top that with Cheddar cheese. Repeat this layering process until ingredients are used up. Place chips in the oven at 350 °F until cheese has melted. Remove from oven and place on a trivet or heatproof surface. Top nachos with sour cream, green onions, diced tomato and jalapeño slices and serve hot.

These fish tacos are delicious and light. Best of both worlds! This is a great dish when you're on the go, as it's quick and easy. Enjoy. Add habanero hot sauce and low-fat sour cream to your preference.

1 teaspoon adobo seasoning
4 (3 ounce) fillets mahi mahi
1 dash lime juice
1 medium tomato, diced
½ red onion, chopped
1 cup chopped fresh cilantro
2 scallions, thinly sliced
2 tablespoons lime juice
cooking spray
8 (6 inch) corn tortillas
1 avocado, sliced

Steps:

Season mahi mahi lightly with adobo seasoning and 1 dash of lime juice.
Mix tomato, red onion, cilantro, scallions, and 2 tablespoons lime juice together in a bowl for the pico de gallo.
Lightly spray a nonstick skillet with cooking spray; turn stove to medium-high heat. Cook mahi mahi until golden brown, about 2 minutes per side. Reduce heat to low; cook, covered, until fish flakes easily with a fork, about 10 minutes.
Place corn tortillas between damp paper towels; microwave until heated through, 30 seconds to 1 minute.
Place 1/2 of each mahi mahi fillet on a tortilla. Top each with 2 slices avocado and 1 scoop of pico de gallo.

This is my families favorite burrito filling. I cook this all day in the crockpot, make beans and rice and buy large burrito size flour tortillas and stuff them. I like mine with chopped onion, cilantro sour cream and avocado.

Ingredients

3 lbs boneless pork shoulder, picnic shoulder (for Carnitas)
1 teaspoon black pepper
1 teaspoon white pepper
1 teaspoon garlic powder
1 teaspoon instant minced garlic
1 teaspoon onion powder
1 teaspoon dried onion flakes
1/2 teaspoon salt
1/2 teaspoon dried garlic flakes
1/2 teaspoon onion salt
1/4 teaspoon garlic salt
1/2 teaspoon dried oregano
1/2 teaspoon dried cilantro
1/4 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 cup water
2 tablespoons beef bouillon granules

Steps:

Mix all seasonings together and rub pork generously. Place in a crockpot with the 1 cup of water and beef boulion mixed.
Cook on low 8-10 hours. Shred when ready and fill those tortillas!
Serve with Beans anf Rice -- .
