1 recipe pastry for a 9 inch double crust pie
¼ cup raspberry jam
¼ cup butter, softened
¼ cup white sugar
1 egg
½ cup all-purpose flour
¼ teaspoon baking powder
¼ teaspoon almond extract
2 teaspoons confectioners' sugar for dusting

Steps:

  • Move oven rack to bottom position and preheat oven to 375 degrees F (190 degrees C). Lightly grease 12 2-inch tart tins.
  • Roll out pastry and cut 12 3-inch circles. Fit one pastry circle into each tart tin. Spread one teaspoon of raspberry jam into the bottom of each tart shell.
  • In a medium mixing bowl, cream together softened butter or margarine and white sugar until light and fluffy. Mix in egg. Add flour, baking powder, and almond extract and mix until all ingredients are thoroughly combined. Pour 1 tablespoon of batter into each tart shell.
  • Bake in preheated oven for 20 minutes, until risen and firm. Dust tarts with confectioners' sugar.

These traditional English tarts are made from puff pastry filled with almond-flavoured curd cheese, and are said to date from the time of King Henry VIII. They are quick as anything to prepare. Equipment: You will need a 12-hole non-stick patty tin and a 9cm/3½in biscuit cutter.

375g/13oz puff pastry
50g/1¾oz butter, softened
50g/1¾oz caster sugar
1 free-range egg, beaten
1 tbsp plain flour
50g/1¾oz ground almonds
½ tsp grated nutmeg or ground mace
2 lemons, zest only
100g/3½oz curd cheese

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4.
  • Roll the pastry out slightly thinner than a one pound coin, then stamp out twelve 9cm/3½in rounds and use to line a 12-hole non-stick patty tin. Place the tray of pastry discs in the fridge while you make the filling.
  • Cream together the butter and sugar in a bowl until pale and fluffy. Beat in the egg, flour, ground almonds, nutmeg (or ground mace) and lemon zest. Stir in the curd cheese, being careful not to overwork the mixture as it can split.
  • Spoon the mixture into the tart cases and bake for 25 minutes, or until risen and lightly browned on top. Transfer to a wire rack and leave to cool completely before serving.

Steps:

  • Preheat oven to 180*C/350*F/Gas mark 4. and line a tray with 12 small shallow cases
  • Add the plain flour into a large bowl and add the 100g of butter. Mix together using the rubbing method/ using fingertips until it had a bread crumb consistency.
  • Use a butter knife and slowly add in the water until a dough has formed. Then roll out onto a surface, preferably with plain flour sprinkled onto it, to the thickness of approx. a £1 coin
  • Cut into circles so you can line it in the cake case and it will just start to hang over. Do this until you have used up all of the pastry
  • Add 1/2 tsp of your choice of filling( e.g jam) into every case with pastry and then leave to the side
  • Add all filling ingredients and beat into a bowl together. Then add 1tsp of mixture into every tart and put into the oven for 20 mins or until golden brown.

These are the forerunner of modern baked cheesecakes, and this recipe originates from one of the first documented versions of this recipe. Curd cheese was very popular as an ingredient for desserts many hundreds of years ago, and these delightful little tarts have a Royal lineage; the story is that whilst Henry VIII was strolling in the gardens of Hampton Court Palace, he came across a group of ladies in waiting (to his queen, Catherine of Aragon), one of whom was Anne Boleyn - whom subsequently became his second wife; they offered him some of these tarts and he enjoyed them so much, that he named them after the Maids of Honour. I always make these for afternoon tea - they are delightfully light and fragranced with delicate orange flower water or rose water. Use any dried fruits that you have available - I find a mixture of seedless raisins and chopped candied peel works very well.

230 g pre-made puff pastry
110 g curd cheese or 110 g cottage cheese, which has been sieved
50 g soft brown sugar
2 large eggs, beaten
2 tablespoons single cream
1 tablespoon orange flower water or 1 tablespoon rose water
75 g ground almonds
50 g mixed dried fruit, such as seedless raisins and
candied peel, chopped
icing sugar, for sifting

Steps:

  • Pre-heat oven to 220C/450F/gas7 and lightly grease a 12 hole bun or muffin tin.
  • Roll out the pastry and stamp out 12 fluted rounds - try to make sure that they are at least 1/4" bigger than needed, as the puff pastry shrinks during baking.
  • Line the bun tray with the pastry rounds and chill them whilst making the filling.
  • Place the curd cheese or cottage cheese into a large mixing bowl and add the beaten eggs, cream, sugar, orange flower water or rose water and almonds.
  • Mix well and then add the mixed dried fruit, mixing again well.
  • Spoon the filling into the pastry cases and bake the tarts for 15-20 minutes or until well-risen, golden brown & firm to the touch.
  • Allow them to cool a little and then carefully remove them and place them on a wire rack to cool completely.
  • Arrange them on an attractive cake platter and sprinkle with icing sugar to serve.

½ cup white sugar
¼ teaspoon salt
2 tablespoons milk
1 cup ground almonds

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Generously grease 12 2-inch tart tins.
  • Roll out pastry. Cut 12 3-inch circles. Reserve pastry scraps. Fit pastry circles into greased tart tins. Spread 1 teaspoon of jam into bottom of each tart shell.
  • In a small mixing bowl, beat together egg, sugar, and salt until light in color. Mix in milk and almonds. Spoon an equal amount of filling into each tart shell. Cut pastry scraps into small strips and form a cross on top of each tart.
  • Bake in preheated oven for 15 minutes, until tops are golden brown.

15 unbaked tart shells
1 egg, well beaten
1 cup sugar
2 tablespoons butter
1/4 teaspoon vanilla
1 cup walnuts, chopped
jam (optional) or jelly (optional)

Steps:

  • Prepare pastry and line the tart shells.
  • Mix the beaten egg, sugar and butter together until creamy.
  • Add vanilla and walnuts.
  • If desired, a little jam or jelly may be placed in each tart shell before adding the nut mixture.
  • Place a spoonful of nut mixture into each tart shell.
  • Bake at 350 degrees Fahrenheit until filling is delicately browned, approximately 10 to 15 minutes.
