These classic Stuffed Shells are made with cooked pasta shells, a cheesy ricotta filling, a few Italian herbs, and plenty of marinara sauce! This cheesy pasta dish is pure comfort food and couldn't be simpler to make.

Fine sea salt and freshly cracked pepper
25-26 uncooked jumbo pasta shells
1 large egg, (lightly beaten)
1 container (15 ounces) whole milk ricotta cheese
1/4 cup fresh basil, (chopped (OR use 1 teaspoon dried basil))
1/2 teaspoon EACH dried oregano, dried thyme, dried parsley
1/2 teaspoon minced garlic
3 cups mozzarella cheese, (freshly grated, divided)
1 cup Parmesan cheese (freshly grated)
1 and 1/2 jars (~3 cups) good quality jarred marinara sauce (OR about 3 cups homemade marinara sauce)
Optional: fresh basil or parsley for topping shells

Steps:

  • Bring a large pot of water to a boil. Add a generous amount of salt and then add in the pasta shells. I usually cook a few extra in case some fall apart. Cook for half of the time indicated on the package plus one minute. (About 5-6 minutes depending on the package you use). Drain the shells and rinse under cold water to stop the cooking and allow them to be easily separated. Drain off any water and separate onto a sheet of parchment paper on the counter.
  • Preheat oven to 350 degrees F. In a large mixing bowl, whisk the egg with a fork. Add in the ricotta cheese and mix until completely combined. Add in the basil, oregano, thyme, parsley, minced garlic, and salt + pepper to taste. (I use about 1 teaspoon salt and 1/2 teaspoon pepper.) Stir gently.
  • Finely grate the mozzarella and Parmesan cheese. Add two cups of the mozzarella and all of the Parmesan cheese into the cheese mixture. Gently stir to completely combine.
  • Transfer this cheese mixture to a large (gallon-sized) zipper-top plastic bag. Snip off 1-inch of the corner of the bag and "pipe" the cheese mixture into each of the shells. Each shell should get about 2 tablespoons of the cheese mixture (which should fill 25-26 shells).
  • Spread half of the marinara sauce evenly across the bottom of a 3-quart (9x13-inch) baking dish.
  • Place stuffed shells in the baking dish with the open side facing up. Pack the shells in close together.
  • Cover shells evenly with the remaining 2 and 1/2 cups marinara sauce. Aim to completely cover all of the shells to avoid hard parts of the shells. Cover with foil and bake for 30 minutes.
  • Remove foil and add the remaining 1 cup of mozzarella evenly over the shells. Return to the oven for 5-7 more minutes or until cheese is melted. Serve warm with freshly chopped basil if desired. I also like to add a little more cracked pepper to the top!

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Wrap a yardstick or ruler with aluminum foil and suspend it between two 28-ounce cans.
  • Sprinkle 1/2 cup of the shredded Cheddar on the baking sheet to form a circle 6 inches in diameter. Repeat with another 1/2 cup of cheese, making 2 circles. Bake the first batch until the cheese melts and turns light brown, 6 to 8 minutes.
  • Using a spatula, transfer the cheese circles to the suspended yardstick and drape them over to form taco shells. Let them hang until firm, then carefully remove. Repeat with the remaining cheese.
  • Fill the shells with your favorite taco fillings.

6 ounces American cheese, cubed (about 1 cup)
4 ounces cream cheese, cut into small pieces
3 cups freshly grated sharp Cheddar (about 8 ounces)
1 teaspoon dry mustard
1/2 teaspoon sweet paprika
Kosher salt and freshly ground black pepper
6 ounces large pasta shells
1 cup small pasta shells
1/2 cup cheese crackers, finely crushed

Steps:

  • Bring the half-and-half to a simmer in a large saucepan over medium heat. Whisk in the American cheese and cream cheese until smooth. Remove from the heat and whisk in the Cheddar, mustard, paprika, 1 teaspoon salt and several grinds of black pepper. Put 1/2 cup sauce each into 2 medium bowls. Pour the remaining sauce into a 13-by-9-inch baking dish, spreading it into an even layer.
  • Cook the large shells according to the package directions. Transfer with a slotted spoon to one of the medium bowls and toss to coat with the sauce. Cook the small shells in the same pot of water according to the package directions. Drain well, then transfer to the remaining medium bowl and toss to coat with the sauce.
  • Preheat the oven to 425 degrees F. Spoon the small shells into the big shells and line them up neatly in the baking dish, nestling them in the cheese sauce. Sprinkle with the cheese crackers. Bake until hot through, bubbling and the crackers are starting to brown, about 15 minutes. Let cool 5 minutes before serving.

2 ounces 1/3-less-fat cream cheese, softened
8 ounces Cabot 50% Reduced Fat Cheddar, grated & divided (about 2 cups)
1 large egg, lightly beaten
16 large fresh basil leaves, chopped
1 clove garlic, minced
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground nutmeg
16 large dried pasta shells
1 (26-ounce) jar low sodium marinara sauce
Fresh basil leaves (garnish)

Steps:

  • Cook macaroni according to package directions; drain well.
  • Place ricotta and cream cheese in a bowl and mash together. Stir in 1 cup shredded cheese, egg, chopped basil and garlic. Season with salt, pepper and nutmeg; set aside.
  • Preheat oven to 400 degrees F.
  • In large pot of boiling water, cook pasta until al dente, or barely tender. Drain well, making sure to empty shells of any remaining water; set aside to cool briefly.
  • Spread about 1/2 cup marinara sauce over bottom of large baking dish. Spoon ricotta mixture evenly into shells and arrange in dish. Pour remaining sauce over top. Cover with aluminum foil and bake for 30 minutes. Uncover dish, sprinkle with remaining shredded cheese and bake for an additional 10 minutes.
  • Remove from oven and garnish with fresh basil.

  • Melt the butter in a saucepan over low heat. Whisk in the flour, and add the milk slowly, whisking as you go. Let the sauce simmer over a very low flame for about 10 minutes. Stir in the cheese, dry mustard, Worcestershire, salt, white pepper and cayenne.

1 1/2 pounds ricotta cheese or part skim ricotta cheese
1 pound mozzarella, diced
1/2 cup grated Parmigiano-Reggiano
1 cup shredded Asiago
1/4 cup chopped flat-leaf parsley
2 tablespoons extra-virgin olive oil, 2 turns of the pan
3 cloves garlic, chopped
1 small onion, finely chopped
1 can (28 ounces) crushed tomatoes
Salt and freshly ground black pepper
6 or 7 leaves fresh basil, torn or shredded

Steps:

  • Preheat oven or broiler to 450 degrees F.
  • Bring a large pot of water to a boil. Salt water and add pasta. Cook shells 12 to 15 minutes, they should be softened but still undercooked at the center. Drain pasta and cool.
  • Combine ricotta, 1/2 of the diced mozzarella, a couple of handfuls of Parmigiano and 1/2 of the Asiago. Add parsley to the cheeses and stir to combine.
  • To a small saucepot over moderate heat add oil, garlic and onions. Saute onions and garlic 5 minutes. Add tomatoes and season sauce with salt and pepper. Simmer sauce 5 minutes and stir in basil leaves
  • Pour a little sauce into the bottom of a shallow medium sized flameproof casserole dish. Fill shells with rounded spoonfuls of cheese mixture and arrange them seam side down in casserole dish. Top shells with remaining sauce and remaining mozzarella and Asiago cheeses. Place shells in very hot oven or 8 inches from hot broiler and cook 6 to 8 minutes to melt cheeses and bubble sauce.

  • If serving immediately, heat oven to 350 degrees.

  • Sprinkle remaining 1/4 cup Parmesan over shells. Cover and bake until heated through, 12-15 minutes. Serve with additional Parmesan.
  • Or, let unbaked sauced shells cool to room temperature, cover tightly, and freeze up to 2 months. To serve, thaw covered in refrigerator, then bake as directed and serve with addtiional grated Parmesan cheese.

A Stuffed Shell recipe where you DO NOT cook the shells! They always split and broke on me so this is a much easier method. For even easier pasta stuffing, crumble the meat into small chunks and put the cheese/meat mix into a zip top bag with a quarter sized hole cut into a corner for piping. I like to put this recipe together in the small aluminum loaf pans with a bit of extra sauce and freeze them 2 servings at a time.

1 (12 ounce) box jumbo pasta shells, uncooked (30 shells)
2 (26 ounce) cans pasta sauce (I use Kroger brand "Traditional", it has less sugar in it)
2 (6 ounce) cans tomato paste
2 tablespoons basil
1 (30 ounce) container whole milk ricotta cheese
1 (16 ounce) cottage cheese (large curd)
2 eggs
2 cups mozzarella cheese, shredded
1 lb ground turkey
2 tablespoons Worcestershire sauce
salt and pepper

Steps:

  • Brown turkey over medium high heat and crumble into small pieces. Season with salt, pepper and worcestershire sauce. Set aside to cool.
  • Combine Tomato sauces, tomato paste and 1 tbsp basil. Salt and Pepper to taste. Set aside.
  • In a separate bowl, combine Ricotta, cottage cheese and two eggs. Add in the last of the basil.
  • Line the bottom of a 9x13 pan with tomato sauce. Stuff the uncooked pasta shells with cheese/meat filling and rest shells in tomato sauce. Repeat until you have run out of shells and filling (this may take more than one box of shells and will require 2 9x13 pans).
  • Top pasta shells with shredded cheese. Cover and freeze for 2 months, or, bake in a 350 degree oven for 30-40 minutes. You can bake this from frozen for about 50 minutes (altitude and oven types will vary).

1 large onion, chopped

6 uncooked jumbo pasta shells
1/2 cup shredded part-skim mozzarella cheese, divided
1/4 cup shredded Asiago cheese
1/4 cup ricotta cheese
1/4 cup 4% cottage cheese
1 tablespoon minced chives
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup meatless spaghetti sauce

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions. Meanwhile, in a small bowl, combine 1/4 cup mozzarella cheese, Asiago cheese, ricotta cheese, cottage cheese, chives and 1/2 cup spinach (save the remaining spinach for another use)., Spread 1/2 cup spaghetti sauce into a shallow 1-1/2-qt. baking dish coated with cooking spray. Drain pasta; stuff with cheese mixture. Arrange in prepared dish. Top with remaining spaghetti sauce and mozzarella. , Cover and bake until heated through, 25-30 minutes. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake as directed, increasing time as necessary to heat through and for a thermometer inserted in the center of 2 or 3 shells to read 165°.

1 large onion, chopped

1 cup ricotta cheese
1 large egg, lightly beaten
1-1/2 cups shredded part-skim mozzarella cheese, divided
1-1/2 cups 4% cottage cheese
1 cup grated Parmesan cheese
1 cup shredded sharp cheddar cheese
1 teaspoon Italian seasoning
1/4 teaspoon pepper
1/8 teaspoon ground cinnamon, optional
24 jumbo pasta shells, cooked and drained
SAUCE:
3 cans (8 ounces each) no-salt-added tomato sauce
1 tablespoon dried minced onion
1-1/2 teaspoons dried basil
1-1/2 teaspoons dried parsley flakes
2 garlic cloves, minced
1 teaspoon sugar
1 teaspoon dried oregano
1/4 teaspoon pepper

Steps:

  • Crumble beef and sausage into a large nonstick skillet; add onion. Cook and stir over medium heat until meat is no longer pink; drain., Transfer to a large bowl. Stir in the spinach, ricotta and egg. Add 1 cup mozzarella cheese, cottage cheese, Parmesan cheese, cheddar cheese, Italian seasoning, pepper and cinnamon if desired; mix well. , Stuff pasta shells with meat mixture. Arrange in two 11x7-in. baking dishes coated with cooking spray. Combine the sauce ingredients; spoon over shells. , Cover and bake at 350° for 45 minutes. Uncover; sprinkle with remaining mozzarella cheese. Bake 5-10 minutes longer or until bubbly and cheese is melted. Let stand for 5 minutes before serving.
