GUY APPROVED MEATLOAF
Like most guys, mine has never been a fan of meatloaf, but this recipe guarantees him back for seconds, thanks to some special ingredients.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine the beef, eggs, onion, barbecue sauce, cracker crumbs, potato chips, liquid smoke, ground black pepper, salt, garlic powder and cayenne pepper and mix well.
- On a lightly greased cookie sheet, shape the mixture into a loaf. Lay the bacon slices across the width of the loaf so that the entire surface is covered. Cover the loaf loosely with foil.
- Bake at 375 degrees F (190 degrees C) for 1 1/2 hours.

- Place a large cast iron skillet in the oven. Preheat oven to 375 degrees F (190 degrees C).
- Combine ground beef, Italian bread crumbs, noodle soup mix, 1/2 the tomato sauce, eggs, onion, ketchup, cracker crumbs, 1 tablespoon Worcestershire sauce, barbeque sauce, steak sauce, salt, 1 1/2 teaspoons black pepper, 1 teaspoon garlic powder, and 1/2 teaspoon onion powder in a large bowl; mix well.
- Mix remaining tomato sauce, 1 tablespoon Worcestershire sauce, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and cayenne pepper in a small bowl until topping is smooth.
- Remove skillet from the oven. Place ground beef mixture in skillet, smoothing the top. Spread topping over beef.
- Bake in the preheated oven until beef is mostly cooked through, about 1 hour 30 minutes. Remove from oven and drain off grease. Return to the oven and continue cooking until meatloaf juices run clear and an instant-read thermometer inserted into the center reads at least 160 degrees F (70 degrees C), about 1 hour more.
- Remove meatloaf from oven and allow to cool for 15 minutes before serving.

This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
- In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
- Bake at 350 degrees F (175 degrees C) for 1 hour.

MAN'S MEATLOAF
This is a big, hearty meatloaf the stays juicy and doesn't dry out while cooking. I found the recipe in a cookbook and added some of my own little favorites

Steps:
- Preheat oven to 350 degrees.
- In a medium skillet, saute the onion, bell pepper and garlic until translucent. Drain.
- Combine the onion, bell pepper and garlic with all other ingredients except for the bacon in a large bowl. Mix well.
- In a medium casserole dish, form the mix into a loaf about 8-10" long and 4-6" wide.
- Cut bacon slices in half and place over loaf forming a covering over the entire loaf.
- Cover the dish with aluminum foil and bake for 1hr 30 minutes. Serve hot!

MY MAN'S CHEESY SMOKED MEATLOAF
Had to in some way invent a meatloaf with absolutely no ketchup or tomatoes. My fiance absolutely loves cheese, so I embellished and also took from other recipes here and there. Trying this, I believe you will love it. It has been a success. Good with red wine and twice-baked potatoes for homecooked TLC.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix ground beef, red onion, bread crumbs, eggs, salt, and pepper together in a large bowl. Divide mixture in half. Press half of the mixture in the bottom of a loaf pan.
- Run 2 fingers lengthwise down the center of the beef mixture. Fill hollowed space with mozzarella cheese. Mold remaining beef mixture around cheese, pressing down firmly.
- Heat oil in a large skillet over medium-high heat. Cook bacon slices until lightly browned, about 5 minutes. Arrange bacon slices over beef mixture.
- Cook and stir 3/4 teaspoon mustard and 3/4 teaspoon Worcestershire sauce in the bacon grease in the skillet for 1 minute. Add bell pepper; cook until softened, 3 to 4 minutes. Spread bell pepper over bacon.
- Place remaining mustard, Worcestershire sauce, and mushrooms in the skillet; cook and stir until soft, about 5 minutes. Spread evenly over bell pepper. Scatter feta cheese over mushrooms.
- Cover loaf pan with aluminum foil; place on top of a baking sheet.
- Bake in the preheated oven until an instant-read thermometer inserted into the beef reads at least 160 degrees F (71 degrees C), 60 to 90 minutes.

THE GREEN MAN'S MEATLOAF
One of my favorite comfort foods of all time is meatloaf, we have it for dinner, then have the leftovers for sandwiches for lunch the next day. This spinach packed meat loaf is a big winner in my books!!

- Place the beef, pork, bread crumbs, spinach and other greens in a large bowl, and mix lightly.
- In a separate bowl, mix all the wet ingredients, tomatoes, pepper and salt. Pour this over the meat mixture, and mix until it comes together.
- Form the mixture into a loaf on a sheet pan, and refrigerate for 1 hour.
- Preheat oven to 350°F Bake for 1 hour and 15 minutes or until the internal temperature reaches 165°F Let stand for 5 minutes before serving.
- EMBELLISHMENT: Some people like a glaze on meat loaf. If you are one of these people, simply brush the outside of the loaf with ketchup halfway through the cooking process.

POOR MAN'S MEATLOAF
Steps:
- Preheat oven to 350 degrees. In a large bowl mix together with your hands: ground beef, crushed crackers, onion, ketchup and spices. Add first two eggs and mix together. If it seems too dry add a third egg or depending on desired consistency.
- Put into 9 x 13 inch glass pan and press into corners evenly. Drizzle the rest of ketchup or barbeque sauce over the top and put into the oven.
- Bake for 1 hour or until done. Enjoy.
