Sesame Crusted Trout With Ginger Scallion Salad image

Sounds fancy but it's very easy. This is a nice dinner for two people. Have your fish guy do the deboning of the trout. My husband found this recipe in one of his fishing magazines but it's originally from Lucia's Restaurant in Minneapolis, Minn.

20 ounces fresh trout, deboned
4 tablespoons sesame seeds
1/2 cup lemon juice
salt, to taste
pepper, to taste
2 tablespoons butter
2 tablespoons sesame oil
1/4 cup very thinly julienned fresh ginger, about 1-inch long
1/2 cup very thinly julienned scallion, about 1-inch long
1 tablespoon soy sauce
1 tablespoon sesame oil
1 garlic clove, finely mashed
1 pinch sugar
1 teaspoon red pepper flakes
1 tablespoon orange juice
1 tablespoon orange zest
1 tablespoon of fresh mint, roughly chopped
1 tablespoon cilantro, roughly chopped

Steps:

  • Trout: Rinse each trout under cold water and pat dry. Dip each into the lemon juice and then dredge the skinless side in the sesame seeds to coat well. In a heavy-bottom, large saute pan, heat the butter and oil until the foam subsides. Place the trout skin-side-up in the pan. Season with salt and pepper. Lower the heat to medium and cook about 5-8 minutes; flip, and cook another 5-8 minutes, or until the flesh is pinkish white and flaky.
  • Ginger Scallion Salad: Combine all ingredients and taste for seasoning, adjusting if necessary. Pile a little of the salad on top of each trout.

1 1/2 pounds skinless center-cut cod fillet, bones removed, cut into 4 pieces
Kosher salt and freshly ground pepper
1 cup sliced blanched almonds
3 tablespoons sesame seeds
1/4 cup extra-virgin olive oil
1 leek (white and light green parts), halved lengthwise and thinly sliced
1/2 cup dry white wine
1/2 large head napa cabbage, torn into 2-inch pieces
2 tablespoons chopped jarred pepperoncini, plus 1 tablespoon brine
1 cup cilantro (leaves and tender stems), chopped
1/3 cup pitted Castelvetrano olives, chopped

Steps:

  • Preheat the broiler. Season the cod with salt and pepper. Heat a large skillet over medium-high heat. Add the almonds and sesame seeds and cook, tossing, until toasted, 3 to 4 minutes. Transfer to a blender and puree until finely ground; set the blender aside.
  • Heat 1 tablespoon olive oil in the same skillet over medium-high heat. Add the leek and cook, stirring, until just beginning to brown, 3 to 4 minutes. Add the wine and cook until slightly reduced, about 3 minutes. Add 2 cups water and bring to a simmer. Add the cod, reduce the heat to low, cover and cook until just cooked through, 7 to 9 minutes. Remove the cod to a plate.
  • Transfer the leek and 3/4 cup of the cooking liquid to the almond mixture in the blender and blend on high speed until smooth and thick. Add more cooking liquid as needed to loosen.
  • Meanwhile, arrange the cabbage on a baking sheet and broil, tossing occasionally, until tender and browned in spots, about 8 minutes. Transfer to a bowl and toss with 2 tablespoons olive oil and the pepperoncini brine. Season with salt and pepper.
  • Toss the cilantro, olives, pepperoncini and remaining 1 tablespoon olive oil in a small bowl. Divide the cod among plates. Top with the almond sauce and olive mixture. Serve with the cabbage.

4 salmon steaks, skin off, 6 to 7 ounces each
2 tablespoons canola oil
2 tablespoons white sesame seeds
2 tablespoons black sesame seeds
Salt and freshly ground black pepper
2 large shallots, peeled and finely chopped (about 1/4 cup)
1 tablespooon grated ginger
1 teaspoon hot chili oil
1/4 cup dry sherry
1/4 cup fish or clam broth
2 tablespoons soy sauce

Steps:

  • Preheat the oven to 350 degrees.
  • Brush the salmon steaks lightly with some of the oil. Combine the two types of sesame seeds in a flat dish or pan and dredge the flesh side (not the skin side) in the sesame seeds and set aside. Combine the shallots, ginger, chili oil, sherry, broth and soy sauce in an oven-proof dish.
  • Season the steaks with salt and pepper.
  • Heat a saute pan over medium heat with the remaining canola oil and sear the salmon steaks on both sides to a golden brown, taking care not to burn the sesame seeds. Place the seared fish, sesame seeds up, on the seasoned shallots in the baking dish and put the salmon in the oven. Roast for 7 to 8 minutes for medium rare, or until the fish is cooked to your preference.
  • Serve the roast salmon immediately with additional soy sauce, pickled ginger and chili sauce on the side.

2 tablespoons avocado oil, or olive oil
3 tablespoons ice water

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Combine the almond flour, salt, pepper, and sesame seeds in a large bowl.
  • Add the avocado oil and mix thoroughly with a fork.
  • Add the ice water, 1 tablespoon at a time, and mix thoroughly, until small clumps form and the dough holds together when squeezed.
  • Form the dough into a round, flattening the top and bottom as evenly as possible.
  • Place the dough on a sheet of parchment paper and add another piece of parchment on top. Roll out the dough as evenly as possible, to between ¼- and ⅛-inch (6- and 3-mm) thick.
  • Remove the top layer of parchment paper and place on a baking sheet. You may need to press the edges of the dough to form an even rectangle.
  • Using a cookie cutter or pizza cutter, slice the dough to desired size. If using a cookie cutter, re-roll the excess dough and cut out more crackers.
  • If desired, use the blunt end of a skewer to poke holes in each of the crackers.
  • Carefully place the crackers on the baking sheet. If the dough is too warm, the crackers will break as you attempt to transfer them. Chill in the freezer for 10 minutes before proceeding if this happens.
  • Bake for 15-20 minutes, flipping halfway, until golden brown.
  • Let the crackers cool completely and serve as desired. Store up to 1 week at room temperature in an airtight container.

1 cup olive oil
7 tablespoons white vinegar

3 tablespoons light brown sugar
3 cloves garlic, minced
2 teaspoons crushed red pepper, or to taste
4 tablespoons sesame seeds
1 (16 ounce) package mixed salad greens
1 ¼ cups halved cherry tomatoes
¾ medium red onion, thinly sliced
3 mandarin oranges, peeled and segmented

Steps:

  • Heat oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the heat and set aside to cool.

4 (4 ounce) skinless, boneless chicken breast halves
¼ cup soy sauce
2 tablespoons brown sugar
1 teaspoon minced fresh garlic
½ teaspoon grated fresh ginger
1 cup mayonnaise
1 tablespoon sesame oil
1 tablespoon white sugar
½ teaspoon grated fresh ginger
1 tablespoon sesame seeds
1 medium head napa cabbage, thinly sliced
¼ medium head green cabbage, thinly sliced
1 medium carrot, shredded
½ cup crispy fried rice noodles

Steps:

  • Place chicken in a large glass or ceramic bowl. Whisk soy sauce, brown sugar, garlic, and ginger for marinade together in a small bowl; pour over chicken and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator, 8 hours to overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.

Use any firm white fillets you like here, from sea bass to red snapper or grouper. I am partial to sea bass because of its buttery, rich taste...but that is a definite splurge.

1 cup sesame seeds
salt and black pepper, to taste
3 tablespoons canola oil (can use corn oil, needs to be a "neutral" oil)
24 ounces sea bass fillets (or other white fish, skinless)
2 tablespoons butter
1 tablespoon fresh ginger, peeled and minced
2 tablespoons soy sauce

Steps:

  • Preheat the oven to 200 degrees F. Preheat a large, heavy skillet over medium heat while you prepare the sesame seeds. Put them on a plate and season them with salt and pepper; add the oil to the skillet. When the oil shimmers, begin to turn the fillets in the seeds, encouraging them to coat the fillets as fully as possible, and add the fillets to the skillet.
  • Brown the fish on one side for a couple of minutes, then turn and brown on the other side, another minute or two. Remove the skillet from the heat and transfer the fish to a plate (don't worry if it's done); put the plate of fish in the oven to keep warm.
  • When the skillet has cooled slightly, return it to the stove over medium heat. Add the butter and when it melts, add the ginger. About 30 seconds later, add the soy sauce and 1/4 cup water and stir to blend. return the fillets to the skillet, along with any of their accumulated juices.
  • Turn the heat to medium and cook the fillets for a total of about 4 minutes, turning 3 or 4 times. (If at any time the pan seems to dry out entirely, add 2 or 3 tablespoons water.) At this point, the fish should be done (a thin-bladed knife inserted into its thickest point will meet little resistance.) Serve with the pan juices spooned over the fish.

2 bok choy, quartered lengthwise
4 scallions, shredded
1 tablespoon dark soy sauce
basmati or long-grain rice, to serve

Steps:

  • Mix the sesame seeds and red pepper flakes on a plate, then press the salmon fillets into the mixture to coat.
  • Heat half the oil in a nonstick skillet over medium heat, add the salmon, and cook for 3-4 minutes on each side, until cooked through. Remove from the skillet and keep warm.

1 1/2 lbs white fish fillets, cut into nuggets
1 tablespoon light soy sauce
1 tablespoon sesame oil
1 cup flour, for dredging
2 egg whites, beaten
4 tablespoons white sesame seeds (not toasted... raw)
4 tablespoons black sesame seeds (not toasted... raw)
oil, for deep frying

Steps:

  • Marinate fish in the soy and sesame oil for 15 minutes.
  • Drain and dust the fish in flour.
  • Dip into the egg and then roll in the sesame seeds.
  • Deep fry the pieces in 360 degree oil for 4 or 5 minutes. No longer -- the sesame seeds scorch easily and will be bitter.
  • Make a simple dipping sauce with some soy sauce diluted with about a 50/50 ratio of water and some fresh grated ginger. Delicious!
  • You may need to cook this in two batches so that the temperature of the oil doesn't plummet. The oil needs to maintain a constant 360 temperature if possible.
