CINNAMON BAKED FRENCH TOAST

- For the French toast: Grease the baking pan with butter. Tear the bread into chunks, or cut into cubes, and evenly distribute in the pan. Crack the eggs in a big bowl. Whisk together the eggs, milk, cream, granulated sugar, brown sugar and vanilla. Pour evenly over the bread. Cover the pan tightly and store in the fridge until needed (overnight preferably).
- For the topping: Mix the flour, brown sugar, cinnamon, salt and some nutmeg in a separate bowl. Stir together using a fork. Add the butter and with a pastry cutter, and mix it all together until the mixture resembles fine pebbles. Store in a re-sealable plastic bag in the fridge.
- When you're ready to bake the casserole, preheat the oven to 350 degrees F. Remove the casserole from the fridge and sprinkle the topping over the top. Bake for 45 minutes for a softer, more bread pudding texture or for 1 hour or more for a firmer, crisper texture.
- Scoop out individual portions. Top with butter and drizzle with warm pancake syrup and sprinkle with blueberries.
MAKE-AHEAD FRENCH TOAST BAKE

- Spread bread cubes evenly in a greased 9x13-inch pan.
- Mix eggs, milk, sugar, cream, and vanilla together in a bowl. Pour evenly over the bread and and refrigerate, 8 hours to overnight.
- Mix flour, brown sugar, cinnamon, and salt for topping together in a medium bowl. Add butter and cut in with a pastry blender until mixture is crumbly. Refrigerate, 8 hours to overnight.
- When ready to bake, preheat the oven to 350 degrees F (175 degrees C).
- Sprinkle topping over bread-egg mixture and bake in the preheated oven until golden brown and to desired consistency, 45 minutes to 1 hour.

We have made this French Toast for Christmas brunch for twenty four years! It originally came from the East Coast. If you like your French toast firmer, then cut back on the milk.

- In a large bowl, whisk together eggs, milk, cream and vanilla. Dip bread slices into egg mixture and place in a lightly greased 9x13 inch baking pan. Refrigerate overnight.

- In large, shallow dish, combine egg, cream, brown sugar, orange juice, and spices.
- Place bread in mixture; leave 5 minutes. Turn bread over; leave 5-10 minutes until all liquid is absorbed.

- Cut baguette into 1-in. slices. Cut each slice in half. Arrange bread in a greased 11x7-in. baking dish. In a large bowl, whisk eggs, egg yolks, milk, 1/4 cup brown sugar, vanilla, cinnamon and nutmeg; pour over bread. Refrigerate, covered, 8 hours or overnight., Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. In a small bowl, combine pecans, melted butter, salt and remaining sugar; spoon over bread mixture., Bake, uncovered, 25 minutes. Sprinkle with blueberries. EASY FRENCH TOAST CASSEROLE (MAKE AHEAD)
Great for Christmas morning as you make it the night before and pop it in the oven for about an hour. It's really yummy and SO EASY! There are a few other french toast casserole dishes here, but none quite like this one. My friend Kathy made this for a ladies brunch/book club and everyone loved it. I had to have the recipe!

- The night before: Grease a 9x13 baking dish. Break up half the bread by tearing or cutting into 1 inch or so cubes.
- Scatter cubed cream cheese over the top.
- Top with the remaining bread, also broken or cut into cubes.
- Sprinkle with the cinnamon and the sugar.
- Pour maple syrup over the top (the real stuff always tastes better!).
- Pour the beaten eggs over the top next.
- Cover with foil and place in the fridge overnight.
- The next day: Preheat oven to 350°F
- Bake uncovered 45-60 minutes, depending on your oven and how mushy you like your french toast.
- Sprinkle with powdered sugar before serving.

- Spray a 2 quart casserole or 9" x 13" baking dish2 with non-stick spray. Place the bread cubes in the prepared baking dish.

Baked casserole freezes well, up to 3 months. Thaw in the refrigerator overnight, and reheat portions as needed. You can also freeze unbaked casserole unbaked, up to 3 months-- freeze after step 3, then thaw in refrigerator overnight before continuing with step 4.
