My mama came up with great recipe for parties.

1small can(s) ro-tel
5 sausage patties
1 jar(s) queso dip
1-8 oz cream cheese, room temperature
1 box chopped spinach
1 can(s) black beans

Steps:

  • 1. Fry sausage patties and crumble, then drain. Then add the can of ro-tel and beans and simmer. Cook the spinach and add. Add the cream cheese last of all and mix and simmer on low. Serve with either frito chip scoops or tostito chips

2, 15 oz. can(s) great northern beans, drained
1 c ketchup
1/4 c brown sugar
1 c salsa, chunky - such as pace picante, med. heat
1, 4 oz. can(s) green chili, chopped
1 Tbsp worcestershire sauce
3 bacon strips

Steps:

  • 1. Preheat oven to 375 degrees. Put the beans in a baking dish. Stir in the ketchup, brown sugar, salsa, and green chili. Add the worcestershire sauce. Lay the bacon across the top. Bake for 45 minutes.

  • In a medium bowl add the beans, diced tomatoes, and spices (chili powder through salt). Beat well with an electric mixer on high speed until the beans are light and fluffy, about 1 minute. Spread the bean mixture into the bottom of a 9×13 inch baking dish (or something similar).
  • Stir the sour cream well with a spoon and then spread it over the bean mixture. Sprinkle the corn over the top of the sour cream, add the grated cheese, sprinkle the chopped bell pepper over the cheese, and then top with the diced avocado.
  • Serve right away or refrigerate until ready. Serve with Food Should Taste Good Blue Corn Tortilla Chips.
