AMISH ONION CAKE
This rich, moist bread with an onion-poppy seed topping is a wonderful break from your everyday bread routine. You can serve it with any meat, and it's a nice accompaniment to soup or salad. I've made it many times and have often been asked to share the recipe. -Mitzi Sentiff, Annapolis, Maryland

- In a large skillet, cook onions in 1/2 cup butter over low heat for 10 minutes. Stir in the poppy seeds, salt, paprika and pepper; cook until onions are golden brown, stirring occasionally. Remove from the heat; set aside. , In a large bowl, combine the flour, cornstarch, baking powder and sugars. Cut in 1-1/4 cups butter until mixture resembles coarse crumbs. Melt the remaining butter. In a small bowl, whisk the eggs, milk, sour cream and melted butter. Make a well in dry ingredients; stir in egg mixture just until moistened. , Spread into a greased 10-in. cast-iron skillet or springform pan. Spoon onion mixture over the batter. Place pan on a baking sheet. Bake at 350° until a toothpick inserted in the center comes out clean, 35-40 minutes. Serve warm.

Steps:
- Mix together the dry ingredients, then add the milk.
- This should make a fairly thick batter.
- Add the onions and mix thoroughly.
- Drop the batter by spoonsful into hot oil about an inch deep.
- When golden on one side (about 3-4 minutes), turn them and flatten them into patties.
- Fry until golden on the second side (about 3-4 minutes).
- Drain on paper towels.

- Cook the onions gently in 1/2 cup (1 stick) of the butter for about 10 minutes. Stir in the poppy seeds, paprika, salt and pepper and continue to cook until the onions are golden brown. Set aside.
- Mix together the flour and cornstarch, granulated sugar and baking powder in a bowl. Add 1-1/4 cups (2-1/2 sticks) of the remaining butter and rub in to make soft crumbs (this can be done in a food processor). Add 3 of the eggs, one at a time, mixing in well, then add the milk to form a sticky dough.
- Beat the last 2 eggs with the remaining 1/4 cup (1/2 stick) butter. Whip in the sour cream and the brown sugar.
- Grease a 10-inch round cake pan. Spread the dough in the pan. Cover with the onion mixture and the sour cream mixture. Bake in a preheated oven at 350° F for 20-25 minutes. Cool slightly, and serve in wedges

- Preheat oven to 350˚F. Over low heat sauté onions in 1/2 cup butter for 10 minutes. Add in poppy seeds, salt, paprika, and pepper and stir to combine. Remove pan from heat and set aside.
- In a large bowl mix together flour, cornstarch, baking powder, and sugar. Cut in 1 1/4 cups butter to form a loose and crumbly dough.
- Melt the rest of the butter. In a separate bowl whisk together eggs, milk, sour cream, and melted butter. Make a well in the dry ingredients and pour the wet mixture into the dry. Stir only until just combined.
- Pour batter into a greased 10” springform pan. Top with caramelized onions. Bake for 35-45 minutes or until knife inserted in center comes out clean. Allow to cool for at least 5 minutes before releasing from the pan.
