Pavlova is named after Russian ballerina Anna Pavlova. She toured Australia and New Zealand in the 1920s, and both countries take credit for inventing the dessert. Some people say it was inspired by her tutu; others say it was created in the spirit of her light, airy style of dancing.

5 large egg whites, at room temperature
3/4 teaspoon distilled white vinegar
1/8 teaspoon salt
1 1/4 cups superfine sugar
1 1/2 teaspoons cornstarch
1/2 teaspoon pure vanilla extract
1 cup cold heavy cream
1 tablespoon superfine sugar
1/2 teaspoon pure vanilla extract
5 passion fruits, halved and pulp scooped out

Steps:

  • Preheat the oven to 275˚ and line a baking sheet with parchment paper. Using a plate or cake pan as a guide, trace a 9-inch circle on the parchment with a pencil, then flip over the parchment on the baking sheet (the circle should still be visible); set aside.
  • Make the meringue: Whisk the egg whites, 1/4 teaspoon vinegar and the salt in a large bowl with a mixer on medium speed until soft peaks form, 2 to 4 minutes. Gradually beat in the sugar, 1 tablespoon at a time, until dissolved. Increase the mixer speed to medium high and beat until stiff peaks form, 3 to 4 minutes. Add the cornstarch, vanilla and the remaining 1/2 teaspoon vinegar and beat until just combined, 10 to 15 seconds.
  • Spread the meringue into a 9-inch round on the prepared baking sheet (use the pencil marking as a guide) and make a shallow well in the center. Transfer to the oven and immediately reduce the oven temperature to 225˚. Bake until crisp and dry, about 2 1/2 hours. (The meringue should still be white or a very pale cream color.) Turn off the oven and open the door slightly (use the handle of a wooden spoon to prop it open about 1/2 inch). Let the meringue cool completely in the oven, about 1 1/2 hours. Carefully remove the meringue from the parchment and transfer to a platter.
  • Make the whipped cream: Beat the heavy cream, sugar and vanilla in a large bowl with a mixer on medium-high speed until soft peaks form, about 2 minutes.
  • Just before serving, top the meringue: Gently stir the passion fruit pulp to loosen. Top the meringue with the whipped cream and passion fruit. Serve immediately.

175g caster sugar
1 level tsp cornflour
1 tsp malt vinegar
1 tsp vanilla extract
icing sugar , to dust
200g fat-free Greek yogurt
1 large ripe mango , peeled, stoned and diced
4 passion fruits , pulp only
icing sugar (optional) and a few physalis, to decorate
raspberry sauce , to serve (see 'Try' below)

Steps:

  • Preheat the oven to 150C/ gas 2/fan 130C. Line a 33x23cm swiss roll tin with non-stick baking parchment. Beat the egg whites with an electric whisk until frothy and doubled in bulk. Slowly whisk in the caster sugar until thick and shiny. Mix the cornflour, vinegar and vanilla extract, then whisk into the egg whites.
  • Spoon into the tin and level the surface carefully, so you don't push out the air. Bake for 30 minutes until the meringue surface is just firm.
  • Remove from the oven and cover with damp greaseproof paper for 10 minutes. Dust another sheet of greaseproof paper with icing sugar. Discard the damp paper and turn the meringue out on to the sugarcoated paper. Peel off the lining paper, then spread yogurt over the meringue and scatter with mango and passion fruit. Use the paper to roll up the roulade from one short end. Keep the join underneath. Sift a little icing sugar on top if you like, decorate with physalis and serve with raspberry sauce.

A slightly wicked dessert packed full of fruit and cream - best served half-frozen

2 tsp cornflour
2 tsp instant coffee
2 tsp white wine vinegar or cider vinegar
5 egg whites
200g golden caster sugar
small handful of pistachios , sliced lengthways
1 small mango
250g carton mascarpone
148ml carton double cream
1 passion fruit
icing sugar , for sifting

Steps:

  • Heat oven to 140C/fan 120C/gas 1. Line a 33cm x 23cm Swiss roll tin with baking parchment. For the meringue, mix together the cornflour, coffee and vinegar, and set aside. Whisk the egg whites to stiff peaks, then gradually beat in the sugar, a spoonful at a time, until quite thick. Whisk in the coffee mix.
  • Spoon the meringue onto the paper and gently spread, giving the top a few swirls. Scatter over the pistachios. Bake for 35-40 mins until it feels crisp.
  • Meanwhile, make the filling. Slice the mango either side of the stone, peel, then finely chop the flesh. Beat the mascarpone, then stir in the mango. Whip the cream until thick and fold into the mango mix. Halve the passion fruit, scoop out the inside and set aside.
  • When the meringue is cooked, leave in the tin for 10 mins, then lift out and put on a cooling rack, paper-side down. Dust a sheet of baking parchment with icing sugar and, when the meringue is cold, tip it on, paper side up. Peel off the lining paper and spread the cream over. Drizzle over the passion fruit and roll up using the paper as a guide. Open-freeze (see 'Try' below) on a board, wrap in foil and freeze for up to 1 month.
  • To serve, unwrap and thaw in the fridge for about 1 hr. Sift with icing sugar and serve in slices.

Pavlova, an airy confection named in honor of Russian prima ballerina Anna Pavlova, consists of a meringue base crowned with fruit and capped with whipped cream. Traditionally, the meringue base has a soft, nearly marshmallow-like center, but for this recipe, brought to us by renowned chef Jean-Georges Vongerichten, it is crisp and light.

1/4 cup granulated sugar
2 1/4 cups sifted confectioners' sugar
Passion Fruit Sorbet
3/4 cup heavy cream, whipped to soft peaks
2 passion fruits, halved

Steps:

  • Preheat a convection oven to 200 degrees. In the bowl of an electric mixer fitted with the whisk attachment, whip egg whites until frothy. Slowly add granulated sugar. Whip until very stiff peaks form. Remove bowl from mixer and fold in confectioners' sugar with a rubber spatula.
  • Fill two 6-dome flexible baking sheets with meringue, using the back of a spoon to form a hollow shell, about 3/8 inch thick. Bake for 2 hours or until dry. Transfer to a wire rack to cool completely. Gently remove meringues from molds. To allow for some breakage, you will have extra meringues.
  • Dip one meringue shell in whipped cream. Place on a plate, and fill with a scoop of sorbet. Dip another meringue shell in whipped cream, and place it on top of sorbet. Using a spoon, scoop the seeds from the passion fruit halves, and use to garnish the dessert. Repeat process with remaining meringue shells. Serve immediately.

  • Preheat the oven to 160C/140C Fan/Gas 3. Draw a 40x10cm/16x4in rectangle on a sheet of baking paper and place the paper (pencil-side down on a large baking sheet or shallow baking tray.
  • Whisk the egg whites in a large mixing bowl with an electric whisk on full speed, until soft peaks form (see the recipe tip and technique video below).
  • Use four small blobs of the meringue to stick the prepared baking paper to the tray. Spoon just over half of the meringue onto the rectangle drawn on the baking paper.
  • Spoon the remaining meringue into a piping bag fitted with a large star nozzle. Pipe eight small round nests on top of both sides of the meringue rectangle, making a little hole in the middle of each nest.
  • Put in the oven and immediately reduce the temperature to 130C/120C Fan/Gas 1. Bake for 1–1¼ hours until the outside is crisp but still white. Turn the oven off and leave the pavlova in the oven for at least an hour until completely cool.
  • To make the filling, chop one mango into small cubes. Slice the second mango into thin strips. Scoop out the pulp and seeds from the passion fruit.
  • Whip the cream until soft peaks form, then lift out 1 heaped tablespoon and set aside. Fold the limoncello and three-quarters of the passion fruit pulp into the whipped cream, then fold in the cubed mango.
  • Spoon the cream mixture along the centre of the pavlova. Spoon a little of the reserved cream into each nest and top with the chopped pistachios. Arrange the sliced mango along the centre, on top of the cream, and drizzle over the remaining passion fruit pulp.

Whisk in vinegar and vanilla, fold in cornflour and rind, and pile onto the tray within the circle, forming peaks and swirls. Place in oven, reduce oven to 120°C, and bake until crisp but not coloured (1½-1¾ hours). Turn off heat and cool completely in oven with door closed (at least 6 hours or overnight). Pavlova will keep in an airtight container for a day.
  • Meanwhile, for passionfruit curd, whisk passionfruit juice, lime rind and juice, yolks and sugar in a heatproof bowl over a saucepan of gently simmering water until thick and pale (10-15 minutes), then remove from heat. Squeeze excess water from gelatine, whisk into passionfruit mixture, then whisk in butter, a little at a time until all incorporated. Refrigerate until chilled and set (3-4 hours). Curd will keep refrigerated in an airtight container for 5 days. Whisk to loosen slightly just before serving.
  • Whisk cream and crème fraîche to soft peaks in a bowl. Spread passionfruit curd over pavlova, top with cream, sliced mango and passionfruit pulp, scatter with extra lime rind and serve.
