NOT YOUR MAMA'S GREEN BEAN CASSEROLE
Steps:
- Preheat the oven to 475 degrees F.
- Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick spray and evenly spread the onions on the pan. Bake in the oven until golden brown, tossing every 10 minutes, for approximately 30 minutes. Once done, remove from the oven and set aside until ready to use.
- Turn the oven down to 400 degrees F.
- While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
- Melt the butter in a 12-inch cast-iron skillet set over medium-high heat. Add the mushrooms, salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Add the half-and-half and cook until the mixture thickens, approximately 6 to 8 minutes.
- Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.
MAMA NEELY'S BAKED BEANS
Pat: Every Fourth of July, Mama Neely made her famous baked beans: she'd brown ground beef and then doctor that beef with molasses, brown sugar, and plenty of spices. Let me tell you, those beans were good. And so are these. We've found that using smoked sausage in place of the ground beef (or pork shoulder, as in our restaurant recipe) adds a smoky depth to the dish. Once you make these beans, there is no going back. If you want to put your own spin on it, you can use kidney beans instead of pork and beans, but I say my mama's way is best.

- Preheat the oven to 350 degrees F. Heat the oil in a Dutch oven set over medium- high heat. Once it's hot, toss in the onion and garlic, and saute until the onion is tender, about 3 or 4 minutes. Add the sausage, and continue to cook until the meat has browned, about 4 minutes more. Stir in the pork and beans, ketchup, molasses, sugar, vinegar, mustard, and hot sauce. Bring the beans up to a simmer, then put in the hot oven for 45 minutes, uncovered, until the mixture is bubbly and thick.
MAMAN'S SUPER BLACK BEAN CASSEROLE
My mom makes this great black bean casserole. I have always loved it, and now it's on my husband's top 10 list of favorite foods!

- nota:diced tomatoes and chili powder can be replaced with an equivalent amount of salsa.
- Preheat oven to 350°F.
- In a large fry pan, heat oil and fry the onions, garlic, and celery until tender and onions translucent.
- Add tomatoes/salsa and spices, and heat through.
- Add black beans.
- Spoon a quarter of the mixture in the bottom of the casserole dish.
- Add a tortilla.
- Spoon another quarter of the mixture over the tortilla and spread to cover.
- Add a third of the grated cheese.
- Continue in this way until all the ingredients have been used up.
- Place casserole in the oven and heat for 20 minutes, or until heated through and the cheese is melted.
- Sprinkle green onion and green pepper over the dish (if desired) and serve.

- In the bottom of a 9"x13 casserole dish, mix together beans, hot dogs, tomato, and onion.
- Top with shredded cheese.
- Remove biscuit dough from tube and using your fingers, or a rolling pin, flatten each biscuit and shape so that it fits in the pan, covering the top of the casserole. It is important to make the biscuits thinner so they will cook through completely.
- Optional: baste the top of each biscuit with whisked egg.
- Bake on center oven rack uncovered at 350 degrees for about 30 minutes, or until biscuits are golden brown on top and cooked all the way through.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes.
- While the potatoes are cooking, preheat the oven to 350 degrees F (175 degrees C).

- Preheat an oven to 400 degrees F (200 degrees C).
- Melt the butter in a skillet over low heat. Cook and stir until the onion has softened and turned translucent, 10 to 15 minutes. Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. - Preheat oven to 350 degrees.
- Chop bacon in 1/2 inch pieces and cook until just about brown. Add chopped onions and continue cooking until bacon is done and onion is sauteed.
- Drain beans and pour into 1.6 liter casserole dish. Add bacon and onions and a little of the grease. Add molasses and ketchup. Stir to combine.

MAMA'S FAMOUS BEAN CASSEROLE
Steps:
- Preheat oven to 400 degrees Fahrenheit. Bring 6 cups of water to a boil. Add elbow macaroni to the boiling water. Brown the hamburger in a large skillet. Saute the green pepper and onion in small skillet.
- When hamburger is browned and drained, add veggies to the large skillet. When the macaroni is nice and tender, drain and add to the hamburger and veggie mixture. Add the Bush's Baked Beans, and the V8 tomato juice, stirring together.
- Place in a 13 x 9 casserole dish. Top with slices of Kraft Yellow American Cheese.
- Bake in the oven until the cheese is melted. Cool 3-5 minutes, serve, and enjoy!
