Steps:
- Heat the oil in a small pan on a medium heat. Add the tomato and onion with a pinch of salt and soften, stirring often, for about 5 mins. Add the garlic and give it a stir, cooking for a further 30 secs. Add the beans, cover and cook, stirring occasionally, until the beans are tender, about 10 mins. Season to taste.

Steps:
- Fry the onion and green pepper in hot oil in large saucepan until they begin to become tender.
- Add tomato and spinach or greens and water. Reduce heat and cover. Simmer until all is is tender, stirring occasionally.
- Add spices and peanut butter.
- Reduce heat to lowest possible and stir until sauce is smooth.

- In a large bowl, combine all ingredients except ketchup. Knead mixture and place into a loaf pan. In a large shallow pan, add 1-inch of water, place the meatloaf pan in the center and cover with foil. Bake for approximately 1 hour.
- Drain water, remove foil, cover meatloaf with ketchup and bake for another 10 to 15 minutes.
