VERSATILE VANILLA CAKE

- Preheat oven to 350 degrees. Butter and flour two 8-by-2-inch cake pans, tapping out excess flour. In a medium bowl, whisk flour, baking powder, baking soda, and salt.
- In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. With mixer on low, beat in eggs and yolks, one at a time. Beat in vanilla. Alternately beat in flour mixture and buttermilk, beginning and ending with flour mixture; mix just until combined.
- Divide batter between pans; smooth tops. Bake until cakes pull away from sides of pans, 32 to 35 minutes. Let cool in pans 10 minutes. Run a knife around edges of pans and invert cakes onto a wire rack. Let cool completely.
- Place one cake, bottom side up, on a cake stand. Tuck strips of parchment paper underneath. Using an offset-spatula or table knife, spread top with Whipped Frosting. Top with remaining cake; frost top, then sides.

ORANGE VANILLA BEAN ANGEL FOOD CAKE

Steps:
- Preheat the oven to 350 degrees F.
- Add the sugar to a food processor and blend until the sugar is super fine, about 1 minute. Reserve half (about 3/4 cup) of the sugar and set aside.
- Add the cake flour, the remaining sugar (about 3/4 cup), and the salt to a medium bowl. Sift into another medium bowl. Sift the mixture back into the original bowl. This helps get rid of any lumps and creates a very fluffy light texture in the cake.
- In a large bowl, add the orange zest, cream of tartar and egg whites. Slice the vanilla bean in half, scrape the seeds out with a knife, and add the seeds to the bowl with the egg whites. Using a hand mixer, begin to beat the egg white mixture on medium-high speed. While mixing, slowly stream in the remaining sugar. Beat the mixture until it holds medium peaks, this could take up to 10 minutes.
- Set the mixer aside and sift a light dusting of the flour mixture on top of the egg white mixture. Use a rubber spatula to fold the flour into the egg white mixture, this is done by slicing through the middle of the mixture and folding up and over along the side of the bowl to incorporate the flour. Keep sifting and folding until all the flour mixture has been incorporated.
- Carefully spoon the mixture into an ungreased 10-inch tube pan. Use a knife to swirl around the pan 2 times to release any unwanted air bubbles. Bake until a toothpick inserted into the cake comes out clean, about 30 minutes.
- Remove from the oven and cool upside down on a cooling rack. Let cool for at least 1 hour before removing the cake from the pan and cooling completely.
VERSATILE VANILLA CAKE - EVERYDAY FOOD
I just got this month's Everyday Food mag in the mail, and I am afraid of losing it for fear of not having this recipe! This is the Versatile Vanilla Cake. The recipe can be tweaked to be chocolate or lemon! I am going to post all three independently. They are all called "Versatile (Vanilla, Lemon, Chocolate) Cake - Everyday Food". I have not made this yet, however it sounds AMAZING none the less! There is also a recipe that I posted for the Whipped Frosting that goes along with these cake recipes! You can find the lemon variation on the same recipe.

ORANGE DELIGHT CAKE
Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease and flour two 8 inch cake pans.
- Sift together into a large bowl the cake flour, 1 1/3 cups sugar, baking powder, baking soda, and 3/4 teaspoons salt. Add grated orange rind, shortening, orange juice, and 1/3 cup water. Beat on medium speed for 2 minutes with an electric mixer, scraping bowl while beating. Add two whole eggs and beat batter for 2 more minutes. Beat in the lemon juice. Pour batter into prepared pans.
- Bake at 375 degrees F (190 degrees C) for 30 to 40 minutes. Remove cakes from pans and let cool. Frost with Double Boiler Icing or whipped cream. Sprinkle cake with grated orange rind and finely chopped nuts or coconut.
- To Make Double Boiler Icing: In the top of a double boiler put; the 2 egg whites, 1 1/2 cups of the sugar, 5 tablespoons water, 1/8 teaspoon salt, light corn syrup, and cream of tartar. Place over boiling water and beat until blended. Cook mixture beating constantly until mixture will stand in peaks. Remove from heat and add the vanilla. Continue beating until of spreading consistency, about 5 minutes. Spread onto cooled cake.

ORANGE UPSIDE-DOWN CAKE

- Make the caramel:
- Preheat the oven to 350°F.
- Lightly butter the cake pan. Slice the oranges as thinly as you can (about 1/8 to 1/4-inch thick), preferably using a mandoline and picking out seeds as you go; set aside.
- Make sure you have all the ingredients for the caramel ready to go before you begin cooking it. In a medium pot, combine the sugar and 6 tablespoons water and place over medium-high heat. Bring to a boil and cook, swirling the pan occasionally, until the mixture turns a medium-dark amber color, about 10 minutes. Remove pot from heat and carefully stir in the butter and salt until incorporated. Pour the caramel into the buttered cake pan.
- Starting in the center of the pan, layer the orange slices on top of the caramel, overlapping a bit and working your way toward the outer edge (you may not need to use all the orange slices). Set pan aside.
- Make the cake:
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside.
- In a separate large bowl, use an electric mixer to cream the butter and sugar until fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition, and then blend in the vanilla and orange zest.
- Add the flour mixture in three parts, alternating with the buttermilk, beating just to combine. Spoon the batter in dollops over the oranges in the cake pan, being careful not to move them around too much. Smooth the top of the batter with a wet offset spatula or the back of a spoon. Bake until a toothpick inserted in the middle of the cake comes out clean, 35 to 40 minutes, rotating the pan halfway through.
- With an offset spatula or a butter knife, loosen any parts of the cake that seem to be sticking to the side of the pan. Invert the cake onto a plate or platter while it's still hot. Let cool until warm or room temperature, then cut into wedges with a serrated knife to serve.
VERSATILE "GO-TO" ORANGE-VANILLA CAKE
Steps:
- Preheat oven to 350° F Butter and flour two 8 inch cake pans In a small bowl, sift together the flour, baking powder and salt. Set aside. In a bowl of an electric mixer, beat the butter on medium-high speed until soft, about 1 min. Gradually add the sugar and beat 1 min. Pour in the corn syrup in a steady stream. Beat until fluffy, about 5 mins, scraping down sides of the bowl. Reduce speed to medium and add in the eggs one at a time, beating about 15-20 seconds after each addition. Turn the mixer on to the lowest speed and add half the flour mixture. Pour in the milk, add vanilla and orange zest. Mix in the remaining flour. Stop the machine, scrape down the sides of the bowl and mix for another minute. Divide the batter equally between the prepared pans. Tap the pans gently on the counter top to release trapped air bubbles. Place pans on cookie sheet and transfer to the center rack in the oven. Bake for 40 mins. Cool on wire racks for 15-20 mins, then remove from pans and cool completely.

- Preheat the oven to 180 celsius (350 fahrenheit) and place the butter, vanilla seeds, orange zest and brown sugar in a bowl of an electric mixer and cream until pale and golden. Place the orange segments in a bowl and add the vanilla pod to the orange segments and toss to combine.
- Add the eggs to the creamed butter and sugar, one at a time, beating well between each addition. Sift the flour, baking soda and baking powder, and fold through. Finally add the Greek yoghurt and orange juice and mix until just combined. Place the mixture into a 22cm round non stick spring form tin that has been lined with baking paper and smooth the top.
- Starting from the outside, place the orange segments in a circle, slightly overlapping, and repeat until the whole cake is covered. Bake for 30 to 35 minutes, or until a cake tester comes out cleanly. Cool on a wire rack.
