MAMAW'S MEXICAN CASSEROLE

With ooey gooey goodness coming from the Mexican cheese and the cream of chicken soup, plus a whole lot of heartiness from the ground beef, this South-of-the-border-inspired casserole is the kind of dish you'd expect to be served at your mom's house for Sunday night dinner. - Preheat oven to 350 degrees F. Spray a 2-quart casserole dish with cooking spray.
- In a large skillet, brown the beef 5 minutes, using a spoon to break up any large clumps. Drain off excess fat and add onion, garlic, and chili powder. Continue to cook and stir 2 minutes. Add the beans to the cooked meat mixture. Combine the tomatoes with the soup in a small bowl, mixing completely.
- Place about 3/4 of the crushed chips into the bottom of the casserole. Spoon on half the beef mixture, then half the soup mixture. Then add half of the shredded cheese. Repeat the layers, ending with shredded cheese.
- Sprinkle the top of the dish with the remaining crushed Doritos. Bake 30-35 minutes until mixture is bubbling and top is lightly browned. Serve with tortillas on the side.
MEXICAN MEATLOAF

- Preheat the oven to 375 degrees F.
- In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, carrot, celery, and garlic. Cook, stirring often until vegetables are soft, about 8 minutes. Set aside until cool enough to handle.
- In a large bowl combine the sauteed vegetables, ground beef, chorizo, and diced poblano chile.
- In a medium bowl, combine the salt, pepper, cayenne, cumin, and eggs. Add the ketchup and sour cream. Mix well with a fork and pour it on top of the mixed meats. Sprinkle with bread crumbs and mix thoroughly with clean hands.
- Put the mixture into a 9 by 13-inch loaf-pan. Bake until an instant-read thermometer inserted into the center of the meatloaf registers 160 degrees F, about 40 to 45 minutes. Remove from the oven and carefully pour off any accumulated pan juices.
- Meanwhile, heat a heavy skillet over high heat. Add the whole tomatoes, onion, garlic cloves, and serrano chiles. Cook, turning frequently, until lightly charred on all sides. Peel the garlic cloves. Add all the charred ingredients to a blender. Pulse until chunky, then pour into a small skillet. Stir in the sugar, chipotle chile and mustard. Bring the mixture to a boil over medium heat. Cook until slightly thickened, about 4 to 5 minutes. Season with salt, to taste.
- Slice the meatloaf and arrange on a platter. Spoon the salsa-glaze over the meatloaf and serve.
MEXICAN MEAT LOAF

- Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.

This is the only meatloaf I ever liked! Seasoned with fresh onion,a touch of bell pepper, and glazed with a sweet ketchup sauce. For our small family, we cook one loaf and freeze the other to cook at a later time.

- Preheat an oven to 350 degrees F (175 degrees C).
- Combine ground beef, cracker crumbs, tomato sauce, eggs, onion, bell pepper, salt, thyme, and marjoram in a large bowl and mix well. Shape beef mixture into two equally sized loaves. Place both loaves in a 9x13 inch baking dish. Cover with foil and bake in the preheated oven for 1 hour. Meanwhile, mix ketchup and corn syrup in a small bowl to make a glaze.

- Cook and stir ground beef in 10-inch skillet until brown. Remove beef; drain fat from skillet.

MA MAW'S MEXICAN CASSEROLE AKA DORITO BEEF CASSEROLE
Layers of ground beef, corn tortilla chips, chili beans, Rotel tomatoes and cheese make up this ooey-gooey casserole.

- Preheat oven to 350 degrees. In a large skillet brown the ground beef with onion and garlic. Drain any grease.
- Add the ranch style beans and chili powder; mix to combine and set aside. In a separate bowl combine the soup and the Rotel tomatoes together and set aside.
- Add a layer of slightly crushed corn tortilla chips in the bottom of a greased 2 quart, 9 x 9 inch or 8 x 8 x 2 inch casserole dish.
- Add half of the ground beef mixture and half of the soup mixture. Top with 1 cup of shredded cheese.
- Repeat layers a second time ending with the remaining shredded cheese. Place in a 350 degree oven and bake for 30 - 35 minutes or just until hot and bubbly around the edges.
- This casserole is great served with Cilantro Lime Rice and Flour Tortillas on the side.
MAMA'S MEATLOAF
A stick to your ribs, delicious slice of comfort food. Great cold for sandwiches the next day! I sometimes substitute matzo meal or bread crumbs for the oatmeal.

Steps:
- Preheat oven to 350.
- In a large mixing bowl, combine ground beef, sausage, chopped onion, egg, oatmeal and 1/2 cup of the ketchup.
- Mix together thoroughly. The best way to do this is with your hands!
- Spray a large baking dish with cooking spray, then form the meatloaf into a loaf shape in the baking dish.
- Bake for one hour.
- Mix together one cup of ketchup, the dried mustard and the brown sugar.
- Spoon over the meatloaf, then bake for 10 more minutes.
- Allow the meatloaf to rest 5-10 minutes before slicing and serving.
- Enjoy!
