MAMA'S BROWN RICE (NOT THE HEALTHY KIND, THE BEEFY, BUTTERY KIND!)
Rice browned in butter then baked in beef consommé for an absolutely perfectly cooked recipe easy enough for weeknight meals and special enough for holiday dinners!

Steps:
- Preheat oven to 375 degrees.
- Melt butter in a large skillet over medium-high heat. Add rice then sauté for about 5 minutes or until rice is light brown. The butter will become foamy and lovely and the rice will start to smell somewhat nutty.
- Pour rice and butter into a 2-quart baking dish then add beef consommé. Cover tightly with two layers of aluminum foil then bake at 375 degrees for 1 hour.
- Remove from oven, fluff rice with a fork, then serve.

In a large skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain., Stir in rice, tomatoes, corn, olives, bacon and seasonings; heat through. Stir in 1 cup cheese until melted., Transfer to a greased 11x7-in. baking dish. Sprinkle with remaining cheese. Toss bread crumbs with butter; sprinkle over top., Bake, uncovered, 15-20 minutes or until cheese is melted.

- Heat oil in a large skillet over medium-high heat. Add beef and sausage; cook and stir, breaking into small pieces, until they begin to brown, about 5 minutes. Add onion, bell peppers, celery, and garlic. Continue to cook and stir until meat is fully browned, 3 to 4 minutes more. Stir in soy sauce, black pepper, paprika, oregano, Cajun seasoning, chili powder, garlic powder, and salt.
- Stir in broth and bay leaves. Let simmer for 6 to 8 minutes. Fold in rice, 1 cup at a time, until fully coated. Mix in parsley. Simmer for 6 to 8 more minutes. Discard bay leaves and serve.

MIMI'S DIRTY RICE
This dirty rice recipe came from my mom in 1996, and I don't have any idea where she got it. It can be adjusted for your tastes -- more or less of the "7 seasonings" to make it hotter. I usually make it and put it in stuffed peppers, but it could be a stand alone dish or side. We love it!

Steps:
- Combine first 7 seasonings and set aside.
- Over medium heat, place ground meat and bay leaves in skillet with oil. Brown meat thoroughly. Drain excess grease.
- Stir 7 seasonings into meat. Add onions, celery, peppers, and garlic, stirring well.
- Add butter and reduce heat to medium; cook 10 minutes, stirring constantly.
- Add chicken or beef broth; cook 8 minutes over high heat, stirring once.
- Add minute rice and cover. Reduce heat to low and cook for 5 to 10 minutes. Remove from heat. Let stand 10 minutes before serving.

MAMI'S RICE
The rice that my mother prepares is the result of all the different tastes we have in my family. We like a good, homemade rice that has a hint of onion and chicken broth. Before preparing the rice, it's important to remember the famous Mise en place; to have all your ingredients in place and ready to go before you start cooking. Otherwise, you might burn the garlic!

Steps:
- Heat the oil in a large fry pan. Saute the onion in the oil until it's nice and golden colored. Remove the onion.
- Add the garlic, tomato, red/green pepper and the rice. Saute everything until the rice doesn't stick to itself. (about 5-8 minutes). Add the lime juice and the bouillon. Saute it one more minute.
- Add the 4 cups of water and then cover it. When the water begins to boil, lower the temperature and let it cook for 25 minutes (35 minutes for high altitude).
- Enjoy! This is a gluten free side dish for 4-6 people, depending on how much they love rice!
