1 1/2 c. cooked mashed sweet potatoes
1 stick butter
1 1/2 c. sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon allspice
1/2 teaspoon salt
1 teaspoon vanilla
2 large eggs, well beaten
1 c. evaporated lowfat milk
1 (9") pie shell

Steps:

  • Now when you buy your sweet potatoes, do not get them too big. They will not boil quite right. Get some medium sized ones.Boil potatoes in a big pot. While they're boiling, get your oven started. Set it to about 350 degrees. Also get mixing bowl ready when it comes time to put your spices together. When potatoes are finished, run under cold water for a spell so you can peel them without getting burnt. But do not let them get cold, because you want potatoes to be warm sufficient to heat butter. Put potatoes in bowl and mash up real good. Put butter in potatoes and fold in till it melts. Take sugar and spice ingredients and blend them together in a small bowl. Last, add in vanilla in with the spices, then add in it all to the potatoes. Beat large eggs real well. Put large eggs in with all the rest of the stuff. Finally, take evaporated lowfat milk and start adding it a little at a time to potato mix. Keep an eye on it because you do not want it to get too juicy. If you feel you need to add in a bit more, go ahead. But be careful, you do not want it too juicy. Pour pie mix into the shells and set pie in oven. Bake about 35 min or possibly so.

1 stick butter

1 teaspoon cinnamon
1 teaspoon nutmeg
1/8 teaspoon allspice
1/2 teaspoon salt
1 teaspoon vanilla
2 eggs, well beaten
1 cup carnation evaporated milk
1 (9 inch) unbaked deep-dish pie shell

Steps:

  • Preheat oven to 350 degrees F. After your potatoes are done cooking and you've mashed them (make sure you mash them well or your pie will be stringy), add your butter mixing it until it melts.
  • Next take all your spices and mix them together in the smaller bowl. Add your vanilla to your spices and then add it to the potatoes. Beat your eggs well and mix them into your sweet potato mixture. Slowly begin to add your evaporated milk to the mixture. Be careful how much you add you don't want it to get to juicy. If you feel like you need to add more go ahead.
  • Pour mixture into your pie shell and put pies into preheated oven. Let bake 35 minutes.

4 tablespoons (2 ounces) butter, melted
1 teaspoon vanilla extract
3 eggs
1 egg yolk
3/4 cup cream
1/4 cup plus 2 tablespoons maple syrup
1/4 cup plus 1 tablespoon brown sugar
1/4 cup bourbon
1/4 teaspoon kosher salt
1/4 teaspoon grated nutmeg (preferably freshly grated)
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
A few grinds black pepper
2 2/3 cups all-purpose flour
3/4 teaspoon kosher salt
3/4 teaspoon sugar
4 ounces (8 tablespoons) chilled butter, cut into pieces
4 ounces (1/2 cup plus 1 tablespoon plus 2 teaspoons) chilled vegetable shortening, cut until pieces
1/4 to 1/2 cup cold water, as needed

Steps:

  • When it comes to fall vegetable-based pies, some individuals fancy pumpkin, while others (like me) are die-hard sweet potato fans. Both are autumnal, both marry well with the flavors of maple, spirits, and spice; but using sweet potatoes results in a denser, creamier texture. Originally created for an article in Fine Cooking magazine, this dessert is always one of my Thanksgiving pie offerings. I can't tell you how many people have said as they down the last crumb, "and I thought I didn't like sweet potato pie."
  • This is like a sweet potato custard, and you will want to take care not to overbake the filling. Check it frequently as it nears the end of its baking time and remember that it will set up a bit as it cools.
  • Serve this pie with some lightly whipped cream or, for a slightly twisted take on a tried-and-true Thanksgiving combo, garnish with some marshmallow fluff.
  • 1 (9-inch) basic pie crust, baked blind, recipe follows
  • Preheat oven to 425 degrees F.
  • Pierce the sweet potatoes at each end with a fork and place them on a foil-lined baking sheet. Roast until the potatoes are soft, about 1 hour, turning them over halfway through the baking time. Cool, peel, and put the flesh through a food mill or mash smoothly with a potato masher. You should have 2 cups of puree.
  • Turn oven down to 375 degrees F.
  • Combine the puree with all the remaining ingredients for the filling. Whisk until well combined and smooth. Pour the filling into the partially baked pie shell. Bake for about 45 to 50 minutes, until the filling is just barely set. When the rim of the pie plate is nudged, the very center of the filling should barely move.
  • Cool the pie to room temperature. It can be made several hours or up to 1 day in advance.
  • Place the flour, salt and sugar in the bowl of a food processor with a steel blade. Pulse to combine.
  • Add the chilled butter and shortening; pulse until the fat is evenly cut in and the mixture resembles coarse cornmeal. Remove to a mixing bowl.
  • Working quickly, gradually add enough cold water, while tossing and stirring with a fork, until the dough just begins to come together. Divide the dough into 2 even portions, flatten into rounds, wrap in plastic, and chill for a few hours or overnight.
  • Roll out 1 portion and fit it into a 9-inch pie pan. Crimp edges. Reserve remaining portion for another use. Line shell with foil or parchment paper and fill with dry rice or beans. Blind bake in a preheated 375 degree F oven for 20 minutes. Remove foil and beans before filling.

2 cups mashed sweet potatoes
1 cup melted butter
2 cups sugar
2 (12 ounce) cans evaporated milk
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
2 teaspoons vanilla
2 tablespoons lemon juice
4 egg yolks

Steps:

  • Puree all ingredients in a blender.
  • I have to do this in 2 batches to fit all the ingredients.
  • Pour each batch into a large container with a pouring spout (I use a plastic juice pitcher).
  • Pour filling into a uncooked pie crust.(This recipe will make 2 deep dish pies).
  • Bake in a 350 degree oven that has been preheated for approximately 1 hour.
  • I cover the edges of the crust with foil to prevent over browning. I remove it after 30 minutes and rotate the pies so they cook evenly.
  • Allow to cool completely before slicing. Enjoy!

4 medium sweet potatoes
1/2 cup butter
3/4 cup brown sugar

4 -6 eggs
1 cup milk

3 frozen pie crusts or 2 frozen deep dish pie shells, thawed

Steps:

3 large sweet potatoes, peeled and diced
½ orange, peel cut into thin strips
1 pastry for a 9-inch pie crust
2 eggs
1 tablespoon pineapple juice
1 tablespoon salted butter, melted
1 teaspoon vanilla extract
1 tablespoon all-purpose flour
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
1 pinch ground cloves
1 pinch salt
1 cup white sugar
1 cup heavy whipping cream

Steps:

  • Place sweet potatoes and orange peel into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until soft, about 10 minutes. Drain well and let cool. Discard orange peel.
  • Preheat oven to 400 degrees F (200 degrees C). Line a 9-inch pie plate with pie crust.
  • Mash cooled sweet potatoes with a potato masher or fork. Mix in eggs until well blended. Add pineapple juice, butter, and vanilla extract; mix until combined. Mix in flour, cinnamon, nutmeg, ginger, cloves, and salt. Mix in sugar until dissolved. Blend in heavy cream using a whisk.

1 pastry for a 9-inch double crust pie
4 cups peeled chopped sweet potatoes
1 ½ cups white sugar
3 eggs
⅓ cup milk
¼ cup margarine
½ teaspoon vanilla extract
½ teaspoon lemon extract
⅓ teaspoon ground cloves
¼ teaspoon ground allspice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press the pie pastries into two 9-inch pie dishes.
  • Place sweet potatoes into a large pot and cover with water; bring to a boil, reduce heat to medium-low, and simmer until tender, 15 to 20 minutes. Drain potatoes and let cool.
  • Beat potatoes, sugar, eggs, milk, margarine, vanilla extract, lemon extract, cloves, and allspice together in a bowl until smooth; pour into the prepared crusts.
