Steps:
- Place the rooibos teabags in a pitcher and pour in the boiling water.
- Allow to infuse for 2-3 minutes.
- Remove the teabags, stir in the honey and leave to cool.
- Add the mango juice and sweeten the mixture further if necessary.
- Pour the cool tea over ice and serve.

ROOIBOS ICED TEA
High in anti-oxidants and also caffeine-free, this tea is not only refreshing but also a wonderfully healthy thirst quencher. Rooibos and Honeybush teas are both available in local supermarkets in Maryland. I have also purchased this tea from Cost Plus World Market.

Steps:
- Place teabags, lemon, mint leaves and sugar in a large pot, pour boiling water onto this and leave to steep.
- Stir occasionally until cold.
- Remove tea bags when tea is cold and refridgerate.

- Make the tea by steeping the teabags in the boiling water for about 15 minutes for a good strong tea. Remove the teabags and place the tea in the fridge for at least 4 hours to chill.
- Peel one mango and chop into chunks. Liquidize with a quarter cup of tea to a smooth pulp. Add to the chilled tea and whisk to mix well.
- Peel the other mango and cut into small cubes. Slice the apple and peaches into thin slices. Add to the tea and mango mixture with a few torn sprigs of mint.
