MAMA'S GOULASH

Recipe by Dee Hutchins-Reynozo ~ I remember my mama making this classic one-pot-wonder for us when we were kids. It makes me feel all warm and fuzzy inside just thinking about it!

Number Of Ingredients 20

1 T. olive oil
1 lb. lean ground beef
1 lg. yellow onion (chopped)
2 stalks celery (sliced)
1 med. green bell pepper (diced)
3 cloves garlic (pressed)
4 c. beef broth
1 (15 oz.) can crushed tomatoes
1 (15 oz.) can diced tomatoes with juice
1 ½ T. Worcestershire sauce
2 tsp. Italian seasoning
2 tsp. oregano
1-2 tsp. paprika (I use smoked paprika)
1 tsp. salt
½ tsp. black pepper
¼ tsp. red pepper flakes
1 bay leaf
2 c. elbow macaroni (uncooked)
1 c. shredded sharp cheddar cheese
Fresh chopped parsley (for garnish)

Steps:

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Add the ground beef. Break up the meat with a wooden spoon and brown until no longer pink. Drain excess fat.
  • Add onions, celery, green pepper, and garlic. Cook until the veggies are tender about 3-5 minutes.
  • Add beef broth, crushed tomatoes, diced tomatoes with juice, Worcestershire sauce and seasonings; stir well.
  • Stir in macaroni until well combined. Cover with a lid and simmer for 18-20 minutes. Remove from heat. Top with shredded cheese and garnish with fresh chopped parsley.

1 pound ground meat (beef, turkey, pork)
2 Tbsp. Onion Onion Seasoning
1 Tbsp. Mama Mia Marinara Sauce Mix
1 tsp. Seasoned Salt
1 1/2 Tbsp. soy sauce
1-28 oz can crushed tomatoes
2 cups water
2 cups dry elbow macaroni
1 tsp. Garlic Garlic Seasoning

Steps:

  • In a large skillet, brown & crumble meat until no longer pink. Drain off excess fat. Add remaining ingredients except macaroni. Stir and bring to a boil. Lower heat and simmer for 15 minutes. Add macaroni and continue to simmer for an additional 20 minutes or until macaroni is tender. Serve.

My mother made this as long as I can remember in a pot on the stove. When Slow-Cookers came along, it adapted easily to that format, and my growing family loved it, too. It's easy and economical--always two pluses for any dish. When the kids like it, too, that makes it a Home Run Dinner. These days, I add some cayenne and turmeric because they kick up the flavor a bit for our adult palates. AND they're good for my arthritis! Add some crusty garlic bread or a pan of cornbread...maybe a salad, and dinner's ready!

1 pound(s) ground beef or ground turkey
4 cup(s) tomato sauce
1 can(s) kidney beans, drained
1 can(s) garbanzo beans, drained
1 can(s) whole kernel corn, drained
1 lg. can(s) diced tomatoes, canned (approx. 28 0z.)
1 medium onion, chopped
1-2 clove(s) garlic (minced--to hide it from the kids!)
1 cup(s) water chestnuts, diced or sliced (optional--these were not in mama's goulash!))
1 teaspoon(s) salt
1/2 teaspoon(s) black pepper
1/4-1/2 teaspoon(s) cayenne pepper (optional)
1/2-1 teaspoon(s) turmeric, ground (optional)
1 1/4 cup(s) dry shell macaroni (or whatever pasta you have on hand)
1-2 cup(s) hot tomato juice or hot water (if needed for consistency)

Steps:

  • Brown ground meat with onion and garlic. Drain excess grease.
  • Put all the ingredients except the meat and macaroni into the slow cooker and then stir the meat in (so it doesn't settle on the bottom). Cook on high for at least three hours (or on low for 6 to 8 hours) to allow the flavors to blend.
  • A couple of hours before you want to eat stir in the dry macaroni. You CAN put it in at the beginning, but it will grow and grow, especially if you let it cook all day, so if that's your plan, start with really tiny pasta, like tiny elbow mac or stars. I sometimes just cook the pasta in a pan of water and stir it into the goulash 15 or 20 minutes before I serve it. That way, it's done perfectly--isn't mushy or "crunchy." Pasta can be very tricky in a slow-cooker.
  • At this point, the goulash should be juicy--almost a soup, so if it starts to get too thick, add some hot water or hot tomato juice.
  • None of these amounts or ingredients are critical. Use what you have or what your kids like. Use pinto beans if they don't like kidney beans or leave out the garlic. Leave out the cayenne and turmeric if your family doesn't like the little bit of "heat" they add.
  • MY MOTHER'S METHOD (great for throwing together when you get home from work) was to cook the macaroni al dente, brown the meat, then put it all in a kettle on the stove and let it simmer for a couple of hours until dinnertime. The taste isn't quite as mellow, but it's still awfully good, and doesn't require as much advance planning! :D

1 medium green pepper, chopped
1 sweet onion, chopped
1 1/2 cups elbow macaroni, cooked (or any other type of small pasta)
1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can stewed tomatoes
1 (8 ounce) can sliced mushrooms
italian seasoning (to taste)
ground black pepper (to taste)
salt (to taste) or garlic salt (to taste)

Steps:

  • Fry hamburger, pepper, and onion in large skillet.
  • Drain fat if needed (if you're not sure, you can also only cook the macaroni part way so that while simmering the uncooked pasta will soak up excess moisture when added to the mixture).
  • Add remaining ingredients and heat well.
  • Add macaroni and heat through.

2 pounds beef stew meat, diced into 1 inch pieces
salt and pepper to taste
¼ teaspoon paprika
1 onion, chopped
1 tablespoon vegetable oil
8 large potatoes, scrubbed and chopped
1 (16 ounce) can chili without beans

Steps:

  • Season beef with salt, pepper, and paprika.
  • Brown seasoned beef and onion in oil until all sides are brown. Cover with water and simmer for 3 to 4 hours or until tender. Add water whenever level goes below the ingredients.
  • An hour before serving, add potatoes and chili.

This is a recipe that I learned to make from my Mother, who learned to make from her Mother. It is a comfort food to all of us kids and now the grandchildren!!!

8 ounces elbow macaroni
1 lb ground beef
1 medium onion, diced
2 garlic cloves, minced
1 (14 1/2 ounce) can diced tomatoes
salt and pepper, to taste
1 cup cheddar cheese, shredded (or 1 1/2 cups cheese)

Steps:

  • Cook the macaroni according to package directions.
  • In a large skillet, over medium heat, brown ground beef with onion, till there is no pink left in the beef and then add garlic for a few minutes to cook, then drain beef mixture.
  • Return pan to heat and add the can of diced tomatoes, salt and pepper to taste and allow to heat for about 5 minutes.
  • Add completely drained pasta and allow to blend for several minutes.
  • Add cheese and stir until blended and melted.
  • Note: We always had this with sliced bread and butter and either apple sauce with cinnamon or green beans with butter.

1 pound(s) ground chuck or any lean beef
1 small white onion chopped
1/8 teaspoon(s) oregano, dried
1/8 teaspoon(s) chili powder

3 cup(s) water (as needed)
6 ounce(s) tomato sauce
2 can(s) tomato soup
1 can(s) corn
1 small can of peas

Steps:

  • brown meat with onion in pot or skillet at medium heat
  • Add to large skillet or pot-- all seasonings.
  • next step is to add all tomato products and water.
  • add peas and corn
  • add water and macaroni. Cook about 15 minutes.
  • Before goulash has cooked for an hour you finish it off with sprinkled cheeses and breadcrumbs on top. The bread crumbs should brown and cheeses have melted.
  • You can finish off in oven to brown at 350 for 10 min.

2 pounds cubed beef stew meat
1 pinch caraway seeds
1 pound onion, sliced
2 teaspoons paprika
1 clove garlic, minced
1 tablespoon lemon zest
1 (6 ounce) can tomato paste
1 (10.5 ounce) can beef consomme
1 (10 ounce) package broad egg noodles, cooked, rinsed, drained (Kosher for Passover)

Steps:

  • Melt butter in a large pot over medium heat. Add the stew meat, caraway seeds, onion and paprika. Cook and stir until the meat is browned, and the onions are translucent. Add the garlic and lemon zest, and cook for about a minute, then stir in the tomato paste and beef consomme, adding water if necessary to cover the meat. Cover, and simmer over medium-low heat for 1 1/2 hours.
  • Just before the meat is done cooking, bring a large pot of salted water to a boil. Add egg noodles, and cook until tender, about 8 minutes. Drain and serve the goulash spooned over the egg noodles.
