Time 40m

Yield 4 servings

Number Of Ingredients 10

4 boneless mahi-mahi fillets, about 6 ounces each, or any similar fish fillets like halibut or swordfish
Salt and freshly ground pepper to taste
4 teaspoons chopped fresh thyme leaves or 1 tablespoon dried
4 tablespoons olive oil
4 tablespoons finely chopped shallots
1/3 cup drained capers
4 ripe plum tomatoes, cored and cut into small cubes
1 teaspoon finely chopped garlic
1 tablespoon red wine vinegar
4 tablespoons finely chopped basil or parsley

Steps:

  • Preheat oven broiler to high.
  • Place the mahi-mahi fillets in an ovenproof flat dish. Sprinkle with salt and pepper and the thyme and 2 tablespoons of the olive oil. Set aside and cover with plastic wrap. Let stand in a cool place for 15 minutes.
  • Meanwhile, heat the remaining olive oil in a saucepan over medium-high heat. Add the shallots and the capers. Cook until wilted. Add the tomatoes, salt, pepper and the garlic. Cook, stirring, for 3 minutes. Add the vinegar, cook briefly and blend well. Remove from the heat and keep warm.
  • Place the mahi-mahi fillets under the broiler about 4 inches from the source of heat. Cook about 3 minutes. Carefully flip the fillets and cook for 3 minutes more or until the fish is cooked through. Do not overcook.
  • Transfer the fish to a warm serving plate and spoon equal portions of the tomato sauce over them. Sprinkle with basil and serve immediately.

MAHI-MAHI IN TOMATO OLIVE SAUCE

Mahi-Mahi in Tomato Olive Sauce image

The Sicilian-style tomato sauce has tons of Mediterranean flavor, thanks to the orange peel, olives, and oregano.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 9

2 tablespoons extra virgin olive oil
1 cup chopped onion
1 cup dry white wine
1 teaspoon anchovy paste
2 (14 1/2 ounce) cans diced tomatoes with garlic, basil, and oregano in juice
4 (6 ounce) mahi mahi fillets
1/2 cup large green olives, quartered, pitted
3 teaspoons chopped fresh oregano, divided
1 teaspoon packed finely grated orange peel

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add onion; sauté until translucent and beginning to brown, about 4 minutes. Add wine and anchovy paste. Boil until reduced to 3/4 cup, about 3 minutes. Add tomatoes with juice; bring to boil.
  • Sprinkle fish with salt and pepper. Add fish to skillet atop tomato mixture. Reduce heat to low, cover, and simmer until fish is cooked through, about 9 minutes. Using slotted metal spatula, transfer fish to plate and tent with foil to keep warm. Mix olives, 2 teaspoons oregano, and orange peel into sauce in skillet. Increase heat to high and boil until sauce is reduced and thickened, about 6 minutes. Season to taste with salt and pepper. Place 1 fish fillet on each of 4 plates. Pour sauce over and around fish, sprinkle with remaining 1 teaspoon oregano, and serve with warm toasted bread.

GRILLED MAHI MAHI WITH CAPER, TOMATO, BEARNAISE SAUCE

Grilled Mahi Mahi With Caper, Tomato, Bearnaise Sauce image

The first time I made this I used packaged bearnaise sauce, It was quick and good however it doesn't compare to real bearnaise sauce with fresh tarragon. Only warm the tomatoes do not cook them. For a real taste treat combo serve this with barbecued bacon wrapped asparagus.

  • Spread a tablespoon or so of the marinade to the bottom of an (approximately 9 X 9 X 3 -inch) baking dish. Then place about half of the tomato slices in a single layer on top and drizzle a bit more of the marinade over them.
  • Dredge the fish fillets into the marinade, coating them well and then place them on top of the marinade-drizzled tomato slices. Evenly distribute the remaining marinade over the fish fillets, followed by the remaining tomato slices -- they should completely coat the fish.
