1-1/2 cups shredded part-skim mozzarella cheese
2 tablespoons butter
1/2 pound sliced fresh mushrooms
1 medium sweet red pepper, chopped
6 green onions, chopped
1-3/4 cups cubed fully cooked ham
8 large eggs
1-3/4 cups 2% milk
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Sprinkle cheeses into a greased 13x9-in. baking dish. In a large skillet, heat butter over medium-high heat; saute mushrooms, red pepper and green onions until tender. Stir in ham; spoon over cheese. , In a large bowl, whisk together eggs, milk, flour, salt and pepper; pour over ham mixture. Refrigerate, covered, overnight. , Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, uncovered, until a knife inserted in the center comes out clean, 35-45 minutes. Let stand 5 minutes before serving.

1 cup cubed fully cooked ham
1 can (4 ounces) chopped green chiles
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded cheddar cheese
6 large eggs
1 can (12 ounces) evaporated milk
1/4 teaspoon pepper
Salsa, optional

Steps:

  • In a greased 8-in. square baking dish, layer the hash browns, ham, chiles and cheeses. In a large bowl, whisk the eggs, milk and pepper; pour over the casserole. 1-1/2 cups small fresh broccoli florets
1 cup chopped OSCAR MAYER CARVING BOARD Slow Cooked Ham
1/3 cup chopped red onions
8 eggs
3 cups milk
1/4 cup butter or margarine, melted

Steps:

  • Heat oven to 350°F.

I love this dish because it allows you to socialize with your guests in the morning rather than spending that time cooking. I've served this on Christmas morning, as a brunch item, and I've even taken it into work for potlucks. If you forget or don't have time the night before, that's o.k. you can prepare this and cook immediately also.

12 slices bread
cooking spray
2 cups ham, fully cooked and diced
2 cups shredded cheddar cheese
1 bunch green onion, with tops, diced
2 cups milk
1 teaspoon dry mustard
6 eggs
1/2 teaspoon red pepper sauce (optional)
paprika (optional)

Steps:

  • Trim crusts from bread.
  • Spray a rectangular 13 x 9 x 2 inch baking dish with cooking spray. Arrange 6 slices of bread in the dish.
  • Layer ham, cheese and onions on top of the bread.
  • Cut remaining bread slices diagonally into halves. Place along the outer rim of the dish, points facing inward.
  • Beat milk, mustard, pepper sauce and eggs until smooth; pour evenly over bread. Sprinkle with paprika.

¼ cup softened butter
6 croissants, split
12 slices smoked ham
6 slices Colby-Jack cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
  • Pour the beaten eggs into the prepared baking dish. Bake in the preheated oven until they set and are no longer runny, 8 to 10 minutes. Remove, allow to cool, and cut into 6 portions.
  • Butter the cut sides of the croissants and place one portion of the cooked egg onto each croissant bottom. Top each sandwich with two slices of ham and a slice of Colby-Jack cheese.
