MANHATTAN BREAD PUDDING

- 1. In a small microwave-safe bowl, combine the cherries and 2 tablespoons bourbon. Microwave until hot, about 30 seconds. Let stand while preparing the pudding until the cherries are softened. 2. Butter a 1-quart baking dish. In a large bowl, whisk the eggs, sugar, and salt. Whisk in the half-and-half and remaining 2 tablespoons bourbon until smooth. Add the bread and gently fold until evenly mixed. 3. Spread half of the bread mixture in the prepared pan. Sprinkle the cherries with their soaking bourbon evenly on top, then cover with the remaining bread mixture. Cover with plastic wrap and refrigerate at least 1 hour or overnight. 4. Preheat the oven to 350°F. Uncover the bread pudding and bake until golden brown and set, about 45 minutes. Cool completely in the pan on a wire rack.

Steps:
- Place the bread cubes in a 9 x 13 buttered glass pan.
- Sprinkle the raisins over the bread.
- Drizzle on the melted butter, do not mix into the bread cubes and raisins.
- Set this aside.
- In a large bowl, beat eggs until broken up and blend in the sugars, nutmeg, half and half and the milk.
- DO NOT OVER BEAT THIS MIXTURE JUST COMBINE.
- Pour the mixture over the cubes and raisins and let it all soak in, gently patting the bread down into the milk every now and then.
- Sprinkle the top with a grating of more nutmeg.
- Preheat the oven to 350 degrees F.
- Bake the pudding for 50 minutes, checking about the 40 minute mark, that its not getting too brown-- If it is cover with foil loosely.
- Bake until pudding is puffy all over and golden.
- Remove to rack to cool.
- Sauce-- In a saucepot over med.
- heat, melt the butter, and brown sugar.
- Bring to a boil, and remove from the heat.
- Whisk in the salt, vanilla, and milk.
- The sauce can be made ahead, then warmed in the microwave-- Cut cooled pudding into squares, and top each with hot sauce.

BETTY'S OLD-FASHIONED BREAD PUDDING
This is the recipe I grew up with. It came from the 1950's "Picture Cook Book". My assembly is a bit different, though. I think it's easier. Also, you could use your microwave to heat the milk and melt the butter. Just be careful not to scramble your eggs in the hot milk. This can be served with any hard sauce, bourbon sauce or ice cream, but I like it with just a little half & half. My mom always poured milk on hers.

Steps:
- Butter the inside of a 1 1/2 quart baking dish. (I use an 8" square pan.).
- In the baking dish, place bread and raisins.
- In a small bowl, whisk together sugar, salt and spices.
- In a small saucepan, heat milk and butter until butter is melted. Remove from heat.
- Add sugar mixture and stir to dissolve. Allow to cool slightly and add eggs, whisking to combine.
- Add egg mixture to bread, letting it soak in while you preheat the oven to 350 degrees F.
- Bake for 40-45 minutes, until a knife, inserted in the center, comes out clean.
- Serve warm, with or without cream.
