Holness family recipe for porridge made from cornmeal. This recipe makes enough porridge for one hungry adult or 2 hungry 6-year-olds.

1 cup water
⅓ cup cornmeal
¼ cup whole milk
¼ cup coconut milk
3 tablespoons white sugar
½ teaspoon vanilla extract
½ teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon
2 tablespoons raisins

Steps:

  • Combine water, cornmeal, whole milk, coconut milk, white sugar, vanilla extract, salt, nutmeg, and cinnamon in a blender; blend until smooth.
  • Bring the mixture to a boil in a saucepan; whisk occasionally until beginning to thicken, about 5 minutes. Reduce heat when slow bubbles form. Stir frequently until as thick as you like, about 5 minutes. Add raisins.
  • Remove from heat, cover, and let cool before serving, about 5 minutes.

This sweet Burmese porridge is usually served after the main dish on a cold night. It is common knowledge in Burma that coconut milk helps you sleep. That is why my hubby and many others only eat this dish in small portions.

½ cup jasmine rice
5 ½ cups water
5 fluid ounces coconut milk
½ cup white sugar
½ teaspoon salt

Steps:

  • Place jasmine rice in a large container and cover with several inches of cool water; let soak, about 30 minutes. Drain.
  • Bring jasmine rice and 5 1/2 cups water to a boil in a large pot; cook, stirring occasionally, until rice breaks down and grains disappear, about 20 minutes.
  • Stir coconut milk and sugar into the pot. Bring to a boil; reduce heat and simmer until flavors combine, about 15 minutes. Season with salt.

2 medium sweet potatoes, peeled and shredded by food processor (about 4 cups)
2 teaspoons garlic (or more)
1 cup yellow onion, chopped in a food processor
2 tablespoons flour
1 teaspoon sea salt
1 teaspoon white pepper
1 teaspoon dried basil
1 teaspoon oregano
3 large eggs, lightly beaten
3 tablespoons coconut milk

Steps:

  • Microwave the sweet potatoes for about 1-2 minutes before mixing with everything else.
  • Place everything in a large bowl and mix until egg coats the sweet potatoes.
  • Heat some canola oil (refined for high heat) in a large skillet or griddle. Working in batches, and using more oil as needed, use 1/2 cups sweet potato batter to make each pancake.
  • Cook, covered, for 5 minutes on each side, or until lightly browned. Remove to a platter and serve immediately.
  • Can be dumped on the griddle and cooked like hash browns.

3 cups coconut milk (4 coconuts)
1/4 tablespoon water
10 pieces cardamom
sugar (optional)

Steps:

  • Boil water in a pot
  • Mix maize flour with water to make a thin paste
  • Add the maize flour paste in the boiling water and stir until it boils
  • Prepare coconut milk
  • Pound the cardamom and add to the boiling porridge
  • Add the thin coconut milk, stir
  • Add sugar to taste, stir
  • Add the thick coconut milk,stir
  • Cook for 5 minutes then remove from fire
  • Serve warm
  • Preparation of coconut milk:.
  • Remove the white flesh from the coconut shell
  • Blend the flesh to small pieces (rice grain size)
  • Put the blended pieces in a clean towel and fold the towel
  • Add water in the folding and squeeze the towel to obtain thick coconut milk
  • Add water again and squeeze thin coconut milk
  • Ready for use.
