1 ½ teaspoons baking powder
¾ cup sugar
½ cup milk
1 cup Crosse & Blackwell® Mincemeat Filling & Topping or Crosse & Blackwell® Rum & Brandy Mincemeat Filling & Topping
2 large eggs
Grated peel of 1 lemon
1 cup Crosse & Blackwell® Mincemeat Filling & Topping
¼ cup sugar
¼ cup rolled oats
½ teaspoon ground cinnamon
¼ cup butter, melted

Steps:

  • Heat oven to 350 degrees F. Line bottom of springform cake pan with wax paper and butter the sides.
  • Place flour, baking powder, sugar and 1/2 cup butter in large bowl. Stir in milk, mincemeat, eggs and lemon peel. Mix on low speed of electric mixer 2 minutes or until thoroughly combined. Pour into prepared pan.
  • Bake 30 minutes. While cake is baking, mix all topping ingredients in small bowl. Remove cake from oven and spoon on topping. Return cake to oven and bake an additional 30 minutes or until toothpick inserted in center comes out clean.

225 g mincemeat
150 g soft light brown sugar
225 g self raising flour
2 medium eggs
100 g Glace cherries
100 g sultanas
50 g blanched almonds or halved glace cherries, for decoration

Steps:

  • Preheat oven to 180C/160Fan/350F.
  • Grease and line 2 1lb (450g) loaf tins.
  • Simply mix all the ingredients except for the blanched almonds together until they are well incorporated.
  • Spoon the mixture into your loaf tins. Stud with the blanched almonds/halved cherries.
  • Bake for 1 hour if using 1lb loaf tins or 35-40 minutes for mini loaf tins or until the cakes are shrinking from the sides, risen and golden and a skewer inserted in the middle comes out clean.

75 g soften butter
75 g light brown sugar
100 g mincemeat
110 g self-raising flour
50 g dried cranberries
2 tbsp milk
1 egg

Steps:

  • In a bowl, use a hand mixer to cream the butter and sugar together.
  • Add the egg, and mix again.
  • Sift in the flour, add the milk, mincemeat and cranberries, and mix everything into a thick batter.
  • Grease and flour a loaf tin - mine is 19x6 cm, 7.5x2.5 inches.
  • Spread the batter evenly, and bake in the preheated oven at 180 degrees Celsius (350 Fahrenheit) for 45 minutes, or until a skewer inserted in the middles comes out clean.
  • Leave to cool down completely before slicing.

1 can (12 ounces) evaporated milk
1/4 cup water

Steps:

  • Grease a 10-in. fluted tube pan and lightly sprinkle with flour; set aside., In a large bowl, cream the butter and sugar until light and fluffy, about 5 minutes. 1 (5 ounce) package instant vanilla pudding mix
1 teaspoon ground nutmeg
¾ cup vegetable oil
¾ cup white wine
4 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch bundt pan.
  • In medium bowl combine the cake mix, instant vanilla pudding, nutmeg, vegetable oil, white wine, and eggs. Beat with an electric mixer for 5 minutes.
  • Bake at 350 degrees F (175 degrees C) for 50 minutes or until a toothpick inserted in the center comes out clean. Let cake cool on rack in pan for 10 minutes then remove cake from pan to rack. Let cake cool completely before slicing. Garnish sliced cake with a dollop of whipped cream or dust with confectioners' sugar and sliced strawberries.
  • Variation: You can also "flour" the pan after it's been greased with cocoa powder or a cinnamon sugar mixture for a textured crust. Simply fill a clean salt shaker for easy application. This will eliminate that "white stuff" on the outside of your baked cake which makes for a prettier cake.

1 teaspoon vanilla extract

ICING:

Steps:

  • In a bowl, cream butter and sugar until light and fluffy. Add egg yolks and extracts; beat well. Combine flour, baking powder and 1/2 teaspoon salt. Add to creamed mixture alternately with milk. Add coconut and orange zest. In a small bowl, beat egg whites with remaining salt until stiff peaks form; gently fold into batter. Pour into three greased 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean (if wood burning stove is used, start peeking after 25 minutes). Cool in pans for 10 minutes; remove to wire racks to cool completely. , For icing, combine sugar, egg whites, water and corn syrup in a heavy saucepan or double boiler. With a portable mixer, beat on low for 1 minute. Continue beating on low speed over low heat until frosting reaches 160°, about 8-10 minutes. Pour into a bowl; add vanilla. Beat on high until stiff peaks form, about 7 minutes. Place one cake layer on a serving plate. Spread with frosting and sprinkle with coconut. Repeat. Top with last layer. 1 tsp mixed spice
175g softened butter
3 eggs
2 tbsp milk
about 140g mincemeat
icing sugar , for dusting

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Line 12 bun tins with paper cases. Put the flour, sugar, spice, butter, eggs and milk into a mixing bowl and beat with an electric hand whisk or wooden spoon for 2-3 mins, until the mix is light and fluffy.
  • Put a spoonful of cake mix in each case, then a rounded tsp of mincemeat. Cover the mincemeat with a spoonful of cake mix and smooth.
  • Bake for 15-18 mins until golden brown and firm. Dust with icing sugar and serve warm or cold.
